入秋吃到现在才明白，10月要多吃这4样肉，比猪肉养人还不油腻

入秋之后，天气渐凉，空气里少了盛夏的燥热，人的胃口也慢慢好了起来。前阵子还总惦记着红烧肉、糖醋排骨，觉得贴秋膘就得靠猪肉，可吃来吃去，总觉得身上发沉，肠胃也有些腻。直到入秋吃到现在才明白，10月进补不必只盯着猪肉，有些肉比猪肉更养人，还不油腻。它们温润滋补，既能帮身体储备过冬的能量，又不会给脾胃添负担。趁着十月正当时，不妨换换口味，把这几样肉端上餐桌，让一家老小吃得舒服又健康。

第一道：山药炖鸭肉

所需食材：鸭腿两只、铁棍山药一根、生姜五片、大葱一段、枸杞一小把、料酒两勺、食盐适量、白胡椒粉少许、清水适量。

步骤：

1. 鸭腿洗净后剁成大小均匀的块，放入清水中浸泡二十分钟，中途换两次水，尽量泡出血水，减少腥味。

2. 铁棍山药削去外皮，切成滚刀块，放入淡盐水中浸泡，防止氧化变黑；生姜切片，大葱切段备用。

3. 锅中加入足量冷水，放入鸭块，再加入一勺料酒和两片生姜，大火煮开后撇去浮沫，继续煮两分钟捞出。

4. 将焯好的鸭块用温水冲洗干净，沥干水分，注意不要用冷水冲，以免肉质突然收缩变柴。

5. 取砂锅或炖锅，放入鸭块、姜片、葱段，加入没过食材两指的热水，再淋入一勺料酒，大火烧开。

6. 水开后转小火慢炖四十分钟，待鸭肉七成熟时，放入山药块，继续炖煮二十分钟至山药软糯。

7. 最后加入枸杞，调入适量食盐和少许白胡椒粉，再煮三分钟关火，盛出前挑去葱姜即可。

1. 鸭肉本身油脂较多，焯水后可以再用温水冲洗一遍，能有效去除表面浮油，汤汁更清爽。

2. 山药最好选用铁棍山药，口感粉糯，久炖不散，去皮时建议戴手套，避免黏液引起手痒。

3. 炖鸭肉时水量一次加足，中途尽量不加水，若必须加，请加热水，否则汤味会变淡。

第二道：清蒸鲈鱼

所需食材：鲜活鲈鱼一条、生姜一块、小葱三根、红椒半个、蒸鱼豉油三勺、食用油两勺、料酒一勺、食盐少许。

步骤：

1. 鲈鱼去鳞、去鳃、去内脏，仔细刮净腹内黑膜，洗净后沥干水分，在鱼身两面各划三刀便于入味。

2. 生姜一半切片，一半切细丝；小葱两根切段，一根切细丝；红椒去籽切细丝，全部放入清水中浸泡备用。

3. 将鲈鱼放入盘中，鱼身内外抹上少许食盐和一勺料酒，鱼腹和刀口处塞入姜片和葱段，腌制十分钟。

4. 蒸锅中加入足量清水，大火烧开，水开后放入鲈鱼，盖上锅盖，保持大火蒸八分钟。

5. 蒸好后关火，再虚蒸两分钟，取出盘子，倒掉盘中蒸出的腥水，拣去鱼身上的姜片和葱段。

6. 将泡好的姜丝、葱丝、红椒丝捞出沥水，均匀铺在鱼身上，淋上三勺蒸鱼豉油。

7. 另起锅烧热两勺食用油，油冒微烟时迅速浇在葱姜丝上，激出香味，即可上桌。

第三道：白萝卜炖羊肉

所需食材：羊腿肉五百克、白萝卜一根、生姜六片、大葱一段、花椒十粒、料酒两勺、食盐适量、香菜少许、清水足量。

步骤：

1. 羊腿肉切成三厘米见方的块，放入清水中浸泡半小时，中途换水两到三次，泡去血水。

2. 白萝卜洗净去皮，切成与羊肉大小相近的滚刀块；生姜切片，大葱切段，香菜切碎备用。

3. 锅中加冷水，放入羊肉块，加入一勺料酒和三片生姜，大火煮开，撇净浮沫后煮三分钟捞出。

4. 将焯好的羊肉用温水冲洗干净，沥干水分，注意不要残留浮沫，否则炖出的汤会浑浊。

5. 砂锅中放入羊肉、姜片、葱段和花椒，加入足量热水，再淋一勺料酒，大火烧开后转小火炖一小时。

6. 一小时后放入白萝卜块，继续小火炖三十分钟，直到萝卜透明软烂、羊肉用筷子能轻松扎透。

7. 出锅前五分钟加入适量食盐调味，盛入碗中后撒上香菜碎，趁热食用味道最佳。

2. 白萝卜不要过早放入，否则会炖得过于软烂，失去口感，等羊肉快熟时再下锅最合适。

第四道：香菇滑鸡

所需食材：鸡腿三个、干香菇八朵、生姜四片、大蒜三瓣、小葱两根、生抽两勺、蚝油一勺、料酒一勺、淀粉一勺、食盐少许、食用油适量。

步骤：

1. 干香菇提前用温水泡发，泡软后挤干水分，切成厚片，泡香菇的水过滤后留一碗备用。

2. 鸡腿去骨，将鸡肉切成两厘米左右的块，加入生抽、蚝油、料酒、淀粉和少许食盐抓匀。

3. 在腌好的鸡块中加入一勺食用油，再次抓匀，封住水分，腌制十五分钟，让鸡肉更嫩滑。

4. 生姜切丝，大蒜切片，小葱切段；锅中倒油烧热，放入姜丝和蒜片爆香，再下入香菇片翻炒。

5. 香菇炒出香味后，倒入腌好的鸡块，转大火快速翻炒，直到鸡肉表面变色、微微收紧。

6. 倒入留用的香菇水，水量大约没过食材一半，大火烧开后转中小火，盖上锅盖焖八分钟。
