带鱼煎至两面金黄与萝卜同煮，补蛋白利水消肿味鲜美

带鱼段洗净，用厨房纸吸干水，两面拍一层薄薄的面粉。热锅热油，下带鱼煎至两面金黄，鱼皮起脆。另起锅，萝卜切厚片垫底，放上煎好的带鱼，加姜片、少许生抽和开水，小火煮上二十分钟。萝卜吸了鱼鲜，变得透明软润，带鱼也入了味。汤不多，浓而鲜，浇在饭上最好。

这锅菜，补蛋白利水。带鱼含优质蛋白，萝卜下气消肿，两样合煮，鲜而不腥。带鱼煎过再煮，肉质紧实不散，萝卜则把鱼汁尽数收下。它比红烧清爽，比清蒸有味，是海边人家最平常的做法。冬天吃它，暖身又下饭。

带鱼要选银鳞完整的。煎时火候要足，别急着翻。萝卜后放也行，看厚薄。汤别收得太干，留些拌饭。一锅端上桌，鱼香混着萝卜的甜，一顿饭便有了主角。
