立秋后必吃的6道菜，把这三黑三白端上桌，头发黑腰不酸，难道不是一觉天亮吗

　老辈人那句药补不如食补，放到立秋后，真不是随口一说。菜市场里几块钱一斤的黑豆、莲藕、山药、黄瓜、银耳、木耳，摆在摊位上不起眼，进了家门，倒比一堆花里胡哨的补品更靠谱。原文里讲得明白，三黑补肾养发，三白润肺安神，顺着节气吃，身体才肯给面子。

　　我在家做饭也爱琢磨这个理儿。山东汉子嘛，饭量大，讲究实在，家里老的小的都得照顾到。老父亲七十多了，晚上起夜多，老伴儿一到换季就说嗓子干，俩儿子放学回来饿得跟小牛犊似的，这时候端上来的东西，不能光图热闹，得真能吃、真舒服、真顶事。

　　立秋之后，很多人会明显感觉不对劲。白天一阵风过来，皮肤发紧，嘴唇干，喉咙痒，晚上躺下又心烦。中国传统饮食里，秋天讲养阴润肺，民间一直有秋藕最养人、白色食材养肺的说法。现代营养学也能对上，像银耳、莲藕、山药、百合这些东西，膳食纤维、黏液蛋白、多糖类物质都不低，吃起来清爽，肠胃负担也轻。

　　先说黑豆。很多人嫌它费事，泡一宿还得炖半天，可黑豆这东西真不亏。黑豆含蛋白质、花青素、维生素B族和矿物质，平时拿来煮、炖、打豆浆都行。原文里黑豆香菇焖鸡块这道菜特别像北方人干饭的路数，先把220克黑豆泡够4小时以上，别图省事，泡不透真容易胀气。再拿半只土鸡焯水，和泡发的干香菇一起焖50分钟，锅一开，满屋都是那种扎实的香气。

　　这道菜妙就妙在一个搭配。鸡肉补气血，黑豆提供植物蛋白和不饱和脂肪酸，香菇又带着鲜味和多糖，炖在一起，油腻感没那么冲。老辈人说黑色入肾，现代人不一定全照着中医术语理解，但把它看成深色豆类对中年人精力和饮食结构的补充，倒也不难懂。夜里老起床、白天腰发空的人，饭桌上有这么一锅，确实比光喝两口凉水强。

　　芝麻盐拍黄瓜这道菜，更像山东家庭饭桌上的老熟人。别看简单，芝麻和黄瓜一搭，味道一下就立住了。黄瓜拍碎后先腌，再攥干水分，芝麻加盐碾碎，蒜末、香醋、香油一拌，那个香气一上来，孩子都得伸筷子。芝麻里有丰富的油脂、钙和维生素E，黑芝麻白芝麻都常被拿来做乌发、润燥的食材，老人爱吃，年轻人也不排斥。

　　黄瓜本身水分高，夏秋交替时吃点，嘴里清爽，胃里也舒服。很多家庭晚饭吃得晚，桌上有一盘拍黄瓜，能先把火气压住，不会一上来就腻得慌。山东这边做凉拌菜，讲究一个脆生，黄瓜拍出来比切的更容易入味，咬一口咔嚓响，饭就跟着多吃两口。

　　黑芝麻炒西葫芦也挺有意思。西葫芦这菜便宜，菜市场里一把一把地卖，清炒最见本色。它含水量高，热量低，维生素C和钾也不差，炒出来口感嫩。黑芝麻一撒上去，原本清清淡淡的一盘菜，立刻有了层次。原文里说怕油腻、一补就上火的人适合吃这个，说得挺到位。

　　做这道菜别复杂，蒜片爆香，西葫芦下锅翻两下，断生就行，最后撒两勺熟黑芝麻翻匀。山东家里吃饭就这样，不整虚头巴脑的摆盘，讲究火候和手感。西葫芦清，芝麻香，吃到嘴里先是清，再是香，最后才是那点厚实的回味。对于中年人来说，饭桌上有这样的素菜，肠胃舒服，整个人都轻松不少。

　　说到三白，银耳百合莲子羹是真正的老少通吃。银耳这东西，过去不少人觉得它就是个便宜货，实际上泡发后胶质感很足，做羹特别合适。百合和莲子加进去，口感更稳。银耳、百合、莲子都是传统食养里常见的润燥食材，民间一直用来应对秋天口干、心烦、睡不实这些事。

　　做法也不难，关键是小火慢炖。银耳泡发后撕小朵，干百合和去芯莲子提前泡软，砂锅里加足水，慢慢煲到出胶。出锅前放一点冰糖，清甜得刚刚好。这个时候端一碗上桌，孩子们拿着勺子一口口喝，老人也不嫌甜腻。晚上如果总觉得嗓子发干、心里发燥，这碗羹下去，确实会舒服不少。

　　莲藕排骨汤在北方家里几乎是秋天的标配。秋藕最养人，这话老百姓都知道。莲藕生吃脆，熟吃糯，煲汤最能把那股清润劲儿熬出来。排骨焯水去浮沫，和莲藕、姜片一起慢炖一个半小时，汤色不必追求浓白，清清的反而更显得干净。出锅只撒盐，别乱加调料，越简单越显本味。
