银耳别只挑“白富美”！教你看准这几点，炖出满满胶质才叫绝

很多朋友挑银耳有个固执的“审美标准”——越白越好，觉得白净才高级、才新鲜。但我跟你们讲，这个想法可太危险了！我刚开始学煲汤那会儿也上过当，买回去的银耳怎么炖都炖不烂，汤寡淡没味，后来才知买到了“硫磺美容”过的。今天咱就好好唠唠，这银耳到底该怎么挑，那颜色里藏着啥门道。

灵魂拷问：银耳越白越好？千万别被“颜值”骗了

先说结论：大错特错！品质上乘的银耳，真不是那种惨白惨白的颜色。

你得这么想，银耳是长在树上的菌类，风吹日晒的，怎么可能天生就是一张“冷白皮”？正常的干银耳，颜色是自然的米白色或者带着点淡淡微黄的。就像我们素颜的皮肤，透着点自然的暖调，甚至有些地方会微微泛黄，那才是它本来的样子。

那市面上那些白得发亮的“漂亮”银耳是咋回事？说白了，就是“科技与狠活”。有些不法商家为了迎合大家“以白为美”的误区，会用硫磺或者双氧水去熏蒸、漂白。

这么做的目的，一是为了卖相好，二能防腐防虫。但这种“美容”过的银耳，不仅营养被破坏了，残留的二氧化硫吃进肚子里，长期下来会刺激肠胃，影响钙吸收，对身体一点好处都没有。记住，天然美才是真的美，带点微黄的银耳才是正经好东西。

挑好银耳，记住这“三字经”

选银耳别光盯着颜色看，学会下面这几招，保准你能挑到肉厚胶质多的好货。

一看：观其色，察其形

颜色上，认准米黄色或者白中带微黄。如果一朵银耳黄得特别厉害，甚至发暗，那可能是在潮湿环境里放久了受潮变质，或者陈年老货烘干再卖的，也不新鲜。

外形上，好银耳是朵大蓬松的，像朵怒放的菊花，间隙均匀。反过来，如果银耳朵小、紧实，甚至碎渣多，那质量就得打个问号了。肉质要肥厚，朵形要圆整，蒂头那里没有黑斑和杂质，这样的银耳炖出来口感才软糯，胶质才足。

二闻：嗅其味，辨好坏

这步特别关键。把银耳拿起来凑近鼻子闻一闻。好银耳是淡淡的天然菌香，没啥特别刺鼻的味道。

如果闻着有股酸酸的、臭臭的味道，那是不新鲜了，蛋白质变质了。要是闻到一股呛鼻子的化学味，想都不用想，肯定是被硫磺狠狠“伺候”过，再便宜也别买。

三摸：触其感，断干湿

用手抓一把银耳，感受一下。优质干银耳是干脆的，摸着有点扎手，不容易碎。这说明干度够，好储存。

如果一捏就碎成渣，说明存放时间太久，营养流失严重。反过来，如果摸着有点发软、发粘，那就是受潮了，这种银耳买回去很快就变质，千万别买。
