香煎土豆火腿肠：一口软糯香迷糊，拌饭能多吃两碗

每次把这道香煎土豆火腿肠端上桌，我家厨房就只剩下筷子碰盘子的声音，连平时嚷嚷着要减肥的闺蜜，都忍不住盛了满满一碗米饭，边吃边感叹“这也太香迷糊了”。煎得微焦的土豆块外酥里糯，咬下去绵密得像在吃土豆泥，裹着火腿肠的咸香，再浇上一勺浓郁的汤汁拌进米饭里，每一粒米都吸满了香味，一口下去，简直是碳水和肉香交织的顶级快乐。

这道菜的做法简单到连厨房新手都能一次成功，但想要做得好吃，几个小技巧千万别错过。土豆一定要选黄心的，这种土豆淀粉含量高，煎出来才会软糯绵密，白心的土豆偏脆，不太适合这道菜。把土豆去皮切成一口大小的小块，千万别切太薄，不然煎的时候容易碎，也别太厚，不然里面不容易熟。切好的土豆块用清水泡五分钟，洗掉表面的淀粉，这样煎的时候不容易粘锅，还能让表面更酥脆。火腿肠我一般选带点肉粒的，切成和土豆差不多大的小块，这样煎的时候火腿肠的油脂会渗进土豆里，香味更足。

锅里倒一点点油，等油温五成热的时候，把土豆块平铺在锅底，别急着翻动，等底部煎成金黄色，再用铲子轻轻翻面，这样煎出来的土豆块每一面都酥脆均匀。等土豆块都煎到微焦，把火腿肠倒进去一起翻炒，加一勺生抽、半勺老抽、一点点白糖提鲜，再倒小半碗清水，盖上锅盖焖两分钟，让土豆块吸满汤汁，最后开大火收汁，等汤汁变得浓稠，撒一把葱花就能出锅了。整个过程不到二十分钟，却能做出让人停不下筷子的味道。

记得刚工作的时候，我租的房子只有一个小厨房，每天下班累得不想动，就靠这道菜续命。有次加班到晚上九点，饿得肚子咕咕叫，回家翻出冰箱里的土豆和火腿肠，随便煎了一盘，配着刚煮好的米饭，一口下去，一天的疲惫好像都被这口软糯咸香治愈了。后来搬了家，厨房变大了，可每次不知道吃什么的时候，还是会做这道香煎土豆火腿肠，它就像个老朋友，不管什么时候，都能用最朴实的味道给我安慰。

现在每次朋友来家里吃饭，这道菜都是必点的“抢手货”，有次我妈来我家，看我做了这道菜，笑着说“这不就是你小时候最爱吃的嘛”。是啊，小时候妈妈总把土豆切成小块，和火腿肠一起煎，我总爱蹲在灶台边，看着土豆在锅里慢慢变黄，闻着满屋子的香味，等不及装盘就伸手偷吃一块，烫得直吸气还舍不得吐出来。现在自己做了，才懂妈妈当年在小小的厨房里，为我煎出这一口软糯时，藏着多少温柔。
