秋天第一杯姜枣茶！驱寒暖胃，喝出好气色

秋风一起，凉意就从脚底往上蹿。这时候，我总惦记着厨房里那罐熬好的姜枣茶。姜枣茶，驱寒暖胃，秋天必备——这话我每年都要念叨几遍，念叨给自己听，也念叨给屏幕那头的你们听。说来也怪，一入秋，手边没杯姜枣茶，总觉得少点什么。尤其是早上起来，嗓子眼儿干干的，手脚也凉，烧一壶水，挖两勺姜枣膏冲开，趁热咕咚咕咚喝下去，那股暖意从喉咙一路滑到胃里，整个人就像被小太阳从里到外烘了一遍。

姜枣茶这东西，看着朴实，其实就是姜和枣两样。可别小看这两样，搭在一起，那是老祖宗传下来的智慧。姜是辣的，枣是甜的，一个驱寒，一个补血，一个走得快，一个守得住。秋天为什么要喝它？因为秋天这季节，白天热得像夏天，早晚凉得像初冬，身体一会儿出汗一会儿受寒，脾胃最容易闹脾气。这时候姜枣茶就像个老好人，不温不火地帮你把身体里的寒气往外赶，又把气血往回收一收。

先说姜。选姜有讲究，最好是老姜，皮皱皱的，掰开纤维粗、味道冲。嫩姜水分大，辣味淡，熬出来不够劲儿。我习惯把姜洗干净，不去皮，切成薄片再剁成细末。有人问要不要去皮，我一般不去——姜皮性凉，姜肉性热，连皮一起熬，正好平衡。当然，你要是特别怕辣，去皮也行，就是喝起来少了那层温润的层次感。

再说枣。红枣得挑那种肉厚核小的，新疆灰枣或者山西骏枣都不错。洗干净，用温水泡半小时，泡到皮皱皱地舒展开，再用小刀一颗颗去核。去核这步不能省，枣核燥热，一起熬容易上火。切枣也有说法，别切太碎，保持点颗粒感，熬出来口感才好。我试过用剪刀剪，比刀切省事，剪成小条就行。

熬姜枣茶，我最常用的是红糖版。锅里放水，下姜末，大火烧开转小火，咕嘟咕嘟熬上二十分钟，让姜的味道彻底释放出来。然后下枣条，继续熬，熬到枣肉软烂、汤色变深，再放红糖。红糖的量看个人口味，我一般一斤枣配三两红糖，甜度刚好。熬的时候得守着，时不时搅一搅，免得糊底。等汤汁收得差不多了，变得浓稠，关火，趁热装进干净无水的玻璃瓶里。晾凉了放冰箱，能存个把月。

每天早上挖一勺，用温水冲开，姜末和枣肉在杯子里打转，喝一口，姜的辛香先冲上来，紧接着是枣的甜糯，红糖的焦香垫底，三种味道叠在一起，暖而不燥，甜而不腻。要是赶上哪天特别冷，我会多挖半勺，再丢两颗桂圆进去，喝完额头微微冒汗，那叫一个舒坦。

姜枣茶不光能冲着喝，还能变着花样吃。比如煮小米粥的时候加一勺，粥会带上淡淡的姜枣香，早上喝特别养胃。或者蒸南瓜的时候淋一点，南瓜的甜和姜枣的暖搭在一起，连挑食的孩子都爱吃。我还试过用它抹面包，再撒点坚果碎，中西合璧，居然意外地好吃。不过最经典的还是直接冲水，简单直接，秋天的早晨来一杯，比什么咖啡奶茶都熨帖。

当然，喝姜枣茶也有讲究。最好是早上喝，早上阳气升发，姜能帮着提一把。晚上就别喝了，姜性升散，晚上喝容易让人精神，睡不踏实。还有，要是你正上火，嗓子疼、嘴巴长泡，就先停一停，等火下去了再喝。孕期、经期量大的姐妹，喝之前问问医生，别自己瞎喝。这些注意事项听着琐碎，但都是为了喝得舒服、喝得对。

说到这儿，我想起去年秋天有个读者给我留言。她说她从小手脚冰凉，一到秋天就抱着热水袋过日子。后来照着我的方子熬了姜枣茶，每天早上喝一杯，喝了两个月，那年冬天手脚居然没怎么凉过。她说：“没想到姜和枣这么普通的东西，凑一起这么管用。”我看完特别高兴，比吃到什么山珍海味都高兴。美食这东西，说到底不光是填饱肚子，更是把日子过得暖一点、甜一点。
