立秋后，使劲吃这菜，一养肝、二降火、三补钾补钙，别再不懂吃了！

立秋一到，很多人还嘴硬，说天气不算凉，照样大口吃肉、猛灌冰水。可老话讲得实在，秋来先养脾胃，饭桌上真别跟身体较劲。西芹鸡蛋、包菜鸡蛋、凉拌黄瓜这三样菜，都是便宜、好买、快手的家常货，正好把夏天那股燥气往下压一压，吃着清爽，做起来也不费劲。

这类菜为啥总能火起来，不是没道理。西芹脆，包菜甜，黄瓜水分足，搭上鸡蛋，蛋白质和蔬菜一块儿上桌，味道不冲，肚子也舒服。夏秋交替这阵子，很多人胃口忽高忽低，太油腻了吃不下，太素了又觉得没劲，这三道菜正好踩在中间，不寡淡，也不厚重，家里老人孩子都容易接受。

先说西芹炒鸡蛋。很多山东老哥一看这菜名就懂，家里冰箱有半截西芹、两个鸡蛋，基本就能开锅。西芹先撕老筋，这一步不能省，不然嚼着像拽筋头，嘴里不舒服。再切段焯水30秒，时间短一点，颜色更亮，口感更脆。鸡蛋单独炒散，锅里留点油，蒜片一爆香，芹菜下锅，大火翻两下，最后倒回鸡蛋，撒盐出锅，这味儿就出来了。

这里头有个很实在的细节。芹菜类蔬菜本来草酸不低，焯水一下，口感更顺，也更适合老人吃。中国居民膳食指南提得很明白，成年人每天蔬菜摄入量要够，深色蔬菜还得占一半以上。西芹这种菜，纤维感强，热量低，配鸡蛋后，既有香味，也不显得单薄，家里孩子一口接一口，往往比硬劝他们吃青菜管用。

再看包菜炒鸡蛋。这个菜在北方家庭里太常见了，便宜得像白捡，菜市场一颗包菜能吃两顿。包菜切丝后，大火快炒，关键就是别让它出太多水。很多人一炒就成了煮菜，锅里哗哗冒汤，最后软塌塌一盘，口感就废了。做对了就是脆、甜、香，鸡蛋一裹上，整个菜的层次就出来了。

包菜这东西别看普通，营养不赖。它里面有维生素C、膳食纤维，还有不少钾元素。夏末秋初，出汗多的人容易口淡、没精神，吃点包菜这种水分足、口感轻的菜，胃里舒服很多。再加上鸡蛋，蛋白质补得稳，老人吃了不费劲，孩子吃了也不挑。家里要是来客，拿这道菜顶上，花钱不多，看着还体面，山东人讲究个实在，这就叫会过日子。

说到凉拌黄瓜，很多人第一反应是省事。确实，几乎不用开火，拍一拍、拌一拌就上桌。可这道菜看着简单，真想做得好吃，调味得讲究。黄瓜拍裂以后，比直接切片更容易入味，蒜末、小米辣、生抽、香醋、少许白糖、香油一拌，静置五分钟，味儿就钻进去了。夏天尾巴上，吃一口，脆生生，嘴里立马清亮。

这几道菜还有一个共同点，省钱。现在很多人天天喊着生活压力大，菜价一涨就皱眉头。可真要认真算账，鸡蛋、包菜、西芹、黄瓜，这几样都算家常里的老实人，价格不吓人，做法也不娇气。一个普通家庭，三口四口人，随便买点就能凑一桌。过日子嘛，不是非得鲍鱼海参才叫吃饭，厨房里能把几样寻常食材做出味道，才是真本事。

我特别喜欢这种顺着节气吃饭的习惯。古人讲春生、夏长、秋收、冬藏，到了秋天，人的脾胃也跟着要收一收。立秋之后还热，但那种闷热里已经带了点燥，吃饭再猛上重油重辣，身体很容易闹别扭。适当清淡，不是让你吃草，而是让你吃得舒服。山东人吃饭讲究一个扎实，菜不一定多，但得让一家老小都能动筷子，这才叫接地气。

西芹、包菜、黄瓜这三样，放在一块儿也很有意思。一个脆，一个甜，一个水灵，搭配鸡蛋后，颜色也好看。桌上有绿有黄，看着就清爽，不像一桌大鱼大肉那么压人。尤其家里有老人，牙口不如年轻人，炒得脆嫩一点，拌得入味一点，吃起来更省事。老人最怕那种嚼不动、咽不下的饭菜，小孩最怕那种一口下去没味儿的菜，这三道菜刚好夹在中间，挺周到。

还有一个很现实的点，家里做饭最怕浪费时间。下班回家晚了，娃还在写作业，老人又等着吃饭，锅铲子一响，十几分钟必须上桌。西芹鸡蛋和包菜鸡蛋，都是十来分钟能解决的菜。黄瓜拌一拌更快，连油烟机都不用吭哧太久。做饭的人少受罪，吃饭的人也不等急，这种时候，快手菜就像家里的定海神针，稳得很。
