秋天睡够还累没精神，试试这4道平价高钾菜，吃完元气满满

入秋之后，不少人都有这样的体会：明明睡眠时间够了，可白天还是哈欠连天，手脚发沉，做什么都提不起劲。这往往不是懒，而是身体在提醒你——该补钾了。夏天出汗多，钾元素随汗液大量流失，入秋后若没有及时补充，就容易出现疲惫、乏力、精神不振的情况。与其靠咖啡和浓茶硬撑，不如从日常饮食入手。钾被称为“生命元素”，它能维持神经和肌肉的正常运作，帮助身体恢复活力。今天分享4道平价又高钾的家常菜，食材普通，做法简单，吃完让你元气满满地度过秋天。

【第一道菜：土豆烧牛肉】

所需食材：土豆两个、牛腩肉四百克、胡萝卜一根、生姜三片、大葱一段、八角两颗、桂皮一小块、生抽两勺、老抽一勺、料酒一勺、冰糖几粒、食盐适量、食用油适量。

步骤：

1. 牛腩肉切成两厘米见方的块，放入清水中浸泡二十分钟，中途换两次水，泡出血水后捞出沥干。

2. 土豆和胡萝卜分别去皮，切成与牛肉大小相近的滚刀块，大葱切段，生姜切片备用。

3. 锅中加冷水，放入牛肉块，加一勺料酒和两片生姜，大火煮开后撇去浮沫，再煮两分钟捞出，用温水冲洗干净。

4. 炒锅烧热，倒入少许食用油，放入冰糖小火慢炒至融化并呈枣红色，倒入牛肉块快速翻炒上色。

5. 加入葱段、姜片、八角、桂皮炒出香味，淋入生抽和老抽翻炒均匀，再加入足量热水没过牛肉。

6. 大火烧开后转小火炖四十分钟，放入土豆块和胡萝卜块，继续炖二十分钟至土豆软烂。

7. 待汤汁浓稠时加入适量食盐调味，转大火收汁，翻匀后即可出锅装盘。

1. 牛肉焯水时一定要冷水下锅，这样能更好地逼出血沫，肉质不易发柴。

2. 土豆不要过早下锅，否则容易炖化，影响整道菜的卖相和口感。

3. 收汁时留少许汤汁拌饭更香，但不要收得太干，以免土豆粘锅。

【第二道菜：菠菜拌花生米】

所需食材：新鲜菠菜四百克、生花生米一百五十克、大蒜四瓣、生抽两勺、香醋一勺、香油一勺、食盐适量、白糖少许、食用油适量。

步骤：

1. 生花生米放入碗中，加清水浸泡十分钟，捞出后沥干水分备用。

2. 锅中倒入适量食用油，冷油下入花生米，小火慢慢炸至颜色微黄、发出噼啪声后捞出控油。

3. 菠菜择去老叶和根部，用清水反复冲洗干净，尤其注意叶片褶皱处容易藏泥沙。

4. 锅中烧开水，加少许食盐和几滴食用油，放入菠菜焯烫约三十秒，捞出后立即过凉水。

5. 将过凉的菠菜挤干水分，切成三厘米左右的段，放入大碗中备用。

6. 大蒜去皮拍碎，切成蒜末，放入小碗中，加入生抽、香醋、香油、食盐和白糖调成料汁。

7. 将炸好的花生米和调好的料汁一起倒入菠菜中，翻拌均匀后静置五分钟入味即可食用。

2. 菠菜焯水时间不宜过长，三十秒左右即可，过久会失去脆嫩口感。

3. 菠菜焯水后过凉水能保持翠绿颜色，挤水时不要挤得太干，留一点水分更爽口。

【第三道菜：紫菜虾皮豆腐汤】

所需食材：干紫菜十克、虾皮二十克、嫩豆腐一块、鸡蛋一个、小葱两根、生姜两片、食盐适量、白胡椒粉少许、香油几滴、清水适量。

步骤：

1. 干紫菜放入碗中，加清水浸泡五分钟，轻轻揉洗后捞出沥干，去除表面杂质。

2. 嫩豆腐切成两厘米见方的小块，放入淡盐水中浸泡五分钟，这样煮时不易碎。

3. 虾皮用清水冲洗两遍，去除多余盐分和细沙，小葱切成葱花，生姜切丝备用。

4. 鸡蛋打入碗中，用筷子充分搅散，搅至蛋液表面出现细密泡沫即可。

5. 锅中加入适量清水，放入姜丝和虾皮，大火烧开后转中火煮三分钟，煮出鲜味。

6. 放入豆腐块和紫菜，继续煮两分钟，然后转小火，将蛋液缓缓淋入锅中形成蛋花。

7. 加入适量食盐和白胡椒粉调味，撒上葱花，滴几滴香油，轻轻搅匀后关火盛出。

【第四道菜：香蕉燕麦蒸糕】

所需食材：熟香蕉两根、即食燕麦片一百五十克、鸡蛋两个、牛奶一百毫升、红枣六颗、核桃仁三十克、葡萄干二十克、泡打粉三克、食用油少许。

步骤：

1. 熟香蕉去皮放入大碗中，用叉子压成细腻的香蕉泥，尽量没有大颗粒。
