深秋别错过这道蒸菜！冬瓜蒸肉末清淡鲜爽，低脂无油烟

入秋以后我最怕的一件事，就是餐桌突然变“重”了。天气一凉，家里人就想吃点带劲的，红烧、炖排骨、煎炸一上来，没两天我就感觉胃里发闷，嗓子也干得慌。老公倒是还好，他属于“能吃”的那种，可我家孩子一口一口吃得挺香，吃完反而更爱要水，我就知道得换口味了。

那阵子我在厨房里瞎琢磨了一顿：既想吃肉，又不想油腻。后来我想起冬瓜，真不是“万能但没个味儿”的那种。冬瓜吸味道特别会来事，肉的香气一蒸就进去，水分也会慢慢回到你嘴里，清甜清甜的，吃起来不像在“啃一坨油”，更像是在吃一锅鲜。

我给家里做的这道冬瓜蒸肉末，基本属于我家秋天的“常备菜”。老人小孩都能吃，连闺蜜来我家吃饭时也会问一句：你这个肉末怎么这么嫩？我不太爱讲复杂技巧，就一句话：**蒸，比你想的更省事，也更不容易翻车。**

先说我最喜欢的点，不是“少油”，是“省心”。

肉末通常炒出来会更香，可炒肉最容易出现两个问题：一是油要多一点，不然味道就薄；二是火候一急，肉就容易老。蒸肉末就不一样，它靠的是时间和水汽，肉末会慢慢熟透，**嫩是自带的**。冬瓜也不用你费劲控油，冬瓜本身就会吐水，蒸的时候把肉香“带着走”，最后落到汤汁里，拌饭都很香。

肉末我习惯肥瘦三七分。有人觉得“越瘦越健康”，我懂，但我在长沙的厨房里也见过太多次：太瘦的肉末蒸出来会干，香气也会跑。**三七分的口感刚刚好**，蒸出来细腻，还带点肉香的油润感。你要是买不到这个比例，也可以选肥瘦相对均匀的，别全瘦就行。

接下来就是关键步骤了，别被“蒸菜”这两个字骗了，调味才是灵魂。

把猪肉末放碗里，加入姜末少许，生抽1勺、蚝油半勺，再撒一点点淀粉。淀粉别多，抓一把能让肉末更抱团就行，蒸的时候肉汁就不那么容易散。盐要最后再看情况，我家生抽和蚝油本身都有咸味，盐少一点反而更干净。

冬瓜摆在盘里，肉末铺在上面。锅里水烧开后再上锅蒸，大火先把蒸汽起来，之后保持持续蒸就好。你大概听得到那种“咕嘟咕嘟”的声音，蒸着蒸着厨房就会开始有肉香和冬瓜清甜混在一起的味道。

我做菜最在意的是一口下去的感觉。蒸好以后，盘子里一般会有汤汁，别急着倒掉。汤汁是精华：冬瓜的清甜被肉香浸透，味道很轻，但不寡淡。你舀一勺拌饭，孩子能多吃半碗，我自己都觉得有点“作弊的快乐”。
