9月这菜使劲吃！一通便、二低脂、三强免疫，随手一拌脆嫩爽口

菜市场里最不起眼的角落里，藏着一个“宝藏食材”——黑木耳。别看它干巴巴一小把，泡开之后脆嫩弹牙，关键是它真真切切能帮上身体的忙：一通便、二低脂、三强免疫，三件事它一个人全包了。入秋之后天气干燥，肠胃容易闹脾气，大鱼大肉贴秋膘又怕长肉，这时候来一盘酸辣开胃的凉拌木耳，比啥都实在。而且9月正是秋木耳大量上市的季节，这个时候的木耳肉厚胶足，口感比春耳好一大截，不吃真的亏了。今天就跟大家好好聊聊这道凉拌木耳，从营养到做法，一次性说透，看完赶紧安排上！

一、为什么9月要使劲吃木耳？

先说说时令这件事。木耳分春耳和秋耳，9月立秋之后采摘的木耳叫“秋木耳”。因为秋季昼夜温差大，木耳生长速度慢，反而积累的营养更多，耳片更厚实，多糖和胶质沉淀得更好。东北东宁的秋木耳一般在9月中旬开始采收，这个时间段出来的木耳颜色乌黑、质地紧实，泡发之后肉厚有嚼劲，凉拌起来口感特别脆爽。说白了，同样是木耳，9月的秋耳就是比平时买的更“有料”。

再说说营养。木耳在民间一直有“素中之荤”的说法，蛋白质含量和肉类差不多，钙是肉类的20倍，铁含量更是高得离谱——每100克黑木耳含铁185毫克，是菠菜的20倍，猪肝的7倍左右。关键是它几乎没有脂肪，热量也低，100克黑木耳的热量还不到35大卡，妥妥的“低卡食物”。

二、凉拌木耳的三大硬核好处

一通便：肠道的“清道夫”不是白叫的

木耳通便这件事，靠的是两样东西。一个是膳食纤维，每100克黑木耳大约有6克膳食纤维，这些纤维进入肠道后会吸水膨胀，把粪便体积撑大，刺激肠道蠕动，排便自然就顺畅了。另一个是木耳特有的植物胶质，它的吸附能力很强，能把残留在消化系统里的杂质、灰尘吸附住一起排出去，所以木耳还有个外号叫“肠道清道夫”。秋天很多人容易便秘，跟天气干燥、喝水少有关系，这时候每天来一小盘凉拌木耳，比吃啥通便茶都温和管用。

二低脂：减脂期的“救命菜”

木耳的脂肪含量是多少？几乎是零。干木耳的脂肪含量只有0.2克/100克，泡发之后就更低了。而且木耳里的水溶性膳食纤维在胃里会吸水膨胀，吃下去特别有饱腹感，能帮你少吃不少主食。我有个朋友减脂期晚餐不知道吃啥，我就让她拌一盘木耳配个水煮蛋，饱腹感强、热量低，还不缺营养。凉拌的做法本身也健康，不用炒不用炸，一勺香油、两勺醋就搞定，比那些沙拉酱拌的“假减脂餐”靠谱多了。

三强免疫：多糖体是真正的“幕后功臣”

木耳里有一种叫“木耳多糖”的活性成分，这东西能刺激淋巴细胞，促进抗体产生，帮身体把免疫防线扎得更牢。现代人熬夜多、压力大，免疫力动不动就拉警报，与其花大价钱买各种保健品，不如日常饮食里多加点木耳。而且木耳还含有维生素D，晒过的木耳维生素D含量更高，对免疫系统的支持也是实打实的。

三、做好凉拌木耳，记住这4个关键

关键一：泡发用冷水，时间别贪多

很多人泡木耳图快，直接用热水甚至开水泡，结果泡出来的木耳软趴趴的，一点都不脆。正确的做法是用冷水泡发，冷水能让木耳的胶质慢慢舒展开来，泡出来的木耳厚实Q弹。时间上，冷水泡1到2个小时就够了，泡到捏上去脆嫩有弹性就行，千万别泡过头。特别提醒：千万不要隔夜泡！常温下长时间泡木耳容易滋生细菌，严重的还可能产生米酵菌酸，吃了会中毒。如果实在赶时间，可以用40度左右的温水泡20到30分钟，但水温绝对不能太高。

关键二：焯水加盐，捞出立刻过冰水

木耳泡好之后不能直接凉拌，一定要焯水。锅里水烧开，先撒一小撮盐，再把木耳放进去焯1分钟左右，立刻捞出来扔进冰水里。加盐能让木耳入个底味，过冰水是让木耳保持脆爽的关键一步，热胀冷缩的原理，木耳瞬间收紧，吃起来嘎嘣脆。焯水时间千万别长，半分钟到一分钟足够，煮久了木耳就烂了。

关键三：料汁是灵魂，酸辣比例要拿捏

凉拌木耳好不好吃，八成看料汁。分享一个我用了好几年的万能配方：生抽3勺、香醋2勺、蚝油1勺、白糖半勺、蒜末5瓣剁成泥、小米辣3根切圈、香油1勺、凉白开2勺稀释一下。蒜末一定要多，蒜香是凉拌木耳的灵魂；醋建议用陈醋或香醋，酸味够劲但不冲；白糖只要半勺，提鲜用的，吃不出甜味但少了它味道就是差一截。喜欢的话还可以加点香菜段和熟白芝麻，香味直接翻倍。

关键四：拌之前控干水分，拌好别久放

木耳焯完水、过完冰水之后，一定要把水分控干，最好用手轻轻挤一下。带着水拌，料汁会被稀释，木耳挂不住味道，吃起来寡淡。拌好之后尽快吃，放久了木耳会回软，脆劲就没了。

四、一道零失败的凉拌木耳，手把手教你

说了这么多，直接上做法。

食材准备： 干秋木耳20克（泡发后大概能出一大盘）、大蒜5瓣、小米辣3根、香菜2根、小葱1根。

料汁： 生抽3勺、香醋2勺、蚝油1勺、白糖半勺、香油1勺、凉白开2勺、盐少许。

做法：

第一步，干木耳提前用冷水泡1到2个小时，泡到捏起来有弹性、没有硬芯就行。泡好后把根部摘掉，大朵的撕成一口大小。

第二步，锅里烧水，水开后加一小撮盐，放入木耳焯1分钟，捞出立刻放进冰水里泡2分钟。

第三步，趁着泡木耳的功夫调料汁。蒜剁成泥、小米辣切圈、小葱切葱花，全部放进碗里，加入生抽、香醋、蚝油、白糖、香油和凉白开，搅拌均匀。想让蒜香更浓的话，可以烧一小勺热油浇在蒜末上，“滋啦”一声，香味直接窜出来。
