下饭天花板青椒豆花牛肉，鲜辣清爽又不厚重不油腻

我承认，我家厨房里有个“犯腻雷达”。水煮牛肉那种红油厚重的味道，真的香得要命，可吃多了就会觉得口腔被“糊住”了。尤其是带娃那阵子，吃饭节奏快得像打仗，嘴里如果一直是浓辣浓麻，胃反而先不答应。

所以最近我特别迷上这道青椒豆花牛肉。它不走那种一口辣到上头的路线，反而是青椒的清香先把人拽回来，再用豆花的软嫩把汤汁稳稳接住。牛肉滑嫩，不柴不韧，豆花入味又不散。最关键的？汤汁能拌饭，而且拌完你会觉得，刚才那碗米饭是“被好好对待了”的。

我第一次做，是在长沙的一个普通周末。下班回家看到冰箱里那盒豆花，脑子里只有一个念头：别再浪费。牛肉也是现成的里脊，于是就用“清爽路线”把水煮牛肉的那股油腻劲儿换掉。

先说食材，不复杂，但每一样都有用：

牛里脊300克、嫩豆花一盒，青椒150克（二荆条和线椒搭着来，香气更稳，辣度也不至于呛），小米辣适量想吃就加，不吃辣就省。姜蒜、葱花用来提香，鸡蛋清和淀粉用来保证牛肉滑。

豆花这边也有避坑点。嫩豆花特别容易碎，我第一次不懂的时候，锅里翻来翻去，结果豆花变成了“豆花渣渣”。后来我学乖了：把豆花切成厚片，放碗里，加一点淡盐水浸泡。这样口感更稳，后面下锅不容易散。

青椒就切圈或斜段，别切太碎。你要的是它的清香和脆爽，不是青椒泥。
