肉蔻、白蔻、草蔻一字之差，用途却完全不同，大厨：不懂别乱用！

前几天邻居张姐端着一锅卤牛肉来我家，一脸委屈地说：“明明照着菜谱放的香料，怎么一股子药味？”我掀开锅盖一闻，好家伙，她把草蔻当白蔻使了！这事儿还真不怪她，肉蔻、白蔻、草蔻这三兄弟，名字就差一个字，长得也像亲戚，但在厨房里干的活儿可完全不同。今天咱们就把这仨“蔻”好好掰扯清楚，以后炖肉卤菜再也不翻车！

别看名字像三胞胎，脾气差得远呢

肉蔻——卤肉界的“鲜味担当”

肉蔻，也叫玉果、肉果，外形是椭圆形的，胖乎乎的，表面灰色或灰黄色，硬得跟石头似的，破开后里面有棕黄相间的大理石花纹。它的看家本事就一个字——鲜。

肉蔻在卤肉里承担的是提鲜增香的活儿，尤其适合猪肉、牛腱子这类“香味足但鲜味不太够”的食材。它能跟肉里的脂肪和蛋白质充分融合，让卤出来的肉香气一层一层地渗透进去，吃起来鲜香饱满。但要注意，鸡肉本身就够鲜了，再放肉蔻反而多此一举。

用肉蔻有个铁律：宁少勿多。每公斤肉搭配半颗就够了，用之前拍开，香气才能释放出来。放多了？等着卤汤发苦发涩吧，严重的还会有“闷头”的感觉。

白蔻——去腥界的“清道夫”

白蔻，也叫白豆蔻，外形是黄白色的圆球形，个头比肉蔻小一圈，外壳软，轻轻一捏就能剥开。它闻起来有一股清凉的辛香味，在香料里属于“苦香型”选手。

白蔻最拿手的活儿是去腥。不管是鸭肉的土腥味、牛羊肉的膻味，还是内脏的杂味，白蔻都能给你收拾得服服帖帖。它去腥有个特点——香气分子特别小，能钻到肉质内部去，所以老厨师常说白蔻有“透骨香”的效果。

但白蔻有个娇气的地方：怕热。它的香气遇热挥发太快，所以千万不能炒、不能烤，一般在卤水中后期才放，这样才能把去腥增香的效果发挥到最大。

草蔻——脱骨界的“拆骨专家”

草蔻，学名草豆蔻，外形是长圆形或扁圆形的种子团，表面灰棕色，顶端尖尖的，有点像个小金字塔。它的味道偏辛辣，香气浓烈，带有一定的苦涩感。

草蔻在厨房里有个独门绝技——脱骨。不管是卤鸡爪、炖猪蹄还是焖羊排，只要加了草蔻，骨肉之间就会变得松弛，肉一嗦就下来了。而且草蔻的“入里性”特别强，能把其他香料的味道带进肉的最深处，让香味不仅仅停留在表面。

但草蔻也有个“暴脾气”：用量要克制。放多了不仅发苦，还会把肉“咬”得太烂，尤其是做纯肉菜的时候，五花肉、把子肉这种，草蔻放多了直接给你炖成肉泥。

为什么大厨说“不懂别乱用”？

这三种豆蔻最要命的地方在于：它们经常被混着用，结果一锅好菜全毁了。

最常见的事故就是拿白蔻当草蔻用，或者反过来。比如你炖一锅羊排，本意是放白蔻去腥，结果手一抖拿成了草蔻——腥味是压下去了一些，但草蔻那股辛辣的涩味会直接盖过羊肉本身的鲜香，整锅汤喝起来又苦又冲。

更麻烦的是同时使用两种以上的豆蔻。三种豆蔻各有各的苦涩底子，叠加在一起用，苦涩感会成倍放大。有经验的大厨如果非要把它们配在一起用，必须遵循一个原则：用量向着“使料”的位置靠，意思就是比正常用量还要少，宁可不够，也不能过头。

还有一个容易被忽略的点：草蔻和草果是两码事。很多人觉得它们名字像就是同一种东西，其实草果果大色黑，外壳硬邦邦的，跟草蔻完全不是一个东西。草果主解腻，草蔻主脱骨，用错了效果天差地别。

一张嘴说不清？记住这三句话就够了
