锌是聪明之根，多给孩子吃这几种高锌菜，有助大脑发育增强注意力

不少家长都有过这种困惑：自家孩子上课坐不住、写作业东摸西摸记不住知识点，补了一堆营养却不见效？其实很可能是关键微量元素“锌”没补够！锌被营养学界称为“聪明之根”，它不仅参与大脑神经递质的合成，助力神经元连接发育，还能直接提升孩子的注意力与记忆力，同时改善挑食厌食的小毛病。药补不如食补，今天就给大家整理8道做法简单、娃抢着吃的高锌家常菜，随手就能做，把锌补进日常三餐里~

一、冬瓜虾仁汤

所需食材：冬瓜500克、鲜虾仁200克、干贝一小把（约15克）、小葱1根、姜片3片、盐适量、料酒1勺、白胡椒粉少许。

步骤：

1.鲜虾仁挑去背部的虾线，冲洗干净后用厨房纸吸干表面水分，加少许盐和料酒抓匀腌制十分钟去腥。

2.干贝用温水提前泡发半小时，泡软后撕成细丝，泡干贝的水留着一会儿加入汤中，增加鲜味。

3.冬瓜削去硬皮，挖掉中间的瓜瓤和软籽，清洗干净后切成厚约一厘米的薄片，不要太薄以免煮化。

4.锅中烧热倒少许油，下姜片和葱白爆香，倒入冬瓜片大火翻炒一分钟，炒到冬瓜边缘微微透明。

5.加入足量的热水，同时倒入泡干贝的水和撕好的干贝丝，大火烧开后转中火煮约五分钟，至冬瓜变软。

6.将腌制好的虾仁逐个放入汤中，煮至虾仁卷曲变色，大约需要两分钟，注意不要煮太久以免虾肉变老。

7.最后加盐和白胡椒粉调味，撒上翠绿的葱花，关火盛出，一碗清鲜不腻的冬瓜虾仁汤就做好了。

二、雪梨橄榄瘦肉汤

准备食材: 雪梨、青橄榄、海底椰、蜜枣、瘦肉、姜葱。

做法步骤:

1、把瘦肉切成小块，然后和姜葱一起下锅焯水，焯好以后，捞出清洗干净，再倒入炖锅中。

2、用食盐搓洗干净雪梨和青橄榄，然后切成小块，接着倒入炖锅中。

3、清洗干净海底椰，然后和蜜枣一起倒入炖锅中，再加入没过食材的清水。

4、最后中小火慢炖两个小时，接着加入少许食盐调味，即可出锅。

三、香菇腐竹烧肉

食材：

牛肉，腐竹，香菇，葱姜蒜，小米辣，淀粉水

做法：

1.腐竹，香菇温水泡发，香菇水留着备用

2.锅里倒油放肉，炒出油脂 .

3.放葱姜蒜小米辣，倒入适量生抽，一点点老抽，蚝油，一点点糖， 盐，翻炒均匀

4.放入泡发的香菇，腐竹，继续翻炒均匀，

5.放入适量泡香菇的水，闷五分钟，最后放入淀粉水勾芡即可 鲜香嫩滑，好吃的不得了

四、蒜蓉蒸秋葵

所需食材：秋葵400克，大蒜1整头，小米辣1根（可选），生抽10毫升，香醋3毫升，芝麻油2毫升，盐0.5克，食用油少许。

步骤：

1. 秋葵放入盆中，加一勺盐和适量清水，轻轻搓洗表面绒毛，再用清水冲净。

2. 切去秋葵蒂部，注意不要切破内部，以免蒸时黏液流失。

3. 大蒜剥皮剁成细蓉，小米辣切圈，不吃辣可省略。

4. 蒸锅加水烧开，将秋葵整齐码放在盘中，上汽后大火蒸5分钟。

5. 取出蒸好的秋葵，倒掉盘中多余水分，摆入另一个干净盘中。

6. 小碗中调入生抽、香醋、盐和芝麻油，加入蒜蓉和小米辣拌匀。

7. 将调好的蒜蓉汁均匀淋在秋葵上，最后烧少许热油泼在蒜蓉上激香即可。

五、黑豆香菇烧豆腐

食材：干黑豆50g、干香菇6朵、老豆腐400g、葱花、姜片、生抽、少许蚝油、盐

详细做法

黑豆提前浸泡6小时以上；香菇温水泡发，泡香菇的水过滤留着备用；豆腐切成3厘米方块。

锅中放少许油，下入豆腐块，中小火慢煎，煎至两面金黄定型盛出。

同一口锅，放姜片爆香，放入香菇翻炒1分钟，倒入黑豆翻炒，加入过滤后的香菇水，没过食材，小火焖煮30分钟至黑豆软烂。

倒入煎好的豆腐，放生抽、一点点蚝油，轻轻推动豆腐，小火再焖8分钟。

开大火收一下汤汁，尝味补少量盐，撒上葱花即可出锅，翻动豆腐动作轻一点，避免碎掉。

六、西葫芦炒鸡蛋

食材

西葫芦1根，口蘑5‑6个，鸡蛋3个，少许盐、葱花

做法

1. 西葫芦洗干净切片，口蘑切薄片，鸡蛋打散备用。

2. 锅里倒油，先把鸡蛋炒熟盛出来。

3. 再放葱花爆香，下入口蘑翻炒，炒到微微出水。

4. 倒入西葫芦片继续翻炒，西葫芦变软之后，倒回鸡蛋。

5. 加一点点盐调味，翻炒均匀就可以出锅。

我家常做这道菜，西葫芦水分足，吃起来清爽不腻。

七、小炒白玉菇荷兰豆

食材

主料： 荷兰豆适量、白玉菇一小把、火腿肠一根、干木耳一小撮、彩红椒半个

调味： 蒜、盐、蚝油、生抽、白糖适量

制作步骤

1、荷兰豆撕去老筋，洗净后对半切开或斜切成段。白玉菇切掉根部洗净沥干水分，火腿肠斜切片，红椒切块备用，干木耳泡发洗净沥干备用

2、锅里烧水，水开后加入一勺盐和几滴食用油，放入荷兰豆、木耳焯烫约30秒捞出过凉水，白玉菇也下锅焯烫1-2分钟，捞出沥干水分。

3、锅里倒油，油热后放入蒜末爆香。倒入焯好水的白玉菇，开大火翻炒约2分钟，炒出蘑菇的水分和香味。接着倒入荷兰豆和木耳快速翻炒均匀。

八、莴笋炒木耳
