软糯入味的粉蒸肉，别直接上锅蒸！大厨不说的秘密在这里

说起粉蒸肉，这可是我家餐桌上的“硬通货”。不管是逢年过节，还是平时想改善伙食，只要这道菜一端上桌，保准全家人的筷子都往那儿伸。那糯唧唧的米粉裹着油润润的五花肉，咬一口，肉香混着米香在嘴里化开，别提多美了。可我敢打赌，十个人做粉蒸肉，有八个都在犯同一个错误——切好肉、裹上粉、直接扔锅里蒸。你要是也这么干，那我可得跟你说道说道了：这么做出来的肉，不柴才怪，不腻才怪，不硬才怪！今天我就把做了十几年粉蒸肉的心得掏心窝子跟你聊聊，少了关键的两步，你可千万别急着开火。

要说这粉蒸肉，看着简单，其实门道多着呢。为啥饭店做的粉蒸肉软烂入味、肥而不腻，你自己在家做的却干巴巴得像柴火棍？问题就出在“直接上锅蒸”这个习惯上。五花肉再漂亮，米粉再香，你要是少了这两步“神操作”，那这锅肉就算是白瞎了。

第一步：腌制前的“去油洗澡水”，千万不能省

很多人买回五花肉，切成片，呼啦一下倒上酱油料酒，再拌点米粉就上锅了。这么做，肉里的血水腥气全都被锁在里面，蒸出来能好吃才怪！

我每次做粉蒸肉，多了一步“温水泡澡”的工序。五花肉切好后（别切太薄，一元硬币厚度最好），放进40度左右的温水里，加一小把花椒，浸泡15-20分钟。你可别小看这一步，温水能把肉里的血水逼出来，花椒能去腥增香。泡完之后你会看见，水变浑了，肉片变得白净透亮。把肉捞出来挤干水分，这时候再腌制，那调料才能顺着肉的纹理往里钻。

腌制的时候，除了常规的料酒、生抽、老抽、姜末，我还得加个“秘密武器”——一勺腐乳汁和半勺甜面酱。这两样东西一下去，那味道立马就有了层次感。记住，腌制时间别低于1小时，你要是着急，那就别怪肉不进味儿。有人问我为啥肉总是干柴？腌制的时候加一勺食用油进去抓匀，能锁住肉的水分，蒸出来嫩得能掐出水来。

第二步：米粉的“喝水环节”，决定成败的关键

好了，肉腌好了，接下来该拌米粉了吧？且慢！这里头有个90%的人都不知道的坑。

你是不是直接把干米粉倒进肉里就开始扒拉？难怪你蒸出来的粉蒸肉，要么米粉干得硌牙，要么稀得挂不住，吃起来就跟肉和米粉闹分居似的，各过各的。

米粉得先“喝口水”！我自己做粉蒸肉，从来不用超市那种现成的精细粉，而是自己炒。大米和糯米按2：1的比例，加上八角、桂皮、花椒，小火慢慢炒到米粒发黄，满屋飘香的时候关火。晾凉后别打成粉末，保留一点颗粒感，吃起来才香。

最关键的一步来了：把打好的米粉倒进碗里，别急着拌肉，先往米粉里少量多次地加腌肉的汤汁或者清水，边加边搓，让米粉变成潮乎乎、用手能捏成团、松手又能散开的状态。这时候再把湿米粉倒进腌好的肉片里，轻轻抓匀，让每片肉都裹上这层“潮衣服”。

为什么要这么干？干的米粉上锅一蒸，会疯狂地和肉抢水分，结果肉里的汁水被吸干了，肉能不柴吗？米粉因为没吸饱水，蒸出来中间还有白芯，夹生！先让米粉喝饱水，上锅后它就不再跟肉抢营养了，而是和肉互相成就，你中有我，我中有你，蒸出来那叫一个软糯油润。

蒸制的最后忠告
