秋天就爱做这主食吃，比馒头米饭还简单，又比它俩更香，难道不香吗？

南方人爱米饭，北方人离不开馒头，可真要说一种南北都能吃、家家都认的主食，饼得算一个。尤其是把青菜揉进面里，外面酥脆，里面松软，既顶饱又解馋，家里老人孩子都愿意伸筷子。今天这口青菜千层酱香饼，不是那种花里胡哨的网红做法，就是实打实的家常味，靠的是面、菜、酱这三样东西，简单，但真香。

这道饼的核心，不在于复杂，而在于顺手。四季青菜都能往里放，马齿苋、小白菜、鸡毛菜、红薯叶、西兰花，哪样新鲜用哪样。马齿苋这种菜，北方地头上常见，嫩的时候最合适，焯一下水，草酸去掉，口感也更顺。面团用中筋面粉，普通面粉就行，30度左右温水化开酵母，再加点葱花、芝麻（参数丨图片）酱、十三香、辣椒面、花椒粉，层次一下就出来了。整套做法看着是饼，实际上是把青菜、面香、酱香搅到一块儿去了。

这种做法能火，不是没道理。现在大家做主食，最怕麻烦，揉面太久嫌累，发面太慢嫌磨叽，菜一多还怕发硬。可这个饼把几个难点都化开了。先把青菜焯水挤干，减少出水；再把酵母先溶解，发酵更稳；面团抹油防粘，省得揭膜时扯得七零八落；最后再来一次二次发酵，烙出来就会外脆内软，咬一口有层次。说白了，家常面食想好吃，靠的不是玄学，是细节。

马齿苋这菜，很多城里人真不一定熟。它在野菜里算有名气，老辈人常说这东西耐旱、生命力强，春夏一到，地里一片一片长。根据公开营养资料，马齿苋含有较多膳食纤维、维生素A、维生素C，还有一定量的钾和镁，草酸也相对明显，所以焯水这一步很关键。焯一分钟左右，既能去草味，也能让叶子更柔和，拿来拌面、包饼都合适。山东这边很多人做野菜饼，图的就是这一口接地气的鲜。

说到面粉，很多人平时买面粉都是随手一抓，其实门道不小。普通面粉一般就是中筋面粉，筋度适中，最适合做馒头、包子、饼这些家常面食。高筋面粉更适合面包，低筋面粉更适合蛋糕饼干。这个饼要的是劲道和延展性，中筋面粉正好。600克面粉配270毫升左右温水，再加3到5克酵母，和出来的面不会太硬，后面擀开也不费劲。家里有孩子的都知道，面食要是太死，咬两口就不想动筷子，软一点、香一点，饭桌立马安静。

芝麻酱这东西，北方人真是有感情。拌面、蘸菜、调凉皮、浇花卷，哪儿都能上。很多人觉得芝麻酱只是香，其实它还带着不少脂肪和蛋白质，热量不低，香气也足，所以少量用就能把味道提起来。这个饼里把芝麻酱和葱花、十三香、辣椒面、花椒粉、热油混在一起，热油一冲，香味一下就炸开了。别小看这一碗料汁，往面饼上一抹，原本普通的青菜面团，立马像换了个脾气，变得有筋道、有咸香、有回味。

做饼最讲究的，就是层次。面团擀成大圆饼后，不是整张一股脑抹酱，而是边缘留空，中间下料，再从中心切一刀，顺着卷起来，最后收成扇形或者三角形。这种卷法，实际上是让酱料在面层之间分布均匀，烙的时候一层一层地受热，吃起来就会有千层的口感。山东人对这种饼不陌生，葱油饼、千层饼、鸡蛋饼、肉饼，哪种不是靠这点层次拿下全家人。有人说主食吃多了腻，可这类层层分开的饼，吃着就是不一样，越嚼越有味。

电饼铛烙饼，看着省事，其实也有讲究。先刷油，防粘也增香，放进去之后，上面再抹一点油，撒白芝麻，盖上盖子先别急着开火，让它二次发酵七八分钟。这个动作很容易被忽略，但真挺关键。面团刚卷好有点紧，二次发酵一来，面筋会松一点，烙出来就更柔和。家里做饭的都知道，饼这东西，火候差一点，口感就差一截。火太大容易外面糊了里面还没熟，火太小又容易发干。中火或者馅饼模式，底部金黄再翻面，最后按压能反弹，这时候才算稳当。http://quanjing-vr.com/blog/news.php/16638760.shtml
