第一个细节：处理虾，比倒油重要一万倍

很多朋友买回虾来，水一冲就完事儿了，这是大忌。要想颜色好、味道鲜、没腥味，处理虾的手艺占了大头。首先，用剪刀剪掉虾枪、虾须和虾脚，这一步不仅是为了好看，更是为了防止它们在煎制的时候糊掉，产生苦味。其次，也是重中之重——开背去虾线。用剪刀从虾头和虾身的连接处插进去，顺着虾背剪开一条口子，用牙签把那条黑色的虾线挑出来。这个口子不能剪太深，刚好露出虾肉就行，这样既方便入味，又能保持虾型的完整。

最关键的一步来了：处理好的虾，一定要用厨房纸里里外外把水分吸干！这一步千万别偷懒。虾壳上如果带着水，一下热油锅，油花四溅不说，虾壳会瞬间被水蒸气“捂”住，根本煎不出那种焦香的壳，颜色也不会红亮。只有表面干爽的虾，才能在高温下迅速锁住水分，外壳酥脆，肉质才嫩。你看，是不是比倒油重要多了？

第二个细节：煎出虾油，颜色才会红得发亮
