盐放多了别慌！这几招让厨房小白秒变大神

做饭这事儿吧，说难不难，说简单也真不简单。尤其是新手小白，最怕的就是——手一抖，盐多了！那种尝一口咸得发苦、扔了又心疼、加水又怕毁掉整道菜的绝望，我太懂了。作为一个曾经把一锅红烧肉做得像咸菜的人，我可太有发言权了。但你发现没有，真正会做饭的人，从不害怕“翻车”，因为他们心里都藏着几招“救场方法”。今天我就把这些压箱底的经验掏出来，保证你看完就能用，下次再手抖，不仅不慌，还能让整道菜起死回生，甚至比原来还好吃。信我，厨房大神都是从“盐罐子翻了”开始练出来的。

第一招：加料稀释法，最简单也最管用

盐放多了，最直接的思路是什么？对，稀释。但这里有个关键——千万别直接加水！除非你做的是汤。炒菜直接加水，口感立马变“水垮垮”，香味全跑了。

那怎么做？加“不调味的配角”。比如土豆块、豆腐、白萝卜、粉丝、米饭这些本身味道很淡、又特别能“吸味”的食材。你炒咸了，马上切一个土豆进去一起翻炒，土豆会把多余的咸味吸走大半，等土豆熟了，不仅菜的咸度降下来了，你还多了一道配菜，一举两得。

我记得有次做麻婆豆腐手抖放了两勺盐，急中生智扔了一把泡好的粉丝进去，结果粉丝吸足了汤汁，比豆腐还好吃。家里那位还以为我故意研发的新菜。

如果你做的是炖菜或者汤，那就更简单了：直接加一个去皮切块的土豆或者整个番茄，煮个五到八分钟捞出来，咸味就带走了大半。原理很简单——土豆里的淀粉是天然的“吸盐器”。

第二招：加酸加甜，味道对冲有奇效

这个原理你可能听说过，就是味觉的“相生相克”。咸味太重的时候，加酸或者加甜，能让舌头“分心”，咸味就没那么突出了。

具体怎么操作？如果是炒菜，挤半个柠檬汁或者加一勺白醋、香醋都可以。注意别加多了，一点一点试。如果是红烧类的菜，加半勺白糖或者一勺蜂蜜，甜味会中和咸味，还能让菜品更鲜美。糖醋排骨要是咸了？多加一勺糖和一勺醋，直接变成“重口味糖醋版”，反而更有层次感。

我亲测最绝的一次是做个咸水鸭，盐放多了差点报废。临出锅前加了两勺米醋和一小块冰糖，结果成了酸甜口的凉拌鸭丝，朋友们抢着吃。

这个方法的精髓在于“借力打力”，用酸和甜的愉悦感去压制咸的刺激感，高级餐厅的后厨也经常这么干。

第三招：勾芡+蛋清，拯救肉类和海鲜

如果你做的是炒肉丝、炒虾仁、鱼片这类比较“娇贵”的菜，盐放多了千万别乱加土豆什么的，会破坏口感。这时候最佳方案是——勾薄芡加蛋清。

步骤很简单：一小碗水加一勺玉米淀粉搅匀，再打入一个蛋清打散。沿着锅边慢慢倒进去，边倒边快速翻炒。淀粉和蛋清会形成一层保护膜，把咸味“封”在食材表面而不是渗透进去，同时增加了嫩滑的口感。这招是从一个粤菜师傅那儿学来的，他原话是：“盐多了？勾个芡，谁吃不出来。”

而且这个方法特别适合做滑蛋虾仁、鱼香肉丝这类菜，不但能救咸，还能让卖相更好看，油亮亮的。

第四招：改变烹饪方式，化整为零

有些菜你发现已经咸到救不回来了，别硬救，换个思路——把它变成另一道菜的“原料”。

比如咸了的炒青菜，别扔，第二天切碎做个菜肉大馄饨的馅，或者拌进粥里煮成菜粥。咸了的红烧肉，切碎和米饭一起炒，加个鸡蛋葱花，就是绝版“咸肉炒饭”，比专门做的还香。咸了的汤，别加水稀释，直接下挂面、煮米粉，就当是高汤底了。

我有次把一锅咸了的卤味全部撕成丝，拌上黄瓜丝、粉丝、芝麻酱，做成了凉拌鸡丝，吃完还追着问我怎么做的。你看，翻车不可怕，可怕的是不会转弯。

第一，分次放盐。别一次全倒进去，先放一半，尝一下，不够再加。第二，用生抽、蚝油、豆瓣酱这类本身带咸味的调料时，记得减盐量。很多人放了酱油又放盐，不咸才怪。第三，出锅前再放盐。盐在高温下煮久了，咸味会变得更“冲”，最后放盐不但更健康，咸度也更好把控。

还有一个懒人神器——买个控盐勺。一小勺大概两克，什么菜放几勺心里有数，尤其适合新手。
