秋天，就该使劲吃这菜：一清热解毒，二祛湿，三强体格，不懂吃可惜了

秋天一到，菜市场里最招人眼的，不是大鱼大肉，反倒是茭白这玩意儿。白白嫩嫩，外面带点青壳，像刚从水里抱出来的小胖墩，拿在手里沉甸甸的，瞅着就新鲜。老辈人常说秋吃茭白赛人参，这话听着有点夸张，可真不是空口白话。茭白含水量高，口感脆甜，膳食纤维也不低，热量还不算高，秋天桌上摆它，确实顺口又不压胃。

先把话说明白，茭白不是啥神仙菜，真要说营养，它主要是清爽、顶饱、好做饭。按常见食物成分表看，茭白的蛋白质不算高，但膳食纤维和钾含量比较有看头，吃起来利口，炒菜也容易吸味。秋天人容易嘴干、胃口乱、吃肉多了发腻，茭白这口脆甜，就像给桌上添了一股清风，山东人讲究一个实在，吃着舒服比啥都强。

我家这几年秋天做茭白，基本离不开三种法子。第一种最下饭，茭白炒肉丝。第二种最省事，茭白炒鸡蛋。第三种最稳当，茭白毛豆豆腐干。别小看这三样，家里有老人、有孩子，有时候就靠这种家常菜撑场面，做得顺手，吃得也痛快。

先说茭白炒肉丝，这道菜是硬菜里的软脾气。茭白切丝，里脊切丝，先把肉用生抽、料酒、少许淀粉抓匀，最后淋点油锁住水分。这个步骤别嫌麻烦，肉丝嫩不嫩，就看这一下。锅里油热后先滑肉丝，颜色一变就捞出来，千万别在锅里硬熬，熬老了就像橡皮筋，孩子都嫌咬不动。

再把蒜末、干辣椒段下锅一爆，茭白丝倒进去大火翻。茭白这东西最怕小火焖，火一小，它就出水，脆劲儿没了，跟蔫了的黄瓜似的，不带劲。炒到边缘有点透明，来点生抽、蚝油、少许白糖提鲜，再把肉丝倒回去，几下兜匀，最后撒青蒜段。那一口下去，肉香裹着茭白的清甜，米饭一碗接一碗，真不是吹，山东汉子都得多扒两口。

这道菜还有个妙处，就是不油腻。秋天很多人一到饭点就想吃点热乎重口的，结果吃完肚子鼓得像塞了个皮球，晚上还容易口干。茭白炒肉丝有肉味，但不腻嗓子，茭白还把油香给托住了，吃完嘴里是干净的，不像有些大菜，吃完满嘴只剩油。

再说茭白炒鸡蛋。这个菜别看简单，真是家里最稳的那一口。茭白切丝不必太细，切太细一炒就没了；鸡蛋里加点盐，再滴几滴水打散，炒出来更蓬。锅里油烧热，蛋液下去快速划散，刚凝固就盛出来。这个火候要是慢了，鸡蛋就老，口感发柴，孩子咬着都没意思。

接着锅里留点油，蒜末炒香，茭白丝下锅大火翻两下，等它微微软、带点水汽，再把鸡蛋倒回去，盐和白胡椒粉一点点就够。这个菜吃起来是两种性子，鸡蛋温和，茭白清脆，凑到一起不冲不撞，特别适合早饭、晚饭，或者家里老人胃口差的时候来一盘。

网上不少营养资料都提到，茭白属于低脂食材，配鸡蛋这种优质蛋白，整体搭配比较均衡。其实老百姓做饭不爱听这些术语，真正懂的人会说一句，菜别太重，吃完身上轻快。像我家那两小子，平时在外头疯跑一下午，回家闻到茭白炒鸡蛋，筷子比谁都快。孩子能多吃两口菜，比啥都强。

第三种是茭白毛豆豆腐干，素菜三鲜，特别适合家里想吃清淡点的时候。茭白切丁，毛豆剥好，豆腐干切小方块。先把毛豆和茭白丁焯一下水，时间别太长，两分钟左右就捞出来，不然茭白就失了脆劲。豆腐干先下锅煸一煸，煸到表面发黄，香味立马就出来了。

这个菜的精髓就在一个鲜字。毛豆带点粉糯，豆腐干带点咸香，茭白负责脆，三样一合，口感一点不单调。调味别太猛，生抽、蚝油够用了，豆腐干本身就有味，盐放多了就抢戏。最后点一点薄芡，鲜味就都挂在菜上了，看着不稀不稠，吃着刚刚好。

说到这里，很多人会问，茭白到底适合谁吃。按常见饮食习惯来说，秋天容易上火、吃肉多、喜欢口重的人，可以把茭白安排进来。它水分足，纤维也有，和荤菜搭一搭，盘子里就不那么腻。肠胃比较弱的人，也更适合先从炒鸡蛋、炖汤、清炒这类做法下手，别一上来就猛火爆辣，肚子受不住。

还有人爱问，茭白是不是越白越好。这个还真得看状态。挑的时候最好看外皮鲜绿，剥开以后里面洁白、紧实、没黑点，拿起来有分量，这种一般更嫩。要是表面发蔫，切开里面纤维多，炒出来就老，脆感差一截。削皮也别削得太狠，外层那点薄绿衣有时候还挺鲜，削太多，等于把好肉给削跑了，太可惜。

我小时候在山东老家，秋天赶集，菜摊上茭白和莲藕总是挨着卖。那时候家里老人就爱说，秋天不怕菜少，就怕菜不对路。现在日子好了，菜市场啥都有，可真到了做饭的时候，最让人安心的还是这些老老实实的家常菜。茭白不摆架子，不抢风头，进了锅却挺能撑场子。

有些人总觉得秋天要补，就得大鱼大肉往上招呼，其实真不一定。天天大荤，胃里受不了，嘴里也发腻。茭白这种东西，放在秋天正合适，既能当菜，又能配菜，还能和肉、蛋、豆制品一起搭。家里有老人孩子，桌上有这么几样轮着来，饭就好吃，心也踏实。
