我家大蒜从没坏过！这1招，蒜香不断档，放1年还嘎嘣脆

这大蒜啊，什么都好，就是太“娇气”。买回来一堆，挂在墙上也好，扔在角落里也罢，用不了俩月，不是干瘪得像个没牙的老太太，就是从芯里发芽窜出根绿苗来，再要么就是从底部开始霉变、发黑、软塌塌的。扔了吧，心疼钱；不扔吧，那股子哈喇味儿和烂蒜臭，毁了一锅好菜。我身边的朋友总跟我抱怨，说现在蒜贵，买多了又存不住，问我这天天做饭的人到底有啥秘诀。

咱们先得把道理捋顺了。大蒜这玩意儿，它是个有生命的个体。它怕什么？怕潮、怕热、怕密闭。您把它捂在塑料袋里，那水汽出不去，它就是泡在“桑拿房”里，不烂等啥？您把它搁在暖气片旁边，温度一高，它以为春天来了，拼命发芽，把自身的营养和水分都耗尽了，能不干瘪吗？

所以，市面上那些什么大蒜收纳罐、什么悬挂网兜，我都试过。不能说完全没用，但效果都差点意思。真正能让大蒜“休眠”的，是我老妈传给我的土法子，核心就四个字——“低温断氧”。

您别被这四个字唬住，做起来简单极了。

第一步，挑蒜。

存蒜这件事，从根上就决定了成败。您去菜市场，别贪便宜买那种已经剥得溜光水滑的净蒜。一定要买带着老皮、带着根须、甚至带点泥土的“原生态”大蒜。买的时候用手捏一捏，要那种硬得捏不动的，但凡有一点发软、或者能摁出坑的，那都是内里已经腐坏或者空心的“软脚虾”，买回家撑不过一礼拜。咱要存，就存那刚从地里挖出来不久、晒得半干的“铁疙瘩”。

第二步，处理。

把买回来的好蒜，放在家里通风阴凉的地方，平铺开来，让它“喘口气”。千万别洗！一沾生水，那霉斑就找上门了。就这么晾个两三天，让表皮那层薄薄的水汽自然风干。这时候的蒜，外皮干爽酥脆，像穿着一层铠甲。

第三步，也是决胜的一步——装罐。

准备一个家里那种带密封圈的玻璃罐子，或者是那种能拧紧盖子的陶瓷坛子。切记，罐子内部一定要无水无油，拿厨房纸巾擦得锃亮。然后，把晾好的大蒜，一头一头码进去。重点来了：在罐子底部，事先撒上一层薄薄的食用盐。 不用太多，就咱们平时炒一个菜的量，铺匀了就成。这盐是天然的“干燥剂”，能吸掉罐子里残余的潮气，还能起到一点杀菌的作用。

第四步，密封与放置。

把盖子严丝合缝地拧紧，确保一点空气都进不去。然后，把它放到家里最阴凉、最避光的地方。我家是放在北阳台的柜子里，那里常年温度在十几度，不冷不热。您记住了，温度最好控制在15度以下，家里有地窖的放地窖，没地窖的就放在背阴的储物柜。

这背后的道理很简单：密封的罐子隔绝了氧气，大蒜没了呼吸，自然就“睡”过去了。盐吸走了水汽，环境里没有湿度，霉菌就没有温床。而低温抑制了芽点的活性，它想发芽？没门儿！

您就这么放着，三个月后您打开看看，那蒜跟刚买回来的时候几乎一模一样。五个月后，您再打开，蒜皮还是紫红紫红的，蒜肉依然洁白紧实。

但我最想跟您分享的是这个法子带来的“时间红利”。因为我存得多，每次都是随吃随取。您知道吗？这样密封存放大半年的蒜，它的辛辣味会变得稍微柔和那么一点点，但蒜香味却更醇厚了。用它来拍黄瓜，那股子蒜香不是那种冲鼻子的辣，而是一种带着回甘的浓郁香气。尤其是在冬天，外面的蒜早就发芽干瘪了，我从罐子里掏出一头，切开来，断面还是水润润的，刀面上沾满了蒜汁。切几片放进羊肉汤里，那香味，能把隔壁小孩馋哭。

至于怎么叫“嘎嘣脆”？您试试这个法子存出来的蒜，剥开一瓣，用刀背一拍，“啪”地一声，干脆利落，不像那些失了水分的蒜，拍下去是“噗”的一声闷响，软绵绵的。切蒜末的时候，刀刃能清晰地感受到蒜肉的脆韧，切完案板上都是一层薄薄的、亮晶晶的蒜汁膜。炸蒜油的时候，这蒜末下锅，瞬间就能飘起金黄色的蒜酥，浮在油面上，捞出来撒一点盐，空口吃都是酥脆喷香的，没有一点“回潮”的皮软感。
