入伏倒计时！这3种肉使劲吃，鲜嫩肥美还不胖

眼瞅着日历牌快撕到七月半了，这心里头就跟着了火似的。老话说“冷在三九，热在三伏”，没几天就要往这“蒸笼”里头钻了。天一热，我家那口子跟孩子就嚷着没胃口，看见红烧肉就皱眉头。前几年这时候我也犯愁，天天清粥小菜对付着，结果一到秋天，爷俩一人病一场，脸色蜡黄，我才知道这“苦夏”光吃素可不成！后来我特意跟一位做了二十年厨师的老师傅讨教，才明白这入伏前后啊，吃肉得吃“凉性肉”。今年我就把这压箱底的三种“伏天宝贝肉”跟大伙儿透个底，保准您吃着鲜灵还不长膘，错过这茬可真要再等一年了。

一、 鸭肉——专治伏天“没火气”的温柔一刀

我原先也不爱做鸭肉，总觉得有一股子土腥味。但自从学会了“选嫩鸭、泡血水、煸透油”这三板斧，我家每周必炖一锅。

入伏吃鸭，这是老祖宗的智慧。鸭子成天在水里扑腾，性凉，正好能解咱们身上的暑毒。特别是咱们平时熬夜加班、嘴角起泡的，喝两碗老鸭汤，比喝凉茶还舒坦。

我自个儿的独家吃法是“冬瓜薏米炖水鸭”。 您记住，鸭皮下的油是宝也是祸，炖之前一定要把鸭皮朝下在锅里干煸，把那些肥油全逼出来，煸到鸭皮金黄焦脆。这时候再“滋啦”一声冲入滚烫的开水，汤色立马奶白。扔几块带皮的冬瓜进去，小火咕嘟一个钟头。出锅前只撒一把盐和枸杞，那鲜味能顺着喉咙一路滑到肚子里去。鸭肉紧实但不柴，沾着蒜蓉酱油吃，清甜中带着肉香。关键是这一锅汤下去，全家人一下午都不觉得口干舌燥，内里的燥热全被这“温柔一刀”给化解了。

二、 花蛤——夜市排挡里的“蛋白炮弹”

说到第二种，我可太有发言权了。夏天傍晚，约三五好友，烤串配啤酒虽爽，但吃完第二天脸就肿。这时候花蛤就是我的“救命仙丹”。

这小东西价格亲民，十块钱能买一大兜。别看它壳重肉轻，那两瓣肉里全是精华。蛋白质含量高得惊人，脂肪却几乎可以忽略不计。夏天我们流汗多，身体里的微量元素跟不要钱似的往外跑，吃花蛤正好能把这窟窿给堵上。

这里得跟您透个我踩过的坑——千万别加水煮！ 我以前傻，煮出来一锅水，鲜味全跑了。现在我的独门绝技是干锅焗。把花蛤洗净吐沙，直接铺在烧得滚烫的铁锅里，盖上盖子。您就听着那“噼里啪啦”的开壳声，像不像下了一场珍珠雨？等壳全张开了，撒上一把葱花、姜丝，淋上蒸鱼豉油，最后泼一勺滚烫的热油，“刺啦”一声，满屋飘香。那汤汁是花蛤自己的原汤，鲜到掉眉毛，肉嫩得吸溜一下就进嘴里了。吃着过瘾，还不用担心发胖，这感觉比吃水煮鸡胸肉幸福一万倍！

三、 兔肉——健身教练都不会告诉你的“隐形冠军”

最后这位，胆子小的可能不敢下嘴，但我求您今年一定要试试——兔肉。我在成都吃过一次“手撕烤兔”后就彻底沦陷了。

大家都说兔肉是“荤中之素”，这话一点不假。它那蛋白质含量高得吓人，脂肪却比鸡胸肉还低，简直就是为夏天量身定制的。而且兔肉肉质极其细嫩，全是瘦肉，一丝肥的都没有，吃起来特别有嚼头，但又不会塞牙。

我家的做法是“仔姜鲜椒兔”。 伏天也是仔姜上市的季节，这俩是绝配。兔肉切丁，用料酒、生抽、淀粉抓匀，滑油至变白就赶紧捞出来。锅里留底油，爆香蒜粒、青花椒，下入大量的青红小米辣和切得细细的仔姜丝，炒出那股冲鼻子的鲜辣味后，倒入兔丁大火快炒。兔肉吸饱了仔姜和辣椒的汤汁，入口滑嫩，紧接着就是一股直冲天灵盖的鲜辣。这道菜一上桌，我老公至少能干三碗米饭。吃完出一身透汗，把体内的湿气寒气全带走了，浑身通透，还不用担心长肉，这是夏天该有的痛快！
