豆腐超级好吃的4种做法：营养又下饭，赶紧收藏起来吧

说起豆腐，很多人第一反应就是便宜、家常、顶饱。可真要把豆腐做明白了，它一点都不土。几块钱一块，能蒸、能烧、能煎、能炒，嫩的像小孩脸，老的像老家炕头上的硬板，偏偏一家老小都能吃得舒坦。山东人过日子讲究实在，豆腐这东西就对路，菜市场买回来，进锅一转，饭桌上立马有了热乎气。

豆腐能火，不光是因为便宜。按照常见食物成分数据，豆腐属于高蛋白植物性食材，钙、铁、镁这些矿物质也不差，特别是北豆腐和南豆腐，口感和营养侧重点还不一样。南豆腐更嫩，适合蒸、做汤；北豆腐更紧实，适合煎、烧、炖。把这点弄明白，做菜就少走弯路，家里人也吃得更顺口。

先说肉末蒸豆腐，这道菜最适合忙的时候做。嫩豆腐一倒出来，切成厚片铺盘子，肉末拿姜蒜、生抽、蚝油、料酒一拌，往豆腐上一盖，水开上锅蒸八分钟，最后撒葱花，热油一浇，香味一下就窜出来了。这个做法看着简单，但特别讲究火候，蒸早了不入味，蒸久了豆腐出水多，肉末也容易发柴。

这道菜好在哪儿，最明显就是省事。下班到家，灶台边一站，十来分钟就能端上桌，不用大油烟，不用满屋子呛得人睁不开眼。家里有老人孩子的，尤其合适。老父亲牙口不好，嫩豆腐一抿就化；俩儿子正长个儿，肉末和豆腐一起吃，蛋白质也够用。盘底那点汤汁千万别浪费，浇在米饭上，山东人一口饭下去，整个心都安稳了。

再看葱烧老豆腐，这才是老百姓桌上的硬菜。老豆腐切块，锅里少放点油，两面煎到金黄定型，葱段和蒜片一进锅，厨房里立马有了那股子熟悉的香。料汁里放生抽、老抽、蚝油、白糖、淀粉和清水，倒进去焖两分钟，再收浓汤汁，葱香、酱香、豆香全搅一块儿了。

很多人做这道菜容易急，一上来就翻来翻去，结果豆腐碎得像被风吹散的积木。其实老豆腐就像咱们山东汉子，得给它一点耐心，先煎住，再翻面。煎定型之后，豆腐外面有层壳，里面还是软的，吸汁能力特别强。大葱也别小看，北方菜里，大葱不是配角，是点睛的。它一出场，腥味少一半，食欲多一半。

家里那两个小子，嘴巴都挑，碰上青菜能皱眉头，碰上鸡蛋豆腐就老实了。因为这道菜颜色也好看，金黄里带着白嫩，再点几粒红辣椒，盘子上桌像模像样。鸡蛋本身就有香味，裹住豆腐以后，豆腐不容易散，炒的时候也更容易挂味。做饭的人都知道，孩子肯吃，比你念叨十句都管用。

还有一点不能不提，鸡蛋和豆腐一起吃，确实很实在。豆腐是植物蛋白，鸡蛋是优质动物蛋白，放一块儿，营养密度就上来了。对家里老人来说，这种软嫩口感也友好。少油、快炒、少盐，吃完不腻，胃里也轻松。平时孩子不爱吃菜的时候，这一盘就能顶一阵子。

家常烧豆腐，是最像一桌正经家常饭的做法。干香菇泡发切片，青红椒切块，老豆腐先煎到四面微黄，蒜末和香菇片下锅一炒，香味立马上来，再倒入豆腐、生抽、蚝油、少量白糖和泡香菇的水，小火焖三分钟，最后青红椒一进锅，勾个薄芡，颜色就立起来了。

这道菜好吃的关键，是鲜味叠鲜味。香菇本身就带天然鲜香，豆腐又能吸味，泡香菇的水别直接倒了，过滤一下杂质就能用，这一点很多人常常忽略。老话说得好，锅里有汤，饭就不慌。汤汁别收得太干，微微挂在豆腐表面最好，一口下去，鲜、香、嫩一块儿进嘴，挺踏实。

从做饭角度看，豆腐还有一个特别大的优点，就是包容性强。想清淡，就蒸；想下饭，就烧；想快手，就炒；想稳妥，就煎一煎再炖。它不抢戏，却总能把别的食材衬起来。肉末给它添厚度，鸡蛋给它添香气，大葱给它添气势，香菇给它添鲜味。这个搭配逻辑，其实和过日子差不多，单打独斗不如凑成一桌。

说到营养，豆腐最被人认可的还是它的平衡感。它不像大鱼大肉那么厚，也不像纯青菜那么寡。钙含量不低，蛋白质也扎实，热量还不算高。日常饮食里，拿它替一部分肉菜，餐桌负担会轻不少。尤其是家里有老人，或者平时吃得油大，豆腐这种食材就很合适，清爽但不寡淡，顶饱但不撑人。
