秋风渐起，建议大家八道菜可以常吃，补气血暖肠胃，营养价值高

刚过寒露风就变了性子，前几天吹在脸上还带点桂花甜香，这两天裹着早晚的凉意往领子里钻，不少朋友一入秋就手脚发凉，吃点凉的就胃里发紧，脸色也暗黄黄的没精神。老辈人说“秋补三分，来年不苦”，用不着买贵价补品，把餐桌这几样普通食材做对，常吃温温润润补气血还护肠胃，全家老小都适合。

一、油焖茭白

食材

嫩茭白、小葱、生抽、老抽、蚝油、白糖、少许清水

详细步骤

1、茭白剥掉老皮、削净老根，洗净切均匀滚刀块；小葱切段备用。

2、锅中多放一点油（猪油更香），下入茭白中小火慢煎，煎至表面微微焦黄、变软。

3、调焖汁：1勺生抽+半勺老抽+1勺蚝油+少许白糖+2勺清水，搅拌均匀。

4、料汁淋入锅中，翻拌均匀，盖锅盖小火焖3–4分钟入味。

5、开盖大火收浓汤汁，撒葱段翻炒10秒，即可出锅。

二、紫苏炒花甲

食材

花甲五百克，紫苏一小把，小米辣两个，生姜一小块，大蒜三瓣，生抽两勺，蚝油一勺，料酒两勺，少许白糖，食用油适量。

做法

1.把花甲放入盐水当中静置两小时吐净泥沙，反复搓洗外壳。

2.紫苏摘去老梗，叶片洗净切段，生姜大蒜切碎，小米辣切圈。

3.锅中烧开水，下入花甲，煮至外壳微微张开立刻捞出，把没有开口的挑出来丢弃。

4.起锅倒油，下入姜蒜小米辣爆香，倒入花甲大火翻炒片刻，淋入料酒去除腥味，加入生抽、蚝油、少许白糖调味，翻炒均匀，最后放入紫苏，大火快速翻拌十几秒就关火出锅。

三、虾皮烧冬瓜

所需食材：

黑皮冬瓜500克、淡干虾皮30克、小葱2根、生姜3片、生抽1勺、老抽半勺、蚝油1勺、白胡椒粉少许、料酒1勺、水淀粉适量、香油几滴。

步骤：

1. 冬瓜削去硬皮，挖净瓜瓤和软籽，切成4厘米见方、2厘米厚的块状，用清水冲洗掉表面黏液。
2. 虾皮用清水漂洗两遍，挤干水分，放入无油锅中用小火慢慢焙炒至微黄酥香，盛出备用。
3. 炒锅倒油，下姜片和葱白段爆香，再倒入冬瓜块，中火煎至两面边缘呈半透明状，约3分钟。
4. 烹入料酒去腥，加入生抽、老抽、蚝油和一碗热水（水量至冬瓜一半高度），大火烧开。
5. 转中小火盖上锅盖焖煮8分钟，期间翻动一次，至冬瓜能用筷子轻松穿透但外形仍保持完整。
6. 将焙香的虾皮撒入锅中，同时调入白胡椒粉，轻轻推匀，再煮2分钟让虾皮鲜味渗入冬瓜。
7. 开大火收汁，淋入水淀粉勾薄芡，晃动锅子使芡汁均匀，点入香油，撒上葱花即可出锅。

四、香芹炒鲜牛肉丝

食材：牛里脊200克、香芹200克、姜丝、蒜末、生抽、料酒、淀粉、盐、食用油

做法：

1、牛肉切丝，加生抽、料酒、淀粉抓匀腌制10分钟。

2、香芹切段，焯水30秒捞出过凉。

3、热锅凉油，下牛肉丝滑炒至变色盛出。

4、锅中留底油，爆香姜丝、蒜末，倒入香芹翻炒1分钟。

5、倒入牛肉丝，加盐调味，快速翻炒均匀即可。

五、芹菜拌花生米

食材：芹菜、花生米、八角、花椒、香叶、食盐、白糖、生抽、香醋、香油

做法

1️、花生米提前用清水浸泡2小时，泡好后连同足量清水下锅，加1勺盐、八角、花椒和香叶，大火煮沸后转小火慢煮30分钟，煮好后捞出彻底晾凉备用。芹菜洗净切成小丁，锅中水烧开，放入芹菜丁焯水2分钟，捞出过一遍凉水，沥干多余水分。

2️、把晾凉的花生米和沥干的芹菜丁一同装入大碗中，依次加入少许盐、白糖、2勺生抽、1勺香醋和少许香油，充分搅拌均匀，静置腌制几分钟入味，口感会更绝。

六、海鲜菇牛肉滑蛋

食材：

海鲜菇，牛肉，鸡蛋，彩椒，蒜

做法：

1、鸡蛋炒熟盛出备用，牛肉炒至变色盛出

2、蒜爆香，加入海鲜菇炒至断生倒入彩椒炒匀

3、倒回鸡蛋和牛肉，加生抽，蚝油，盐，鸡精炒匀

七、南瓜蒸鸡腿肉

准备食材: 南瓜、鸡腿、香菇、姜丝。

做法步骤:

1、鸡腿去骨切小块，然后加入姜丝、胡椒粉、生粉、生抽、食盐和花生油抓拌均匀，再腌制十分钟备用。

2、用食盐搓洗干净南瓜表皮，然后切成小块铺在蒸碗底，接着把香菇清洗干净，再切成薄片。

3、切好的香菇和腌制好的鸡腿肉一起抓拌均匀，再铺在南瓜上，然后上蒸锅大火蒸煮。

4、蒸煮二十五分钟左右后，即可出锅开吃。

八、芋头焖鸡腿肉

食材准备:鸡腿、香芋头300克、生姜3片、小葱少许，调料：生抽、蚝油、少许老抽、盐、白糖、食用油

做法步骤

1. 预处理食材

鸡腿洗净剁成块；芋头去皮切成方块，泡清水防止氧化发黑；生姜切片，小葱切葱花备用。

1. 煎香鸡块

锅中放少许油，下入姜片爆香，放入鸡腿块，中小火煎至两面微微金黄。

1. 调味焖煮

加生抽2勺、蚝油1勺、少许老抽上色，一点点白糖提鲜，翻炒均匀。倒入热水没过鸡肉，大火烧开后转小火焖15分钟。

1. 加入芋头同焖

放入芋头块，继续小火焖15分钟，直到芋头粉糯、鸡肉软烂。最后开大火收浓汤汁，尝味酌情加盐。
