猪肉丸子

1.猪肉用绞肉机搅碎或剁碎，放入葱姜，料酒，花椒粉，盐，生抽，料酒，五香粉，一同搅拌

2.手沾水捏成丸子状，根据需要大小随意

3.锅中多到油，油温升高，放入丸子炸至焦糖色捞出

红焖猪蹄

食材：猪蹄500g、葱、姜、八角一颗、花椒十粒、生抽两汤匙、老抽半汤匙、料酒一汤匙、冰糖一汤匙、香油半汤匙

做法：1.将猪蹄清洗干净，锅中放水放葱姜烧开

2.放入猪蹄开着盖子煮两分钟，捞出用冷水冲凉沥干

3.炒糖色：放一汤匙冰糖碎，小火煮到冰糖融化颜色变深

4.倒入焯好的猪蹄，不断翻炒至粘满糖色

5.倒入两汤匙生抽，半汤匙老抽炒匀至猪蹄全部上色，倒入一汤匙料酒和姜片炒匀

6.把一颗八角和十粒花椒装入茶包袋，和葱同时放入锅中

7.加足量水没过猪蹄，水开转小火加盖焖两个小时

8.开盖转大火收浓汁水，出锅前淋些香油炒匀即可

凉拌木耳

材料：黑木耳20克、大蒜2瓣、干辣椒1个、香菜适量、花椒少许、生抽2勺、香醋1勺、芝麻油1勺、糖少许、盐少许、熟白芝麻适量。

做法：1、木耳用清水泡发，洗净后撕成小朵。大蒜切末，辣椒和香菜切成小段。

2、取一小锅加适量水烧开，入黑木耳焯烫1分钟左右捞出，过凉水洗去表面粘液，沥干后待用。

3、炒锅内倒少许橄榄油加热，放花椒爆出香味后滤出花椒，将热油淋在蒜末辣椒上烹香，倒入生抽，香醋，盐和糖调匀成味汁。

4、将调好的味汁倒入木耳，再淋上芝麻油，加适量香菜和白芝麻拌匀即可。

辣酱煎豆腐

食材：豆腐、姜、葱、辣酱、油、盐

做法：1、葱和姜切末，豆腐用清水冲洗干净，切成厚片；

2、平底锅里放入食用油，油热后把豆腐放入锅里煎至两面金黄盛出；

3、锅中留底油，油热后把葱花和姜片爆香，放入辣酱、盐、适量清水煮开；

4、把煎好的豆腐放入锅里，小火慢炖至入味；

5、待汤汁快干时，关火即可。

酸汤肥牛

材料：肥牛卷 、泡酸萝卜 、泡酸菜~

做法：1.将金针菇洗净，泡菜切片、酸萝卜切块、野山椒青红椒和葱花切碎备用

2.大火烧开，加少许盐和油，将金针菇煮熟后捞出沥干水分后装盘

3.另烧一锅水，烧开后下肥牛卷，去除血水后捞出

4.锅烧热后倒油，将酸菜和酸萝卜块下锅炒出香味后，放入泡野山椒，翻炒片刻后加水煮沸，煮沸后撒适量胡椒粉，再将肥牛卷倒入锅中，加适量料酒

5.关火起锅，倒入装好金针菇的汤碗内，撒上葱花和青红椒即可

酱烧虾

材料：虾、豆瓣酱、葱

做法：

1、虾剪掉须和尖嘴巴，挑去虾线，洗净备用。

2、锅内加油烧热加入豆瓣酱，葱段炒香。

3、把虾扔进去煸炒，煸炒再煸炒，避免糊锅可以略加水，焖一分钟即可出锅了。

鲜肉混沌

材料：纯瘦肉，混沌皮，香菜，青菜，紫菜，香油，辣椒油，胡萝卜，醋，胡椒粉，生抽

做法：

1.把瘦肉用料理机打成肉泥加入少许香葱，5克盐搅拌均匀，青菜及所有材料洗干净，备用。

2.我是买好了混沌皮，直接就可以包了，给大家展示下我的包法哦

3.烧水煮混沌喽，（如果有高汤，味道更鲜美哦）这个很简单，水沸腾后先放入混沌煮5分钟，依次放入胡萝卜丝、青菜、豆皮、紫菜，然后是各类调料煮2分钟可以出锅喽！

4.盛入碗里后洒上香菜，淋上香油，放点米醋和辣椒油！开吃吧（我做了一碗辣的，一碗原味的，都很好吃！）

牛肉炒小藕

食材：里脊牛肉、小藕、红椒、青椒、泡椒、淀粉、盐、香油、酱油、油、大蒜、生抽、蚝油

做法：

1、将里脊牛肉洗净切成薄片，装碗，加入酱油、香油、料酒、淀粉拌匀腌制10分钟；

2、小藕洗净去皮切小段，青红椒切小圈，大蒜拍碎切末；

3、把锅烧热，倒入适量油，放入腌好的牛肉，中大火翻炒，炒至8成熟出锅装盘备用；

蒜蓉炒菜心

食材：菜心300g、蒜瓣2颗、肥猪肉50g、盐少许、油适量

做法：

1.将菜心洗净，肥猪肉切小块，蒜拍扁切成蒜蓉

2.烧热锅，放一点点油，加入肥猪肉慢火煎出猪油

3.大火放入蒜蓉爆香，放下菜心

4.爆炒至软身，颜色变亮，加盐调味即可出锅

家常红烧鲳鱼

1.准备好食材，鲳鱼，蒜苗，葱，蒜，姜。

2.蒜切片，姜切丝，蒜苗斜切段，葱切段。

3.鲳鱼身上抹适量盐入味，再拍一点点淀粉。

4.炒锅烧热，放入少许油烧热，将鲳鱼放入锅中，用小火煎至两面金黄色后。

5.装盘备用。

6.炒锅洗净，倒入适量的油，下蒜姜爆香，再加蒜苗段翻炒均匀。

7.加入适量的水，加入酱油、料酒、白糖，下鲳鱼大火烧开，持平大火烧开后转小火煮至汤汁浓稠，将鲳鱼盛出盘中，倒出酱汁。

孜然烤虾

食材：虾9个、 茶匙 、盐、 蒜子两瓣 、生姜一片 、米酒几滴、 孜然粉、 竹签5根

做法：

1.新鲜虾，要挑选个头较大的

2.把虾须和虾脚剪掉，用牙签挑出虾线

3.再用手从虾头一边掰开，挑出虾脑门黑色块（挑干净烤出来的虾可以连头也一起吃）

4.处理干净后放容器里，加入蒜末和姜末

5.再加进几滴米酒，盐，孜然粉拌匀，腌制一两小时

6.再用竹签把腌制好的虾从头部开始串起（竹签需提前清洗干净并浸泡几分钟）

7.烤盘铺上锡纸，先涂一层油，把虾铺上，再把腌制虾的调味和香料了一起加入

8.把虾放入烤箱（烤箱提前预热），上下火185度，烤制20分钟

9.烤好后拿出，再撒上少量孜然粉更美味

啤酒鸡块

材料：鸡翅根500克、啤酒1听、植物油2汤匙、盐4克、红烧酱油1汤匙、料酒1汤匙、葱姜蒜适量、白糖1汤匙、干辣椒2个、花椒10粒

做法：

1.食材备齐，鸡翅根择洗干净，将鸡翅根斩成块。

2.葱切段，姜切片，大蒜对半切开，干辣椒切段，辣椒籽不用切。

3.锅加水，冷水下入鸡块，烧开，打去浮沫，将鸡块焯透，捞出待用。

4.锅加油烧热，下入葱姜蒜，花椒，干辣椒炒香，下入鸡块翻炒1-2分钟。

5.淋入料酒，红烧酱油，翻炒均匀，加入啤酒，啤酒的量以没过鸡块即可，加入盐，白糖，大火烧开，改中火烧制入味。待剩少许汤汁时，改大火收汁，把酱汁收至浓稠即可，盛出装盘。

青椒炒牛肉

材料：牛肉300克、青椒1个、蒜头4个、老姜3片、干辣椒4个、味精1小匙、盐少许、白胡椒粉1克、淀粉1小匙

做法：

1、牛肉选择筋少或者无筋的部位，切成小片段加入少许胡椒粉腌制一会。然后放入一小匙淀粉抓捏均匀；

2、青椒去除内部白色组织切成细条使用；老姜熟片。干辣椒剪了去除籽、蒜头剁碎备用；

3、锅热油爆干姜片，放入辣椒爆香；再倒入牛肉片翻炒数下；

4、洒入蒜碎一起翻炒出香味；再倒入青椒大火爆炒几下并做调味即可上菜。

烤鸡腿肉

食材：鸡腿、葱花、姜丝、辣椒、蒜泥、生抽、料酒、奥尔良腌鸡料

做法：

1、准备好食材，将买来的鸡腿洗干净，去掉骨头将肉切成小块；

2、将所有调料和配料放入切好的鸡腿肉中，搅拌均匀，腌制十五分钟；

3、将空气炸锅200度预热5分钟，铺上吸油纸；

4、将腌制好的鸡腿肉放入空气炸锅当中；

5、200度15分钟后出锅就可以食用了。

杭椒牛柳

食材：牛柳250克；杭椒100克；红椒3个；鸡蛋1个；淀粉适量；葱适量；姜适量；盐适量；料酒适量；老抽适量；蚝油适量

做法

1、将杭椒、红椒斜着切成长段，这里用的是买好的现成牛柳，在家也可以买牛肉自己回来切成片，切牛肉时用刀顺着肉的纹路切，大概切成0.5厘米厚，5厘米长的片。

2、将等会要用到的葱、姜、蒜切片，在牛肉片中放入1勺盐、2勺料酒、1勺淀粉、1个蛋清搅拌均匀，这一步是上浆让牛肉嫩滑，调个底口。

3、锅内倒油，烧至7成热时，将牛柳先入油锅滑油再将杭椒、红辣椒一并放入锅中，过一下油，当牛柳变色后将所有食材盛出，沥去油。

4、锅内放少许油，接着放入牛柳、杭椒和红椒段翻炒，加入1勺蚝油、1勺老抽、1勺盐、1勺糖调味，将所有原料炒匀入味就可以出锅了。

干锅牛肚

做法：1、把熟牛肚用开水加料酒煮10分钟左右，捞起切丝；姜切末；洋葱切丝，香干切条；

蒜薹洗净切段，干辣椒切段；香菜切段；

2、热锅凉油，加花椒粒、姜末、辣椒炒出香味，加牛肚、料酒翻炒一会；

3、加豆瓣酱翻炒均匀；

4、加蒜薹、香干一起翻炒入味，加少许的盐翻炒几分钟，加洋葱丝和味级鲜酱油翻炒均匀；

5、出锅前加鸡精、胡椒粉提鲜、撒香菜点缀即可。

3、将煮过的笋捞出沥干倒入锅中翻炒，加入适量老抽，倒入适量糖和盐调味。
