秋天没胃口别总吃重口，这8道清爽菜换着做，解腻不寡淡

温馨提示：清淡不等于无味，这几道菜保留食材本味，少油少辣，开胃不刺激，换季食欲差的时候很适合，全家老少都能吃。

一、蒜香椒盐排骨

所需食材：猪肋排、蒜末、料酒、生抽、盐、椒盐、淀粉

制作方法：

1、肋排剁成段，放入清水中浸泡去血水，捞出沥干，加入蒜末、料酒、生抽和盐抓匀，腌上 20 分钟，蒜末多放点，腌得透，炸出来蒜香才足。

2、腌好的排骨裹上一层干淀粉，锅中入油，油温六成热时下入排骨，炸至定型捞出，油温升高后再复炸一遍，复炸的油温要高，炸至金黄酥脆捞出。

3、锅中留底油，下入蒜末炒香，下入炸好的排骨，撒入椒盐，翻炒均匀，即可出锅享用。

二、山药百合老鸭汤

食材：老鸭半只、铁棍山药1根、干百合20g、姜片、枸杞、食盐

详细做法

1、老鸭切块冷水焯水，煮出浮沫后捞出洗净，去掉多余鸭皮油脂，避免油腻；

2、百合提前泡发，山药去皮切小段，清水浸泡防氧化；

3、砂锅中放入鸭块、姜片，大火烧开转小火慢炖40分钟；

4、加入山药、百合继续炖煮20分钟，让食材营养充分融入汤中；

5、放入枸杞焖5分钟，加盐调味即可，清润去火、滋阴养身，换季必喝。

三、冬瓜薏米排骨汤

所需食材：排骨500克，冬瓜400克，薏米50克，生姜3片，料酒1勺，食盐适量，白胡椒粉少许，清水适量，小葱1根。

步骤：

1. 薏米提前用清水浸泡2小时，捞出沥干备用；排骨斩成小块，放入清水中浸泡20分钟，中途换水一次，泡出血水。
2. 冬瓜去皮去瓤，切成约2厘米厚的块状，注意不要切得太薄，以免久煮碎烂；小葱切葱花备用。
3. 锅中加冷水，放入排骨、姜片和料酒，大火煮开后撇去浮沫，继续煮2分钟，捞出排骨用温水冲洗干净。
4. 将焯好的排骨、泡好的薏米和姜片一同放入砂锅，加入足量清水，水量要一次加够，中途尽量不添水。
5. 大火烧开后转小火，盖上锅盖慢炖40分钟，让排骨的鲜味和薏米的清香充分释放。
6. 放入冬瓜块，继续小火炖煮15分钟，直到冬瓜变得透明软烂，用筷子能轻松扎透即可。
7. 最后加入食盐和少许白胡椒粉调味，撒上葱花，关火焖2分钟即可盛出享用。

四、冬瓜虾皮海带汤

食材：冬瓜200g、海带结、虾皮、姜片、葱花、盐、白胡椒粉

详细做法

1、冬瓜去皮切薄片，海带结洗净备用，虾皮用温水冲洗去盐分；

2、锅中清水加姜片烧开，放入海带结煮5分钟煮出鲜味；

3、下入冬瓜片、虾皮，中小火煮8分钟至冬瓜通透软糯；

4、加少许盐、微量白胡椒粉调味提鲜；

5、撒葱花出锅，鲜爽清淡、润燥解腻，减脂养生都适配。

五、牛肉末烧日本豆腐

所需食材： 日本豆腐三条、牛肉末一百克、青蒜两根、生姜两片、大蒜两瓣、生抽两勺、老抽半勺、蚝油一勺、白糖少许、淀粉适量、食用油适量、清水半碗。

步骤：

1. 日本豆腐连袋从中间切开，轻轻挤出，切成厚约两厘米的圆段，裹上一层薄淀粉。
2. 平底锅倒油烧热，放入日本豆腐段，中小火煎至两面金黄，盛出备用。
3. 锅中留底油，放入牛肉末，快速翻炒至变色散开，加入姜蒜末爆香。
4. 调入生抽、老抽、蚝油和少许白糖，翻炒均匀，使牛肉末上色入味。
5. 倒入半碗清水，大火烧开，放入煎好的日本豆腐，轻轻推匀，避免弄碎。
6. 转中小火烧两分钟，让豆腐充分吸收汤汁，再用少许水淀粉勾薄芡。
7. 出锅前撒入切碎的青蒜段，翻匀即可关火装盘。

六、西葫芦炒肉

准备食材: 西葫芦、瘦肉、姜蒜末。

做法步骤:

1、切成薄片的瘦肉加入淀粉、胡椒粉、生抽和花生油抓拌均匀，再腌制十分钟备用。

2、西葫芦清洗干净切薄片，然后热锅烧油，油热以后，放入姜蒜末爆香，接着倒入瘦肉一起翻炒均匀。

3、炒至瘦肉变色后，再加入西葫芦一起翻炒，然后放入食盐调味，接着淋入少许的清水一起翻炒均匀入味。

4、炒至西葫芦断生入味以后，即可出锅开吃。

七、香干炒芹菜

食材：芹菜2根、香干3块、蒜片、少许盐

做法

1. 芹菜撕掉老筋切段，开水焯30秒捞出；香干切细条。

2. 少油爆蒜片，先放香干稍微煎一下。

3. 倒入芹菜大火快炒，加盐调味，翻几下出锅。

亮点：芹菜清香，香干自带豆香，清淡却很下饭。

八、番茄嫩豆腐

食材：番茄2个、嫩豆腐1块、葱花、少许盐、一点点白糖

做法

1. 番茄顶部划十字，开水烫去皮，切成小块；豆腐切厚块。

2. 少油下番茄翻炒，按压炒出浓郁番茄汤汁，加少量清水煮开。

3. 放入豆腐，小火焖5分钟，加盐和一点点白糖提鲜，撒葱花。
