三伏天吃对这三宝，手脚暖了，浑身是劲，这夏天才算没白过！

您别不信，越是往后的伏天，咱们身体里的阳气都浮在体表，内里反而虚寒。这时候，光顾着贪凉，脾胃第一个不答应。所以每年这三伏，我都变着法儿地给自己和家人做那几道“看家菜”。不为别的，就图吃完身上暖烘烘，腿脚有劲，一整天都精神头十足，这舒坦劲儿，才是过夏天的正确打开方式。今天就把我这压箱底的3道菜分享给您，保证您吃了也竖大拇指。

这头一道，就是被很多人误解的 “伏天一碗汤，不用医生帮”的老姜炖鸡汤。您可别一听“炖鸡”就觉得腻，这伏天的鸡，选材和做法都有讲究。

我专门去菜市场挑那种没下过蛋的嫩母鸡，肉质紧实，脂肪也少。处理干净剁成块，冷水下锅，加几片姜和料酒，水一开就赶紧撇去浮沫，这一步去腥最关键。重头戏在“老姜”上，得用那种黄澄澄的老姜，拍扁了，用香油在砂锅里慢慢煸出香味，直到姜片边缘微微焦黄，那股辛辣的香气直往鼻子里钻。这时候把焯好水的鸡块倒进去，大火翻炒，让每一块鸡肉都裹上姜油的香气。然后，倒进滚烫的开水，切记一定是开水，汤色才能瞬间变得奶白。大火滚上十分钟，转小火慢炖一个钟头。出锅前撒上一把枸杞，只加盐调味，别的什么都不用放。您趁热喝上一碗，那股暖流是从胃里慢慢扩散到四肢百骸的，额头上微微冒点细汗，整个人通透得不得了。这汤，喝的是鸡肉的鲜，更是老姜的醇厚，一碗下肚，腿脚想没劲都难。

第二道菜，我得说说这 “比肉还香的砂锅焗南瓜” 。很多人夏天没胃口，看见油腻的就躲，但这道菜端上桌，保准您能多吃半碗饭。

选那种又面又甜的老南瓜，不用削皮，把外皮刷洗干净，切成麻将块大小。砂锅烧热，倒点底油，铺上满满一层蒜瓣和干葱头，小火煸出香味，那股蒜香混着葱香，是这道菜的底味。然后把南瓜块皮朝下，整齐地码在葱蒜上，这时候淋上两勺蒸鱼豉油、一勺蚝油、一小撮白糖提鲜，关键是要沿着锅边淋入小半碗黄酒，“滋啦”一声，酒香四溢。盖上盖子，小火焗上十五分钟，您听着锅里咕嘟咕嘟的声音，闻着那越来越浓郁的焦糖香气，别提多治愈了。时间一到，开盖撒上葱花。这南瓜，吸收了蒜葱的香气和酱汁的咸甜，口感粉糯绵密，边缘有点焦焦的，吃起来比红烧肉还过瘾。南瓜性温，入脾胃经，三伏天吃它，补中益气，比吃那些生冷瓜果强太多了。吃完这道菜，保准您身上暖洋洋的，干活都有力气。

最后一道压轴的，是我家夏天餐桌上的“明星”—— “胡椒猪肚煲” 。这道菜看着复杂，其实只要处理好了猪肚，就成功了一大半。
