入中伏后，再贵也要吃，正大量上市，清热健脾，润肠通便，别不懂

一到中伏，山东这边的天就像盖了个大蒸笼，闷、热、潮，走两步一身汗，坐着不动也黏得慌。这个时候，很多人吃饭都犯难，油腻的不想碰，太凉的又怕肚子受不了，连排便都跟着不痛快。秋葵这时候就挺合适，便宜、当季、做法也不难，关键是清爽，家里人一圈都能吃。

说白了，夏天养生真不用老盯着名贵食材。秋葵这东西，口感滑，带点清甜，焯一下、炒一下、蒸一下，都能端上桌。它里面有可溶性膳食纤维，吃起来有点黏液感，这个黏液不是啥怪东西，很多资料都提到，正是这类成分让它更适合夏天清润饮食。再加上秋葵热量不高，搭配鸡肉、牛肉、豆腐、山药这些家常食材，老人孩子都能接得住。

这篇里最值得琢磨的，不是秋葵有多金贵，而是它正好踩在中伏饮食的点上。天热，人容易困，胃口差，肠道也容易发懒，饭菜一重口就更难受。秋葵做凉拌、清蒸、煮汤、小炒，路数不一样，吃法却都顺着一个理儿走，清淡、补水、不过火。山东人讲究实在，饭桌上能让一家老小都吃得舒服，这才叫真本事。

先说秋葵花生凉拌小菜，这道菜一上桌，光是颜色就挺提神。秋葵焯完以后翠绿翠绿的，切开还带着一点滑润，花生米一撒，脆香脆香。做法也直来直去，秋葵洗净去老根，水开后加一点盐和油，焯两分钟，捞出来过凉白开，再切段。蒜末里加生抽、香醋、香油一拌，淋上去就成。夏天没胃口的时候，这一盘比大鱼大肉还管用。

这里有个小细节，很多人焯秋葵不讲究，直接一扔就完事，结果颜色发黄，口感也软塌塌。加盐和油这一步不能省，能让颜色更稳当，卖相也精神。过凉水也别偷懒，秋葵那股生青味儿，靠这一步能去掉不少。花生米最好用现炒的，真空包装那种不是不行，就是少点锅气。饭桌上吃的就是这口香气，老爷子老太太都爱多夹两筷子。

再看秋葵山药蒸鸡块，这道菜特别适合家里有老人孩子的。鸡腿块先拿姜片、生抽、少许盐腌一会儿，山药切块泡水，秋葵最后再放。鸡肉垫底，山药铺中间，先蒸20分钟，最后把秋葵放上去再蒸5分钟。出锅以后鸡肉有肉香，山药粉糯，秋葵还是滑滑的，汤汁也不重，吃着不燥。

这道菜在夏天有个好处，就是不用多放油。鸡腿肉本身就带点香，蒸出来比煎炒更适合闷热天气。山药这东西，老百姓早就吃明白了，脾胃虚的时候很多人会拿它做家常菜。中医里常说山药平和，秋葵也属于清润型，放一块儿，口感上还真挺搭。家里那俩小子要是下午在外头疯跑回来，闻到这锅蒸菜味儿，基本就得先扒拉一碗米饭。

山药削皮的时候，最好戴个手套，不然手上发痒，抓耳挠腮也没用。切完泡水，省得发黑。秋葵放得太早容易蒸过头，发黏发软，口感就没了。这个做法看着朴素，实际上挺会过日子，肉菜有了，素菜也有了，汤汁还能拌饭，山东人就爱这一口实在劲儿。

第三道是秋葵丝瓜豆腐汤，夏天晚上喝特别合适。中伏这阵子，白天在外头被太阳烤着，晚上回家最想吃点轻一点的。锅里放一点底油，葱花一爆，添水烧开，先下豆腐和丝瓜，煮三分钟，再放秋葵两分钟，少许盐调味，出锅。汤清清亮亮，丝瓜有点甜，豆腐嫩，秋葵滑，喝下去胃里都跟着松快不少。

丝瓜、豆腐、秋葵这三样放一起，走的是一个路子，水分足，味道淡，不顶胃。资料里常说，夏天饮食要注意补水和少油少盐，这碗汤正好符合这个思路。尤其是晚饭，别端上来一桌重油重盐，吃完人更累。咱家孩子晚上写作业，喝点这个汤，比光啃冰镇饮料强得多。老父亲晚饭也适合来一碗，不腻口，肠胃没负担。

做丝瓜汤最怕什么，最怕煮烂了，最后成一锅糊。丝瓜皮别去太狠，留一点瓜肉，清甜味更足。豆腐要嫩，动作得轻，别拿锅铲猛搅，容易碎成渣。秋葵下锅时间短一点就行，煮久了那股滑劲儿出来过头，汤也容易发浑。家里做汤，火候拿捏住了，比啥调料都强。

最下饭的还得是秋葵牛肉小炒。牛肉切薄片，顺着纹理逆切，这一步很多人容易忽略，切反了再好的肉也容易嚼得腮帮子疼。切好后加点生抽抓匀腌十分钟，锅里姜丝爆香，牛肉下锅大火快炒，变色就先盛出来。锅里留底油，下秋葵炒两分钟，再倒回牛肉，加少许盐快速翻匀，立刻出锅。

这道菜看着简单，吃起来却很有劲儿。牛肉香，秋葵脆，荤素搭在一起，下饭是真能下饭。夏天很多人一听牛肉就担心上火，其实做法对了，少油快炒，不胡乱加辣，照样能吃得稳稳当当。对体力消耗大的人来说，这种菜比一堆凉菜更顶饿。咱山东汉子饭量大，出门干活、在家忙活，桌上没个硬菜总觉得差点意思，这盘牛肉炒秋葵就挺对路。
