8道家常宴席菜｜简易实操做法，每道仅5步，做法接地气又好懂

一桌宴席，最容易让人伸筷子的，往往不是最贵的那道，而是看着精致、端上来就有面子的那几样。可很多人一回家就犯怵，觉得宴席菜都是大厨才会的活儿，刀工、火候、摆盘、调味，样样都得拿捏住。其实真不是那么玄乎，很多菜拆开看，就是几样家常食材，做法也就那四步五步，咱山东老爷们儿只要肯下手，家里照样能整得有模有样。

这份菜谱的路数很清楚，分成三类最实用：一类是能撑场面的硬菜，比如甲鱼焖烧、酱牛腱子；一类是下饭快手菜，比如外婆菜炒鸡丁、青椒蚕豆；还有一类是看着就喜庆的造型凉菜和点缀菜，比如百合莲花、土豆牡丹、捞汁大虾。它的核心不是炫技，而是把宴席菜的复杂动作压缩成家庭厨房也能操作的流程，讲究一个好看、好吃、好上桌。

先说最抓眼的，那道椒盐面包糠大虾。大虾剪须、开背、去虾线，吸干水分后下锅炸，炸到外壳酥脆捞出。另起锅把蒜末、干辣椒炒香，再下入面包糠炒到金黄，最后把虾倒进去，撒盐和少许椒盐翻匀，出锅撒葱花。这种做法，和很多餐馆里的避风塘虾、脆皮虾是一个思路，靠的就是外壳酥香、内里鲜嫩。面包糠在西餐后厨本来就是常用的裹炸材料，能把油香和脆感放大，家里做这道菜，孩子都容易抢着吃。

这道菜看着热闹，其实关键就两件事，一是虾要擦干，不然一下油锅容易溅；二是面包糠要先炒香，不是直接往虾上一倒就完事。很多人做这类菜失败，不是味儿不够，是口感没出来。饭店那种“哗啦一口，外脆里弹”的劲儿，靠的就是这点细致活。山东人讲究实在，这种菜就很对路，材料不花哨，端上桌却很有排面。

再看外婆菜炒鸡丁，这个菜就是下饭界的急先锋。鸡脯肉切丁，少许盐和料酒腌五分钟，热锅滑油炒到变色先盛出；外婆菜下锅炒干水汽，再放青红辣椒和葱段，最后把鸡丁倒回去，加点生抽大火快炒。外婆菜本身是湖南一带很常见的腌制风味菜，带着酸香、咸香和发酵后的复合味，和鸡丁一搭，立马就有了层次。

这道菜的厉害之处在于，肉不柴，菜不寡。鸡脯肉最怕炒老，先滑油断生，后面再回锅，就能保持嫩口。外婆菜自带咸鲜，调味不用重，省得一桌菜里口味打架。很多家宴桌上总有一道这样的小炒，既不像大鱼大肉那么压人，又能把米饭带得呼呼见底。尤其家里有孩子，辣椒少放一点，吃起来就更稳当。

甲鱼烧法就更像宴席的压轴功夫菜了。甲鱼处理后剁块，冷水下锅焯水去腥，葱姜蒜爆香后下锅大火煸炒，再加生抽、老抽、料酒和开水，小火焖40到50分钟，最后收汁时放青椒和盐，烧到断生就行。甲鱼在传统宴席里一直有位置，民间常把它和补养、滋味厚联系在一起，尤其是冬天，端出来一锅热气腾腾的甲鱼，桌上立刻就稳了。

这菜讲究的是火候和耐心。甲鱼肉质紧，先焯水去浮沫，再煸炒收紧表皮，这一步做对了，腥味能少一大截。后面焖40到50分钟，是为了让胶质慢慢出来，汤汁也更厚。青椒最后下，既提色又提味，不会被炖得发黄发烂。饭店里很多看似厉害的大锅菜，其实都靠长时间小火把味道熬出来，真不是啥神秘手法。

捞汁大虾就更像夏天宴席上的清爽担当。大虾冷水下锅，放姜片料酒煮熟后捞出过冰水，剥壳摆盘，留虾头更好看；碗里倒成品捞汁，加小米辣调口，直接浇上去，浸泡10分钟就能吃。这个做法有点像现在很多餐馆爱做的凉拌海鲜，重点是一个鲜，一个爽。冰水一过，虾肉会更紧实，口感也更弹，咬下去不松散。

捞汁这东西，近些年在家常餐桌里特别火，原因很简单，省事。买现成捞汁，基本就省掉了调味的大半麻烦。再加一点小米辣，鲜里带点劲儿，特别适合夏天或者宴席前菜。过去老家摆席，凉菜讲究的是解腻，现在换成捞汁大虾，本质还是那个理儿，先把人胃口吊起来。

酱牛腱子是另一种路数，属于越嚼越香的硬菜。牛腱子先焯水，冲净血沫，再和八角、桂皮、干辣椒、葱姜一起下锅，加盐、生抽、老抽，大火烧开转小火酱煮90分钟，关火后泡在卤汤里自然放凉，吃时切薄片，配腌蒜苔。这个做法和北方很多卤牛肉、酱牛肉的做法很接近，核心就是慢。

牛腱子有筋有肉，想要切片不散、口感不柴，就得靠长时间卤煮和浸泡。很多人图快，煮半小时就捞出来，结果切开一看，不是硬就是柴。真正好吃的牛腱子，冷却后再切，纹理会更漂亮，入口有筋道又不塞牙。配腌蒜苔这一口，也很有山东饭桌的味儿，咸鲜顶口，越嚼越来劲，配酒配饭都合适。

造型菜里，铁棍山药鲜百合这道，真是把宴席桌面的“面子工程”做到了位。山药蒸熟压成泥，加糖拌匀，堆成塔状底座；百合一片片掰下洗净，层层插上去，摆成莲花；盘底淋绿色调味汁，再撒一点椒盐点缀。铁棍山药是河南、山东很多家庭都常买的食材，口感细、淀粉足，蒸熟后很好塑形。鲜百合则带一点清甜和脆感，放在宴席里很提气。

土豆牡丹也是一个很会“哄场面”的菜。土豆蒸熟压成泥，分成两份，调成黄、粉两种颜色，用模具或者手工压成牡丹造型，底下铺泡发焯水后的干贝丝，再把两朵牡丹摆上去，旁边点缀青菜。土豆是家里最常见的东西，干贝丝又自带一点海味，这么一搭，平常的食材立马有了宴席气。

土豆泥做造型，靠的是细腻和含水量控制。太干了容易裂，太湿了立不住。干贝丝铺底，不只是为了好看，也能给整盘菜增加一点鲜味。很多饭店冷菜拼盘、花式盘头，都喜欢用这种方式，目的很明确，就是让第一眼先留下印象。山东人请客吃饭，有时候不是比谁家山珍海味多，而是比谁家这桌菜看着敞亮、吃着舒坦。

最后这道青椒炒蚕豆，属于再普通不过、却特别容易被忽略的好菜。蚕豆剥壳焯2分钟，热锅放油，蒜粒爆香，下青椒翻炒，再倒入蚕豆，加盐和少许生抽，大火快炒就行。新鲜蚕豆是春夏时节很鲜亮的食材，嫩的时候口感粉糯，老一点就带点沙沙的绵感，配青椒和蒜粒，特别下饭。

蚕豆这种菜，北方人吃得不算少，南方人更常拿来做时令小炒。它最怕的不是不会做，而是焯太久、炒太狠，最后把嫩劲儿炒没了。2分钟焯水刚刚好，既去掉一点豆腥味，又能保持口感。大火快炒是关键，蒜香一出来，整道菜就有了家常饭桌的烟火气。

这一桌菜看下来，路数其实特别明白。虾要脆，鸡要嫩，甲鱼要烂而不散，牛腱子要酱得透，山药和土豆要能立得住，蚕豆要保持清爽。宴席菜不一定非得繁复，很多时候就是把食材的脾气摸准了，火候跟上了，桌面自然就体面。家里请客，别老想着非得去饭店，后厨一通忙活，照样能把桌子撑起来，吃的人也踏实。
