猪肉去腥别只会焯水！4种“最”强香料，鲜香不腥越炖越香

炖猪肉，最怕啥？不是火候，不是调料贵，而是那股若隐若现的腥味。红烧肉腥了，冰糖都救不回来；排骨汤腥了，喝一口就皱眉。很多人第一反应是加料酒、焯水，可有时候焯完还是腥。问题在哪？猪肉的腥味来自血水、脂肪氧化和猪皮汗腺，光靠姜葱料酒不够。真正会炖肉的人，都懂得用香料压腥。今天我就把压箱底的4种“最”能除猪肉腥味的香料分享出来，牢记这4种，猪肉鲜香不腥，越炖越香。不是越多越好，而是用对、用巧、用准。

第一味：白芷——炖猪肉的“去腥王”。

白芷这东西，看着不起眼，切片发白，闻着有股淡淡的药香。可它对付猪肉腥味，真的比姜还猛。尤其是猪蹄、猪骨、五花肉，白芷一放，腥气就像被抽走一样。老师傅说，卤肉店炖猪头肉、猪蹄，白芷少不了。但记住，白芷“最”能去腥，也最容易发苦。2斤猪肉放1到2片就够，千万别抓一把。用之前干锅焙一下，或者下油锅跟姜片一起煸香，味道更柔和。炖猪蹄时，白芷配草果、良姜，香得邻居都来敲门。

第二味：花椒——麻香一压，腥气跑光。

很多人以为花椒只是麻，其实它去腥解腻特别厉害。猪肉的腥，有一部分是脂肪的油腥味，花椒的清香正好能压住。红花椒香，青花椒麻，炖猪肉我更推荐红花椒。2斤肉放15粒左右，装进料包或者直接撒锅里。焯水时丢几粒，能去血水腥；炒糖色后放几粒，能提肉香。但别贪多，花椒放多了，整锅肉麻嘴，孩子就不爱吃了。我家炖排骨，白芷加花椒，再拍两块姜，汤清肉香，一点不腥。

第三味：八角——猪肉的甜香搭档。

八角是家家都有的香料，但很多人用错了。八角甜香浓，压腥提香是一把好手，尤其适合红烧肉、卤肉。2斤猪肉放1颗到2颗，掰开更出味。可它味道霸道，放多了会发甜、发闷，甚至盖住猪肉本身的鲜。我见过有人炖一斤肉放五六颗八角，那真不是炖肉，是炖大料。正确做法是：八角跟桂皮、白芷搭，少量就够。红烧肉出锅前半小时，把料包捞出来，肉香更干净。

第四味：桂皮——解腻增香，越炖越醇。

桂皮和猪肉，那是老搭档。它辛甜、温暖，能把猪肉的脂香托起来，还能解腻。炖五花肉、猪肘子、猪蹄，放一小段桂皮，香味立马厚起来。2斤肉用1小段，大概3厘米长，别用肉桂粉代替，粉容易糊锅发苦。桂皮和白芷、八角一起下锅，先用油煸一下，香味更足。但桂皮久煮会发苦，炖40分钟到1小时，最好把料包捞出来。这样猪肉鲜香不腥，越炖越香，汤也不发黑。

这4种香料怎么搭？

记住一个“猪肉去腥公式”：2斤猪肉，白芷1片、花椒15粒、八角1颗、桂皮1小段，再加姜3片、葱2段、料酒1勺。焯水时放姜、葱、花椒、料酒，冷水下锅，水开撇沫，煮2到3分钟，温水洗净。炖的时候，少油炒糖色，下猪肉煸炒到微黄，放白芷、八角、桂皮炒香，加热水没过肉，大火烧开转小火。盐别早放，中途或出锅前放，肉才不柴。料包40分钟左右捞出来，避免发苦。

不同部位也要微调。五花肉红烧，八角、桂皮、白芷都要；排骨炖汤，白芷、花椒、姜就够，八角桂皮少放，不然汤色深；猪蹄卤味，白芷、花椒、八角、桂皮，再加半个草果，香而不腻；里脊肉炒着吃，别用这些炖肉香料，姜丝、白胡椒更合适。还有几个坑别踩：别用热水焯肉，别用热水冲焯好的肉，别只靠料酒去腥，别早放盐，别一直大火猛滚，别让料包泡一整锅。
