茼蒿菜饭：一把茼蒿焖进饭里，满屋子都是清香

茼蒿这东西挺有意思，爱的人觉得它香得不行，不爱的人嫌它味道怪。我家属于前者，一到秋冬茼蒿上市的时候，隔三差五就要吃一回。炒着吃、涮火锅都行，但我最喜欢的还是做成菜饭，把茼蒿切碎了焖进米饭里，出锅的时候满屋子都是那股子清香，光闻着就饿了。先说食材。茼蒿一把，大概两三百克，不用太多，不然菜味太重会盖过米饭的香。大米两杯，按平时煮饭的量来就行。再备点腊肠或者咸肉，没有的话用培根也行，实在不想放肉，光茼蒿也好吃。蒜末来一点，盐、生抽、一点猪油或者食用油就够了。

做法真的特别简单。大米淘洗干净，比平时煮饭少放一点点水，因为茼蒿会出水。茼蒿洗干净，一定要沥干，不然饭会湿乎乎的。叶子和茎分开，茎切成小丁，叶子粗粗切几下就行，别切太碎，不然焖完就找不着了。锅里放一点油，下蒜末炒香，把腊肠切片放进去煸出油，再放茼蒿茎翻炒几下，加一点盐和生抽调味。这时候把洗好的米倒进去，翻炒均匀，让每粒米都沾上油和调料。连米带菜一起倒进电饭煲，按正常煮饭键。等饭煮到还剩十来分钟的时候，打开盖子，把茼蒿叶子铺在上面，盖上继续焖熟。出锅前拌匀，让叶子和米饭充分混合，那股清香一下就出来了。

现在我自己做这道菜，有时候会加点香菇丁或者胡萝卜丁，颜色更好看，营养也更丰富。但最经典的还是茼蒿配腊肠，简单、朴素，但就是好吃。冬天冷的时候，焖一锅热乎乎的菜饭，不用炒菜不用炖汤，一碗下肚浑身都暖和了。茼蒿菜饭就是这样，没什么花哨的，就是一把菜、一锅饭，但那种朴实的香味，真的让人念念不忘。
