立秋后该补气了吗？秋天补气第一名，每周2次，气足了，脾好肺好

立秋一到，家里老人先张罗的，多半不是衣裳鞋帽，而是吃食。山东这边不少人家都这样，天气一转凉，饭桌上就得有点补气养身的意思。文里婆婆李阿姨拉着儿媳说，立秋了咱得补补气，顺手教了黄芪山药炖鸡汤，核心意思很明白，就是顺着节气，用一锅家常汤把鸡肉、黄芪、山药、红枣、枸杞这些食材搭在一起，做成一碗温和、好喝、适合秋天的家常滋补汤。支撑这个做法的逻辑也不复杂，先焯鸡去腥，再泡黄芪红枣，后放山药，最后加枸杞，尽量少调料，保留汤的本味，做法朴素但讲究火候和顺序，重点落在立秋后的一到两次家庭炖汤习惯上。

李阿姨这锅汤，听着像老辈人随口一说，其实里头有门道。黄芪在中医里常被当作补气的常用药材，山药偏温和，红枣和枸杞又是家里常备，鸡肉蛋白质足，炖在一块儿，确实容易让人觉得有底气。再加上砂锅小火慢炖，汤色清亮，味道不冲，老人能喝，孩子也愿意碰，这才是家常菜的硬本事。不是摆盘多花哨，也不是调味多复杂，就是一家人围着锅子，喝得舒坦，心里也踏实。

说起黄芪，老一辈山东人都不陌生。很多药膳里都能见着它的影子，像黄芪炖鸡、黄芪排骨汤、黄芪红枣茶，北方家庭尤其爱用。黄芪的用法讲究一个量，太少没存在感，太多又容易抢味。素材里用了20克左右，这个分量放半只老母鸡，算是比较稳妥的家常做法。老母鸡本身油脂和鲜味更足，和黄芪搭起来，汤不至于寡。要是用的是三黄鸡，汤的鲜味会轻一些，炖的时候更要注意火候，不然喝着就少了那股老味道。

山药这东西，看着土，作用却不小。中国饮食里，山药一直是个挺耐看的食材，清朝以前就常进家常灶，既能做菜，也能入汤。铁棍山药口感更粉糯，炖久了容易散，所以素材里强调四十分钟后再放，这就很对路。山药要是早下锅，最后整锅汤容易糊，喝起来口感发黏，失了清爽。家里做饭最怕什么，不是食材贵，是一顿忙活下来，最后汤汤水水没层次。山药后放，鸡肉先把底味熬出来，顺序对了，汤的骨架就稳。

还有个细节挺接地气，削山药皮的时候得戴手套。这个事别笑，真不是矫情。山药皮里的黏液接触皮肤后，不少人会觉得发痒，尤其是手腕、指缝那一块儿，挠也不对，不挠也不对，难受得很。山东人干活实在，但这个小坑确实容易踩。家里做饭的人都知道，厨房里最耽误工夫的，往往不是炖多久，而是这类小麻烦。戴上手套，省得半天跟痒劲较劲，心态也稳当。

这锅汤的做法其实很像北方家庭的慢生活。先把鸡块冷水下锅焯水，水里放料酒去腥，开锅后撇净浮沫，三四分钟捞出，再用温水冲洗。这个步骤不能省，省了汤会发浑，腥气也压不住。很多人觉得炖汤就是把料扔进锅里煮，其实真正能不能喝出层次，靠的就是这几步收拾得干净。老母鸡的血水和杂质去了，后面黄芪红枣的清香才进得去。

泡黄芪和红枣十来分钟，也不是随便泡泡。黄芪表面多少有些药材的干燥感，提前润一下，炖的时候更容易出味；红枣泡过以后也更容易煮开，甜味能散进汤里。枸杞单放，最后五分钟再加，这个细节很要紧。枸杞泡太久容易烂，颜色一散，汤面上飘着一层碎渣，看着就不精神。家常汤讲究的不是摆谱，是看着干净，喝着顺口。

火候这事，南北都讲，但北方家庭尤其爱说得直白。大火烧开，转小火，最小的那种，咕嘟咕嘟炖四十分钟，再下山药炖二十分钟。这里头最怕心急。火大了，汤容易飞，肉柴；火小了没开透，鲜味出不来。砂锅的好处就在这儿，受热匀，保温稳，慢慢熬，汤味能往深里走。以前老一辈做鸡汤，很多都是一口砂锅从早到晚守着，饭香不是飘出来的，是熬出来的。

现在不少人一听药膳就紧张，怕是不是得讲一堆规矩。其实家里做饭没那么玄。黄芪山药炖鸡汤本质上还是一道家常汤，重点是适量。黄芪不是越多越好，枸杞也不是一把一把地撒，调料更不用堆，盐最后放一点就行。汤喝的是食材本味，不是重口味冲击。鸡肉的鲜、山药的绵、红枣的甜、黄芪的微香，这几样在锅里慢慢碰一块儿，出来的味道就挺稳，挺像过日子的劲儿。

说到底，这道汤能在不少家庭里变成固定节目，不只是因为“补”，更因为它适合一家人一起吃。老人喝着舒服，孩子喝着也不排斥，媳妇在厨房里忙一忙，丈夫和娃守着锅边等开饭，那种热气腾腾的家庭气场，比外头点再多外卖都顶事。尤其到了秋天，山东这边早晚温差一上来，饭桌上来一锅热汤，手脚都跟着松快些。

我见过不少人做汤，最爱往里加一堆香料，八角桂皮花椒全上，结果鸡汤喝成卤水味，啥也分不出来。李阿姨这做法就老实，料少，味正，顺着食材往下走。老母鸡半只一斤多，黄芪20克左右，铁棍山药一根，红枣六七颗，枸杞一小把，生姜四五片，料酒适量，盐适量，配比不花哨，普通家庭也能照着来。食材越常见，越考验手上功夫。
