1 道懒人硬菜，远离油烟，老人小孩都很适合吃

不想满身油烟的时候，就爱做这道蒸菜。

排骨很嫩很入味，贝贝南瓜也吸收了豉蒜肉汁，甜咸相融。

不需要大火快炒，只要把它们放到锅里蒸一下就可以了，这样就可以做出一道温暖人心的家庭菜肴了。

南瓜蒸排骨

主料：排骨，贝贝南瓜

配菜：蒜末，豆豉，葱花

调味料：生抽，蚝油，玉米淀粉

预处理

1.排骨清洗干净后要控掉表面水分，这样腌制才能入味。

2.加入蒜末，豆豉，生抽，蚝油，玉米淀粉，搅拌均匀。

淀粉可以让排骨更加嫩滑而不柴，要抓拌均匀之后再放置30分钟进行腌制。

3.贝贝南瓜去芯后切成大小差不多的厚块，放在盘子四周。

在盘子中间留出空隙，用来放置已经腌制好的排骨。

烹饪方法

1、将腌好的排骨放在盘子中央，周围放上贝贝南瓜块。

不能堆积得太厚，否则会受热不均而影响烹饪效果。

2、冷水下锅，盖上锅盖，大火煮沸后改为小火蒸四十分钟。

冷水慢慢蒸制的话，排骨的肉质就不会一下子紧缩起来，口感会比较柔软一些。

3、蒸好之后取出，在上面撒上一些葱花，就可以直接上桌了。

盘底有汤汁很鲜美，配上白米饭味道很好。

避坑指南

误区一：把排骨带着生水一起腌制。

✅正确的做法是：一定要把血水和水分都晾干了，否则会把味道冲淡，还有腥气。

误区二：把排骨叠在一起。

✅正确的做法是：尽可能地摊开放置，如果选择堆积存放，则会因为内部无法充分受热而影响到味道。

误区三：开水直接放到锅里去蒸。

✅正确的做法是：用冷水上锅慢慢升温，这样可以保证排骨肉质松软不会变得太硬。

误区四：蒸的时间不够长。

✅正确的做法是：排骨要脱骨软烂，小火需要保持在40分钟的时间，不能随意缩短时间。

豉蒜香浓郁，排骨肉质软烂，轻轻一抿骨肉就分离了。

贝贝南瓜粉糯香甜，充分吸收了排骨的豉香汁水，甜咸相融。
