青红椒炒鸡丁，低脂下饭的快手家常小炒

想要兼顾美味与低负担，鸡胸肉是很多人的优选食材。低脂低热量的鸡胸肉，稍加处理就能告别干柴口感，这道青红椒炒鸡丁，做法简单，十几分钟就能出锅。鲜亮的青红辣椒搭配嫩而入味的鸡丁，咸鲜微辣，开胃下饭，不管是减脂期的简餐，还是日常家庭便饭，都是很不错的选择，新手也能轻松做好。

准备食材十分简单，一块鸡胸肉，青红辣椒各五个，再备适量姜葱蒜。调味需要一勺料酒、一勺淀粉、一勺生抽、一勺老抽、一勺蚝油，再准备少许盐和白糖。辣椒可以根据自己吃辣的喜好调整用量，姜葱蒜切成细末，用来激发整道菜的香气。

想要鸡丁滑嫩不柴，腌制步骤是重中之重。鸡胸肉切成大小均匀的小丁，放入碗中，加入一勺料酒、一勺生抽和一勺淀粉，用手充分抓拌，静置腌制十分钟。淀粉会包裹在鸡丁表面，锁住肉里面的水分，有效避免炒制之后肉质发柴发硬。趁着腌制鸡丁的空档，把青红辣椒切成小圈，姜、葱、蒜全部切成细末，所有配菜备好，后面炒制的时候就不会手忙脚乱。

起锅倒油，油温烧热之后下入腌好的鸡丁，快速翻炒，直到鸡丁全部变色。随后加入姜葱蒜末，继续翻炒爆香，让葱姜蒜的香气融入肉中。接着加入一勺老抽和一勺蚝油，翻炒均匀，老抽用来上色，让鸡丁色泽红亮，蚝油增添醇厚鲜感。再放少许盐和白糖调味，白糖不是为了吃出甜味，而是用来提鲜，中和咸味，让味道层次更柔和。

调味拌匀之后倒入切好的青红椒圈，沿着锅边淋入少量清水，大火快速翻炒几下就可以关火出锅。青红椒不要久炒，保留爽脆口感，鲜亮的红绿配色，也能让整道菜看起来更有食欲。全程大火快炒，既能锁住鸡丁鲜嫩的口感，又能保留辣椒清新的辣味，不会软烂出水。
