干煸孜然杏鲍菇：比肉还香的家常小炒，一出锅就香到舔盘子！

每次做这道干煸孜然杏鲍菇，我弟准是第一个冲进厨房的。3“姐，你又在搞什么好吃的？”他一边问一边伸手去抓锅边刚炒好的杏鲍菇，被我拍掉手还笑嘻嘻的。这道菜真的是我们家餐桌上的“米饭杀手”，焦香干韧的口感，浓郁的孜然味，吃一口就停不下来，连平时挑食的小朋友都能干掉一整盘。

说起这道菜的来历，其实挺偶然的。有次去烧烤摊吃宵夜，点了烤杏鲍菇，那味道简直绝了，回来就一直惦记着。但总不能天天跑烧烤摊吧？于是我就琢磨着在家复刻，试了好几次，终于找到了这个简单又好吃的做法。现在这道菜已经成了我家的保留节目，每次家里来客人，我都要露一手，保证大家赞不绝口。

做这道菜其实特别简单，不需要什么复杂的调料，也不需要高超的厨艺，就算是厨房小白也能轻松搞定。首先，杏鲍菇要选那种粗壮饱满的，这样的杏鲍菇肉质厚实，口感更好。把杏鲍菇洗干净，不用去皮，直接用手撕成条状，这样比用刀切的更容易入味，也更有嚼劲。

接下来就是关键的一步——干煸。锅里不用放油，直接把撕好的杏鲍菇条放进去，开中火慢慢煸炒。这时候要有耐心，看着杏鲍菇慢慢出水，然后再慢慢收干，这个过程大概需要五六分钟。等杏鲍菇的水分完全蒸发，边缘开始变得焦黄，摸起来有点干韧的感觉，就可以盛出来备用啦。这一步很重要，一定要把水分煸干，这样炒出来的杏鲍菇才会香，才会有那种烧烤的感觉。

然后锅里放适量的油，油热后放入蒜末和干辣椒爆香，喜欢吃辣的可以多放点干辣椒，不喜欢太辣的可以少放或者不放。香味出来后，把煸好的杏鲍菇倒回去，快速翻炒均匀。接下来就是调味的关键时刻了，加入一勺生抽、半勺老抽、一勺蚝油，再撒上适量的孜然粉和辣椒粉，孜然粉一定要多放，这可是这道菜的灵魂所在！最后再撒上一点白芝麻和葱花，翻炒均匀就可以出锅啦。

这里有个小技巧要告诉大家，调味的时候可以先尝一下味道，根据自己的口味调整咸淡。还有，孜然粉和辣椒粉最好选择那种细一点的，这样更容易附着在杏鲍菇上，每一口都能吃到浓郁的香味。出锅前可以再淋一点点香油，味道会更上一层楼。

这道菜的做法虽然简单，但味道一点都不简单。杏鲍菇经过干煸后，水分蒸发，口感变得干韧有嚼劲，再加上孜然和辣椒的加持，真的比肉还香。每次做这道菜，我都要多煮一点米饭，不然根本不够吃。我弟更是夸张，有一次直接端着盘子站在厨房吃，说这样才过瘾。
