这道菜再贵也值得吃，已经大量上市！它比红薯山药更养人，建议中老年人经常吃

我家老爷子有个习惯，逢到家里菜市场热闹的时候，先不急着挑肉，先把软糯的菜瞅一圈。前几天他一边指着红薯和山药说这俩是老本行，一边又叹气说现在的芋头咋少了？我当时还顺嘴回了一句，咱不嫌便宜，咱就怕错过好东西。

结果当天我买了两大袋芋头回家，放到灶台边上，跟点了个新菜谱似的。晚上开火前我切开一个，白白的、绵绵的，轻轻一捏就碎。老伴说像是专门给老人养胃用的，我爸妈听了连连点头，两个小家伙也跑过来问能不能做甜口。那一锅芋头端上桌，家里人不是说好吃两个字就完事了，是真的是边吃边说细、说舒服，嘴上不夸张，肚子替他们夸。

这菜再贵也要吃，大量上市。很多人一听芋头先想到的是芋圆、是零食，或者以为它麻烦，得费工夫。可现在应季芋头集中上市，口感绵密，吃起来软糯香甜，老人肠胃更愿意接纳。芋头的淀粉含量不低，还带着膳食纤维和一些微量元素，关键是它性质相对平和，平日适量吃，能给身体补上营养的短板，也能让肠道活动更有劲。

但我得说句大实话，芋头真正吃起来舒服不舒服，和会不会做有关系。比如你蒸得太干，或者煮得太粗糙，口感就容易发粉发柴。要想让老人吃着顺嘴，汤汁类更容易，炖煮也更稳。我这几年给爸妈和孩子做，能重复做的就是这四种，莲子芋头粥、奶芋银耳羹、桂花芋头、香芋排骨，基本不用折腾，就能把芋头的软糯甜香端出来。

先说莲子芋头粥。家里老人最爱这种慢慢熬的，越熬越黏稠，米香和芋香混在一起，端上桌就不需要你再喊开饭。食材我按量抓得很实在：莲子25克，芋头200克，小米或大米60克，红枣6颗可选，冰糖按口味，清水按锅里位置加到够熬的程度。

做法也不绕：莲子提前浸泡，芋头去皮切小块，尽量让块头差不多大。锅里先把米淘洗干净，加清水煮开，再把莲子和芋头一起下锅，转小火慢慢熬。火小一点，口感更细腻，芋头不容易出那种糙劲。熬到软糯浓稠就行，想更香就放红枣和少量冰糖，继续煮一会儿，直到粥体“黏得住勺”。

你要问为什么这道适合中老年？我观察得很直接。家里爸妈吃完不是那种撑着难受的感觉，肚子有温度，第二天排便也更规律。芋头里有淀粉，也有膳食纤维，加上小米或大米的口感，整体更容易消化。莲子也属于常见食材，和芋头搭起来更像一套“和胃”的组合。饭点前我还会让老人少说话多嚼两下，吃得慢一点，肠胃就更省心。

第二道是奶芋银耳羹。很多人买银耳只会煮着吃，但银耳羹这个东西，做得好不好就看你把银耳的胶质熬没熬出来。食材配比我一般按2到3人份来：芋头200克，银耳20克，枸杞大概5克左右，冰糖少量，清水大约800毫升。

注意一个细节就够了。干银耳温水泡发后，去根撕成小朵。芋头去皮洗净切块，想省事就别切太大，不然要多煮一会儿。煮的时候先把清水烧开，把银耳下锅，转小火先煮10分钟。再加芋头块，继续小火15分钟左右。你看锅里会出现变化：芋头软糯，银耳出胶，汤汁变得更黏。最后放枸杞和冰糖，再煮2分钟就关火，温热吃更合适。

这道羹我拿来给我爸妈当早餐也行，当作午后点心也行。银耳羹的优势是口感顺，不用咀嚼太用力。芋头在里面起到软糯的支撑作用，吃完不顶，不像有些甜点容易让人血糖波动大。家里有糖尿病史的亲戚，我也会让他们把冰糖减半或者不放，芋头的甜味足够撑起味道。老人吃东西讲的是稳，不是上来就猛甜。

第三道是桂花芋头。很多人只在外面吃糖水，回家就懒得做。可桂花芋头真不难，难的是你得选对芋头，还有耐心把芋头煮透。食材我一般准备：芋头约500克去皮后的量，冰糖约80克，干桂花约2克，枸杞5克可选，清水约800毫升。

操作流程简单但别偷懒。芋头去皮洗净，切成大小均匀小块。上锅蒸熟或煮熟，筷子能轻松戳透就行。锅里另起，加入清水和冰糖，小火煮到冰糖融化，关火前放干桂花熬出香味。最后把糖汁淋到熟芋头上，撒桂花和枸杞点缀，端上桌那股香味能把人从院子里叫回来。

我最爱看的是我家俩小子吃的样子，舀一勺，嘴巴黏着糖汁还不肯停。他们不懂营养，但懂好吃。更关键的是，这道菜热量主要来自芋头和糖，家里人吃的时候我会按碗分量来，不让老人和孩子“自助上头”。芋头本身有饱腹感，吃一会儿就会停下，省得嘴馋把甜吃过量。桂花香也能降低对额外香精的依赖，清清爽爽的。

第四道也是我家餐桌上最“硬气”的一锅，香芋排骨。老人爱肉，但又怕油腻，这道就像把芋头的绵密和排骨的鲜香拧到一起。食材：排骨500克选肋排更嫩，香芋300克建议用荔浦芋头口感更绵密。姜片3到4片，大蒜3瓣拍扁即可，料酒1勺，生抽2勺，老抽1勺上色用，蚝油1勺，冰糖8到10颗，盐适量，葱花适量，清水按需要加够。

这道菜的关键在两个时段。第一段先处理排骨。排骨冷水下锅，加姜片和料酒焯水，水开后撇去浮沫，捞出洗净备用。第二段是焖煮和入味。香芋去皮切2厘米左右的方块，放清水里浸泡防氧化，能加点白醋更稳。热锅凉油，姜蒜爆香，下排骨翻炒到表面微微焦黄。再加生抽、老抽、蚝油，快速翻炒让排骨均匀上色。加足量热水没过排骨，放冰糖，大火煮开转小火盖盖焖煮40分钟。等排骨入味后倒入香芋块，再盖盖焖煮20分钟，让芋头充分吸收肉汁。最后大火收汁到汤汁浓稠，撒葱花出锅。

你要说这道为啥适合中老年？第一，焖煮时间足，肉和芋头都软烂，咀嚼负担小。第二，芋头吸了排骨汤汁，吃起来不是干干的。第三，芋头的淀粉在汤里形成糯糯的口感，不会让人觉得越吃越油。家里吃饭这件事讲究的是“吃了不难受”，我做香芋排骨的目标也就俩字：舒服。

还有一个容易被忽略的点，芋头不是人人都适合大吃。你要是胃口虚弱、经常腹胀，那也别上来就吃一大碗。口感软糯不等于无限量，尤其是甜口的做法，冰糖别加太猛。你要是血糖管得紧，就把冰糖减到很少，或者选清淡做法，比如把银耳羹里的甜度降下来。老人和孩子同桌吃菜，最好用一锅底味道来分口，不要每个人都靠自己加糖去调味，容易越吃越上火。

我写这么多做法，不是为了让大家跟我一样勤快，而是想把“常吃芋头”这件事说清楚。芋头从上市到上桌，省的不是钱，是你找合适口感的时间。它比红薯山药更少被想到，但它的优势很具体，口感绵密、性质平和、吃了舒服。
