煮粽子用冷水还是开水？记住3要3不要，粽子软糯不夹生

煮粽子到底该用冷水还是开水？说实话，这个问题我当年刚开始学包粽子的时候，也纠结得不行。试过冷水下锅，也试过开水猛煮，结果不是煮成一锅糯米稀饭，就是粽子心还硬邦邦的夹生，气得我差点把锅都扔了。后来跟家里包了几十年粽子的长辈反复讨教，再加上自己年年煮、年年记笔记，终于摸透了这里头的门道。其实啊，煮粽子这事儿真没那么玄乎，关键就藏在“3要3不要”里。今天我就把这些年攒下来的实战经验，掏心窝子跟你们说清楚，保证你看完这一篇，今年煮的粽子个个软糯拉丝，比外面卖的还好吃！

冷水下锅还是开水？答案在这儿

先给结论：煮粽子，一定要用冷水下锅，而且水要一次性加足，没过粽子至少两三指高。

为什么非得是冷水？你听我慢慢讲。粽子是用糯米做的，糯米粒儿紧紧挤在粽叶里头，密度特别大。你要是心急烧开了水再把粽子扔进去，粽子的外层糯米一碰到滚烫的水，表面淀粉立马糊化，形成一层“保护膜”。这层膜把里面的米粒封得死死的，热水进不去，热量传得慢，结果就是——外面那层米都快烂成泥了，里头那圈米还是生硬的，妥妥的夹生没跑。

但你要是从冷水开始煮，情况就完全不同了。粽子和冷水一起慢慢升温，这个过程中，水温是一点一点往上爬的，糯米粒也有充足的时间从外到内均匀吸水、均匀受热。就好比咱们泡澡，温水慢慢泡才能全身舒坦，猛地一下跳进烫水里，谁受得了呀？等水烧开之后，再转成小火慢悠悠地咕嘟着，粽子里里外外熟得特别均匀，每一粒米都吸饱了水，最后煮出来那叫一个软糯黏滑，用筷子一夹，拉丝能拉老长。

记住“3要”，粽子成功一大半

第一要：要冷水浸泡。如果你用的是干粽叶或者干糯米，包之前该泡的泡、该煮的煮，这个不用我多说。但很多人不知道，包好的生粽子在下锅前，如果能在冷水里再泡个半小时左右，效果更佳。这一步是为了让粽叶和糯米提前吸一点点水，煮的时候不容易撑破粽叶，米粒吸饱水也更容易煮透。

第二要：要水多、火小、时间长。水一定要一次性加足，中途最好不要添水，实在要添也得加开水，不能加冷水，否则一激灵，粽子口感就差了。大火烧开之后，立刻转成最小的火，保持水面微微冒泡的那种状态，慢煮至少2到3个小时。肉粽时间稍微长一点，素粽可以短一点，但总归不能心急。我习惯用高压锅，上汽之后转中小火压40分钟左右，自然泄气后再开盖，省时间效果也好。

第三要：要焖够了再出锅。这步最容易被忽略！火关了之后，千万别急着把粽子捞出来，让它在锅里继续焖个半小时到一小时。焖的过程里，余温会让糯米进一步软化，粽叶的香气也能更充分地渗进米里。我有一次着急吃，关火就捞，结果口感明显差一截。后来次次都焖，粽子那个香啊，隔着两条街都能闻到。

再记“3不要”，避开翻车雷区

第一不要：不要开水下锅。前面已经讲透了，开水下锅是夹生的罪魁祸首，这个雷区千万别踩。

第二不要：不要煮到一半中途加冷水。本来锅里的温度已经稳稳的了，你一瓢冷水下去，温度骤然下降，糯米一受冷收缩，再想煮透就难了。水不够的话，宁肯加滚烫的开水，也不能加凉水。

第三不要：不要煮好就马上捞出。刚煮好的粽子，糯米还处在紧张状态，一遇冷空气，表面变硬不说，里面如果有一丁点没熟透，那就彻底没救了。一定要让它自然凉一凉，在汤水里泡着降温最好，这样粽子吃起来才Q弹软糯，不干不硬。

多层次的实操小贴士

说到这儿，我再多啰嗦几句细节。锅的选择上，普通汤锅煮得慢但火候好掌控，高压锅省时省力，电饭煲也可以，但一定要选“粥/汤”模式。另外，煮粽子的时候，水里可以少加一勺盐或者一点点食用碱，盐能提甜，碱能让糯米更黏糯，这都是老辈传下来的小窍门。还有，粽子在锅里要码得紧实一点，别让它乱翻滚，上面最好压个盘子，防止飘起来煮不均匀。http://hawyxh.cn/logo.aspx?/ArTicle/details/7909978.sHTML
