别再瞎买！小龙虾青壳红壳差别这么大

一到夏天，朋友圈里全是晒小龙虾的。我当美食博主这几年，经常被被问到“自己买小龙虾到底挑青壳还是红壳”。以前我自己也搞不清楚，后来我跟这位卖了十几年小龙虾的老板深聊了一下午，他才掏心窝子告诉我：青壳红壳差别大了去了，很多人一直买错，钱花了，味道却没吃到最好的。今天我就把这门道给大家掰扯清楚。

青壳虾和红壳虾，根本不是一回事

很多人以为小龙虾天生就是红的，其实大错特错。你想想，超市里活的小龙虾，是不是有青绿色的，也有暗红色的？这可不是品种不同，而是生长阶段和生活环境造成的。

先说青壳虾。这种虾外壳薄、颜色发青发绿，摸上去有点软，甚至能隐约看到里面的肉。老板告诉我，青壳虾说白了就是“年轻人”，刚换完壳没多久，壳还没完全硬化。因为壳薄，它们肉质长得特别饱满，虾黄也多，最重要的是——壳好剥！你吃过那种一捏就开、虾肉完整弹出来的小龙虾吧？十有八九是青壳的。

红壳虾呢，属于“老江湖”了。壳厚、硬、颜色深红甚至发黑，个头看着唬人，但实际里面肉可能就一小坨。这种虾要么是成年老虾，壳已经钙化得跟盔甲似的，要么是在很脏的水里长大的——水质差，虾为了保护自己，就会拼命长厚壳。老板原话：“红壳虾看着威风，其实肉老、壳难剥，你费半天劲抠出来，肉缩得跟花生米似的。”

肉质和口感：一个Q弹一个发柴

我专门买了两种虾回来做对比，用的是一样的配料和做法。结果差别太明显了。

青壳虾煮熟后，颜色变成漂亮的大红色，但壳依然是脆的，轻轻一掰，“咔”一声就开了，整条虾肉完整脱出。咬一口，肉质紧实Q弹，虾黄饱满鲜甜，连虾钳里的肉都是满的。而且因为壳薄，入味特别快，烧个十来分钟就透透了。

红壳虾呢，煮了快半小时，壳还是硬邦邦的。剥的时候你得用牙咬、用剪刀剪，指甲都抠疼了。好不容易弄开，里面的肉萎缩得厉害，口感偏老偏柴，有点像嚼橡皮。更坑的是，有些红壳虾看着巨大，一剥开，肉还没青壳虾的一半多。老板偷偷跟我说，很多饭店卖的那种“超大只”小龙虾，用的就是红壳老虾，个头是大了，但吃起来真不咋地。

生长环境：青壳虾普遍更干净

这一点很多人不在意，但其实最要命。青壳虾因为壳薄，对水质特别敏感，水质稍微差一点就活不成。所以养殖户要想养青壳虾，必须勤换水、保持干净。换句话说，你买到青壳虾，大概率说明它是在好水里长大的。

红壳虾就相反了。壳厚耐造，脏水里也能活蹦乱跳。有些不良商贩专门收那种臭水沟里捞的老红虾，外壳上全是泥垢和藻类，刷都刷不干净。老板跟我说，他见过最离谱的，红壳虾肚子里全是黑的，腮也是黑的，这种虾你放再多调料也盖不住那股土腥味。

价格和性价比：别被个头骗了

很多人觉得红壳虾个头大，应该更划算。我告诉你，恰恰相反。我们这菜市场，青壳虾一般比红壳虾贵两到三块钱一斤。为啥？因为青壳虾出肉率高啊！一斤青壳虾能剥出大半碗肉，红壳虾可能就小半碗，算下来吃青壳虾反而更省钱。

而且青壳虾适合各种做法——十三香、蒜蓉、清蒸、冰镇，怎么做都好吃。红壳虾只适合麻辣这种重口味，用大量辣椒花椒去压它的腥味和土味。老板开玩笑说：“你要是拿红壳虾做清蒸，那真是在考验自己的牙口。”

怎么挑？记住三招就够了

第一招，看颜色。同一堆虾里，挑颜色浅的、发青绿的，避开颜色深红发黑的。第二招，捏壳。用手轻轻捏一下虾头旁边那个位置，软的就是青壳虾，硬邦邦的就是红壳老虾。第三招，翻肚子。把虾翻过来看腹部，干净发白的优先，发黑发黄的直接放下。
