处暑后，少吃茄子土豆，多吃这3种“黄金菜”，不燥不疲，能安稳入秋

处暑一过，老话说得真不假，天还没一下子凉透，身上那股子燥劲儿先冒出来了。嘴唇发干、嗓子发紧、白天没精神，晚上也睡不踏实，这一套下来，人就像刚扛完一夏天的活，腿肚子都发软。

这时候还抱着茄子、土豆不撒手，顿顿炖、顿顿焖，吃着是实在，可肚里也跟压了块石头似的。秋天讲究一个润字，吃得太厚、太腻，脾胃先不答应。要说应季里头的黄金菜，真得挑那些清润、带水气、又不寒凉过头的，吃完人轻快，嗓子也舒服。

先把这个思路捋明白：处暑后的饮食，不是图大补，也不是拼猛吃，而是顺着节气把身体从夏天的耗散里拉回来。清淡一点，带点鲜，带点脆，少油少盐，才更贴合这个时节。老百姓常说，秋天吃得对，冬天少受罪，这话一点不虚。

秋葵菌菇烩就很对路。秋葵这东西，很多人一开始不习惯，黏滑黏滑的，像个讲究脾气的小伙子。可它偏偏有膳食纤维，水分也足，焯个一分钟，保住口感，和香菇、胡萝卜一搭，锅里一翻，清清爽爽。香菇带鲜味，不用再放一堆调料，蒜片一爆，香气就能把人勾到厨房门口。

这道菜的好处，落在实处就是润燥。秋燥上来，很多人嗓子不利索，老想喝水，吃点这样的菜，口里没那么发火。秋葵里的黏液多糖和可溶性膳食纤维，确实对肠胃蠕动有帮助，夏天那股子虚火和疲乏感，也能缓一缓。不过脾胃虚寒、动不动拉肚子的，别一上来猛吃，凡事都得有个分寸，咱山东人讲究的就是这个理。

再说芥蓝干贝鲜汤，这一碗就像秋天的白开水里多了点底气。芥蓝本身带着一点微苦和清香，很多北方家庭以前不算常吃，可近些年越来越常见。它的维生素C、钙、钾都不低，搭配干贝和嫩豆腐，鲜味一下子就立起来了。干贝提前泡软，用姜片煮出底汤，鲜味慢慢渗进去，最后芥蓝一落锅，脆生生的口感和汤气正好合上。

菱角马蹄小炒更有秋天味儿。菱角这东西，小时候在山东一些地方也见过，秋天河塘边、集市上，一袋一袋地卖，剥开壳，白白嫩嫩，带着点粉糯。马蹄也叫荸荠，清甜带汁，和西芹一起炒，脆、嫩、鲜三样都占了。锅里先把菱角和马蹄炒出一点香气，再把焯过水的西芹倒进去，咔嚓一声，整个厨房都活了。

这道菜妙在口感。秋燥来时，很多人嘴里发干，胃口也不太开，吃点带脆感的菜，人会觉得有生气。菱角的淀粉感和马蹄的清甜，正好把秋天那点干巴巴的劲儿给冲开。西芹里的粗纤维也不含糊，平时吃得油多、坐得久的人，吃点这个，肠道也舒坦些。

但是怕冷、容易腹泻的人，别一盘子全端上去。马蹄性偏凉，菱角也不算特别温和，吃多了肚子容易闹意见。家里有老人、小孩，做的时候就得看体质。俺家里老人一到换季，最怕一冷一热来回折腾，所以我做饭时，一定会把凉性食材配上姜、热汤，或者少量多次吃，稳当。

说到底，处暑后的饭桌，拼的不是花样，是顺势。夏天人出汗多，津液耗得厉害，到了秋天，就容易出现口干、咽干、皮肤发紧、睡不沉这些情况。中医里讲秋应肺，肺喜润不喜燥，所以吃饭别一味追求重口。像秋葵、芥蓝、菱角、马蹄，这些应季菜，一个个看着朴素，实际上都很会过日子。

现在很多人一到秋天，就喜欢猛喝羊汤、猛吃烧肉，觉得贴秋膘才是正经事。可真要是脾胃还没缓过来，贴得太猛，肚子先抗议。尤其刚经历一个夏天，冰饮、夜宵、烧烤没少碰的人，身体里头本来就有点乱，这时候更适合先清一清、润一润，再慢慢往厚实里走。老祖宗留下的节气吃法，不是摆样子，是真有生活经验。

你看这三道菜，做法都不复杂。秋葵菌菇烩，焯水、快炒，几分钟出锅；芥蓝干贝鲜汤，先煮出鲜味，再下豆腐和芥蓝；菱角马蹄小炒，讲究一个快字，保持脆劲。没啥花里胡哨的操作，家里有灶台就能做。对我们这种上有老下有小的人来说，饭菜不光得好吃，还得省心，不能一顿饭把厨房折腾成战场。

我家俩小子一到换季，嘴就挑得很，早上嫌汤太清，晚上嫌菜太素。可真给他们炒个秋葵菌菇烩，再配一碗芥蓝汤，吃得还挺像回事。小孩其实很容易接受这种清鲜口，只要做法对，别把菜炒成糊，也别油得发亮，他们吃得比大人还香。老人那边就更不用说了，牙口、胃口都讲究软和、清爽，热乎乎一碗汤下去，整个人都舒展。

处暑后这段时间，饭桌上最怕的就是乱。今天重油，明天重辣，后天又是大鱼大肉，身体根本来不及收拾。清润一点的菜，像给脾胃松了口气，也给嗓子、肠胃留了余地。秋天不是拼谁吃得猛，是看谁吃得稳，吃得舒服，吃得第二天还能精神头足。

赶上这种节气，我最喜欢干的事，就是把菜板一摆，锅一热，家里人围着吃。老人喝汤，小孩夹菜，媳妇在旁边提醒少放盐，屋里有点烟火气，外头秋风一吹，心里也踏实。日子过到这份上，不求多轰轰烈烈，能把饭做对，把人照顾好，就已经挺像样了。
