秋燥必收！一颗梨的4种神仙吃法，润到心坎里

秋天一到，嗓子干、皮肤紧、连呼吸都带着点“火气”，这时候要是能咬上一口水灵灵的梨，那清甜的汁水顺着喉咙滑下去，整个人都舒坦了。老话说“秋吃梨，赛人参”，虽说有点夸张，但梨确实是秋天最懂我们的水果。可你知道吗？梨可不只是洗洗啃这么简单——生吃、炖汤、蒸冰糖、榨汁，四种吃法四种风味，润燥的本事也各有千秋。今天我就把这四种压箱底的吃梨大法全盘托出，从挑梨到入口，每一步都给你说明白，保准让你这个秋天润得透透的！

一、生吃：最野的吃法，最直接的快乐

生吃梨，讲究的就是一个“鲜”字。你想想，刚从市场拎回来的秋月梨或者皇冠梨，表皮还带着一层薄薄的果霜，拿在手里沉甸甸的，指甲轻轻一掐就能感到那绷紧的果皮底下藏着多少汁水。洗净后直接上嘴，“咔嚓”一声，脆生生的果肉在齿间炸开，甜丝丝的汁水瞬间溢满口腔——那种爽利劲儿，是任何加工方式都替代不了的。

但生吃也有生吃的门道。挑梨要选那种拿在手里有分量、表皮光滑没有黑斑的，这样的梨水分足、果肉细。要是买到那种摸起来发软的，说明放久了，口感会发绵，生吃就差点意思。另外，生吃梨最好别削皮，梨皮里膳食纤维丰富，洗干净连皮啃，清甜里带一点点涩，反而更有层次感。

不过要提醒一句，生梨性凉，脾胃虚寒的朋友别空腹吃，饭后半小时来半个，既解腻又润燥，刚刚好。

二、炖汤：一锅温柔，润到骨子里

如果说生吃是夏天的热烈，那炖汤就是秋天的温柔。梨炖汤，最经典的搭档是银耳和排骨——你没看错，梨和肉一起炖，那味道绝了。

先说银耳雪梨汤。干银耳提前泡发，撕成小朵，和切块的雪梨一起丢进砂锅，加几颗红枣、一小把枸杞，大火烧开转小火慢炖四十分钟。炖到银耳出胶、梨块变得半透明，汤水微微发稠，这时候舀一勺送进嘴里，滑溜溜的银耳裹着梨的清甜，从舌尖一路润到胃里。要是咳嗽有痰，还可以加几粒川贝，效果更好。

再说梨和排骨的搭配，可能有人觉得奇怪，但试过就知道有多妙。排骨焯水后和梨块、姜片一起炖，梨的果酸能让肉质更软烂，同时吸走油腻，炖出来的汤清亮见底，喝起来有淡淡的果香，一点都不腻。我家每次炖这个，连汤带肉都能吃个精光。

三、蒸冰糖：老祖宗的智慧，专治各种“干”

蒸冰糖梨，听起来简单，但要做得好吃又有效，细节不能马虎。选那种个头匀称的雪梨，从顶部三分之一处切开，用勺子把中间的核挖掉——注意别挖穿底，不然冰糖化了全漏了。挖好的梨盅里放两三粒老冰糖，喜欢的话再丢一颗红枣或者几粒枸杞，然后把切下来的“梨盖”盖回去，用牙签固定。

接下来上锅蒸，水开后转中小火蒸二十分钟左右。蒸到梨肉用筷子一戳就透，冰糖完全融化在梨汁里，打开锅盖那一刻，甜丝丝的热气扑面而来。吃的时候连汤带肉一起，梨肉软糯得像果冻，汤汁甜而不腻，带着一股温润的暖意。晚上嗓子干痒或者有点小咳嗽，蒸一个吃下去，第二天早上起来喉咙就舒服多了。家里有老人小孩的，这招尤其管用。

四、榨汁：懒人福音，润燥也能很时髦

最后说说榨汁，这是最省事的吃法，但搭配好了也能玩出花。基础版是纯梨汁——两个雪梨洗净切块，丢进榨汁机，不用加水，直接榨出满满一杯乳白色的梨汁，清甜得不像话。要是觉得单调，可以加半根黄瓜一起榨，黄瓜的清香和梨的甜润搭在一起，清爽翻倍，颜色也好看。

喜欢奶香的，试试梨加牛奶。梨块和牛奶按二比一的比例榨，榨出来的汁带着淡淡的梨香和奶香，口感丝滑，早上来一杯，比奶茶健康多了。还有一种我最近迷上的搭配：梨加一小块生姜。生姜的辛辣被梨的甜润中和，喝起来微微发热，秋天早晚温差大的时候来一杯，从嗓子暖到脚底。
