家常肉沫茄子怎么做？不吸油不腻口，出锅前加这一步特别香

肉沫茄子是我家餐桌上出现频率最高的一道菜，没有之一。茄子软糯、肉香浓郁，拌饭能扒两碗。但说实话，这道菜看着简单，做起来真不——茄子一炸锅油就飙了，调料稍差一点味道就寡淡。我做了十几年，踩过的坑比成功的次数多，把压箱底的经验全写在这儿，跟着做基本不会翻车。

肉沫茄子怎么做好吃

很多人做肉沫茄子，肉和茄子分开炒再合一起，味道是散的。我的做法是先把肉沫炒到出油、彻底变色，把姜蒜、干辣椒段下进去爆香，这时候加一小勺豆瓣酱，中火炒到红油出来。茄子撕成条不用刀切，手撕的断面毛糙，酱汁往里钻比刀切的光面快一倍。撕完丢大碗里，撒一平勺盐抓匀，腌五分钟杀出水分，这一步别省。

肉沫锅里留底油，把腌过的茄子攥干水分倒进去，中火把每条表面煎到微微起焦壳，盛到盘子里备用。等锅重新烧热，把茄子倒回去和肉沫翻匀，大火收个三十秒让酱汁紧紧裹住每一根茄子。起锅前撒一把葱花和现磨白芝麻，别放糖，咸鲜微辣就对了，配米饭绝了。

肉沫茄子怎么不吸油

茄子吸油这个事，说白了是它内部海绵状组织把油灌进去了，跟你的厨艺没关系，是物理特性。两个办法能压住：一是用盐腌脱水，前面提过了；二是裹薄薄一层玉米淀粉再下锅，淀粉遇热结壳，油就钻不进去了。我平时用第二种，淀粉量别多，薄薄一层裹住就行，裹多了口感发黏，跟吃面糊一样。

还有个土办法，把茄子切成两厘米厚的片，不撕成细条，厚片比细条吸油少一半不止。切完丢凉水里泡十分钟，既防氧化发黑又去涩味，捞出来控干再裹粉。这样一锅油做两盘菜都够用，不用中途不停补油，灶台也干净。

肉沫茄子用几成油

家庭灶不好讲几成油，你就看油面状态：把干筷子插进去，周围冒细小密集气泡、油面微微颤动，差不多就到位了。这个温度茄子入锅，表面瞬间结壳锁住内部水分，不会炸成一锅油。油温低了它慢慢吸，油温太高外焦内生，宁可低半成也别高半成。

量上，一盘茄子大概两根中等大小的，用三到四汤匙油。裹完淀粉之后实际消耗比看起来少很多，别心疼油但也不用拿油没过茄子去炸，煎着翻就行，省时间省灶台空间。油别反复用，炸过茄子的油再下别的东西味道就串了。

肉沫茄子放什么调料

基础调味就是生抽、盐、一点蚝油，咸鲜够了。想提个层次，加半勺醋，别用白醋，米醋或者陈醋都行，酸味压住茄子那股土腥气，整道菜立刻就活过来了。豆瓣酱是这道菜的灵魂，但一小勺足够，多了咸得齁还发苦，别手抖。

有些人喜欢放糖提鲜，我不太建议，肉沫本身的鲜味被甜一盖就腻了，整盘菜又咸又甜味不清。要提鲜，出锅前滴几滴香油或者撒点香菜，比放糖管用得多。花椒粉可以少撒一点点，增香不抢味，别放成麻辣烫那个量。

肉沫茄子能放冰箱吗

能放，但别超过两天。剩的茄子装保鲜盒密封好冷藏，第二天微波炉转两分钟就能吃。超过两天茄子出水变稀，口感全垮了。想多存几天，趁热分装到冷冻盒里，吃的时候直接下锅回煎，比冷藏的多存一个月没问题。

从冰箱拿出来的冷茄子不建议直接微波，容易外热内凉，咬下去中间还是冰的。热锅少油，倒进去翻个一两分钟，底部煎到微焦起壳，比微波出来好吃不止一个档次，还能把水分收一收，口感回来了。

这道菜真没什么技术门槛，核心就是控好油和调味两个点。多试两回，手感有了，随手一盘就是下饭神器，比饭店做的还不糊弄。
