两款零失败蔬菜软糕做法！软糯清甜超营养，老少都爱吃

今天分享两款超成功的家常蔬菜蒸糕：菠菜蒸糕 + 综合蔬菜软糕。做法简单、不用复杂技巧、不用打发、零添加剂、蒸出来松软湿润、入口即化，蔬菜清香完全不涩，全家都能吃，营养又解馋。

全程家常食材、成功率百分百，新手也能一次成型！

一、菠菜蒸糕｜翠绿软糯、细腻无渣、补铁营养

菠菜口感粗糙、很多人不爱吃，做成蒸糕完全颠覆口感，颜色翠绿好看，口感软糯清甜，自带淡淡蔬菜香，一点不苦涩。

食材

菠菜一把、鸡蛋2个、普通面粉80g、牛奶/清水100ml、少许白糖（可不放）

做法步骤

1. 菠菜焯水去草酸

水烧开，放入菠菜烫10秒立刻捞出，过凉水降温，挤干水分。焯水可以去除菠菜涩味和草酸，做出来的糕细腻不发苦、颜色更翠绿。

2. 打成细腻蔬菜泥

把焯好的菠菜放入破壁机，加牛奶或清水，打成细腻无颗粒的菠菜汁。

3. 调面糊

菠菜汁倒入大碗，打入两颗鸡蛋，加少许白糖调味，充分搅匀。

分次筛入普通面粉，搅拌至顺滑无颗粒、可流动的酸奶状面糊。

面糊太稠会硬、太稀会不成型，酸奶稠度刚刚好。

4. 上锅蒸熟

模具刷一层薄油防粘，倒入面糊，轻轻震两下震出气泡。

冷水上锅，中火蒸20分钟，关火焖3分钟。

5. 脱模切块

放凉脱模，切成小块即可。

成品特点

颜色清新翠绿，口感软糯湿润、细腻无渣，蛋香混合淡淡的菠菜清香，完全不腻，营养好吸收。

二、综合蔬菜软糕｜多种蔬菜搭配、口感更松软、营养更全面

这款是杂蔬软糕，搭配多种清甜蔬菜，口感比单一菠菜糕更松软，味道更清甜，蔬菜味更淡，挑食宝宝也能轻松接受。

食材

胡萝卜、西兰花、娃娃菜（任意三种软蔬菜）、鸡蛋2个、面粉90g、温水适量、少许食盐/一点点糖

做法步骤

1. 蔬菜焯水断生

所有蔬菜全部洗净切块，开水下锅焯水1分钟，捞出过凉沥干。

西兰花、胡萝卜轻微焯水，既能去生味，又能保留营养和脆甜口感。

2. 打成细腻杂蔬泥

把所有蔬菜放入料理机，加少量温水，打成细腻的蔬菜泥备用。

3. 调制软糕面糊

蔬菜泥中打入鸡蛋，少许盐或少许糖调味，搅拌均匀。

分次加入面粉，搅拌成细腻流动面糊，比菠菜面糊稍微稀一点点，成品更松软。

4. 二次过筛（关键！更细腻）

面糊过筛一遍，滤掉小面疙瘩，蒸出来的糕超级细腻、气孔均匀。

5. 蒸制定型

模具刷油，倒入面糊，盖保鲜膜扎小孔防滴水。

水开上锅，中火蒸22分钟，焖5分钟出锅。

6. 切块食用

放凉后脱模，切成小块，软弹蓬松，不易塌、不发硬。

成品特点

松软回弹、湿润不发干，多种蔬菜融合清甜，几乎吃不出蔬菜腥味，口感温柔软糯，易消化、不上火。
