免疫力之王竟是这普通菜，含18种氨基酸，老人小孩常吃胜过吃补品

入伏后的天气，闷得像个巨大的蒸笼，走在街上，热浪扑面而来，手里要是没杯冰镇饮料，简直活不下去。

可大家也瞧见了，这冷饮喝得爽，身子骨却遭了殃，动不动就感冒发烧，肠胃更是闹起脾气。

中医常说“脾胃乃后天之本”，这天热食欲不振，其实是身体在向你报警，免疫力这条防线，要是没守住，什么病毒细菌都得找上门。

我常跟家里人念叨，别总盯着大鱼大肉看，真要强身健体，得从菌菇里找答案。

杏鲍菇这东西，在咱们餐桌上太常见，随处可见，很多人觉得它便宜，就把它当成配菜，这可就大错特错了。

杏鲍菇简直就是被低估的“免疫力之王”，它那肥厚的菌肉里，藏着18种氨基酸。

氨基酸是什么？

那是合成组织蛋白的基石，是给身体免疫球蛋白“搬砖加瓦”的功臣。

家里老人小孩体质弱，与其买那些花里胡哨的补充剂，不如多炒一盘杏鲍菇。

我这人嘴馋，对食材挑剔，杏鲍菇那股淡淡的杏仁清香，只要一进锅，我就知道这顿饭稳了。

今天教大家做的“干香杏鲍菇”，是我家夏秋两季的“保命菜”，做法简单，但滋味绝了。

先备好材料：杏鲍菇3到4根，辣椒段10克，香菜10克，花椒3克，蒜片5克，再准备点白芝麻、孜然粉、白砂糖、食盐和生抽。

处理杏鲍菇有讲究。

切掉头尾，往淡盐水里泡个10分钟，这一步是把那些摸不到的杂质给洗干净。

接着切片，厚度控制在0.3厘米，再改刀成丝。

记住，别切得太细，太细下锅一炒就没了嚼头，得留点分量，吃起来才带劲。

锅里水烧开，把杏鲍菇倒进去焯水。

水再次沸腾就关火，捞出来过一遍冷水，这是为了锁住口感。

最关键的一步来了，这时候一定要把水分挤干！

别嫌麻烦，水分挤得越干，后面煸炒出的锅气才越浓郁，要是湿漉漉的，那叫煮杏鲍菇，不叫干煸。

热锅凉油，油温烧到六成热，把杏鲍菇倒进去。

这会儿别偷懒，手里的铲子得勤快点，来回翻炒个2到3分钟，直到边缘出现诱人的焦黄色。

这焦黄色，就是香味的来源。

紧接着，把花椒、辣椒段、蒜片往锅里一丢，大火爆出香味，那股子辛香气儿顺着油烟飘满厨房，这时候撒入食盐、孜然粉、白芝麻、生抽，迅速翻炒均匀，最后抓一把香菜点缀，关火。

这碗菜端上桌，那孜然的香气混合着菌类的鲜味，真是绝配。

家里那几个平时挑食的孩子，闻着味儿就跑来了，筷子夹着杏鲍菇，一口下去，外酥里嫩，那种满足感，比吃肉还过瘾。

这杏鲍菇还有个好处，它不娇气，冷了也好吃。

但我得提醒大家，菌类食物千万别为了省事儿留到第二天。

隔夜的菌菇，细菌繁殖快，吃进肚子里那是给肠胃找麻烦，得不偿失。

咱们吃东西，讲究的是个“顺应”。

夏秋交替，身体最需要调理，这种高氨基酸、高维生素的天然食材，才是老祖宗留给咱们的养生智慧。

别看它只是一盘小菜，吃进去的都是营养，守住的是全家人的健康。
