秘制虾

材料： 斑节虾15只，红甜椒半个，西红柿半个，洋葱4分之1个，大蒜4个，姜2片，黑胡椒碎少许，盐少许，糖15克，料酒少许

做法：

1、将除了料酒以外的所有配料洗净备用，用我的瑞欧菜板，双面使用，干净卫生不发霉。

2、虾洗净开背，用料酒腌制15分钟。

3、等待的时候把配料放入我们的奇迹养生机，用果汁冰沙键打成糊，我们的奇迹养生机，细腻，快速，易清洗。

4、炸食物少油烟，无涂层，不粘锅。

爆炒猪肚

食材：卤猪肚300克泡椒4个、辅料：蒜苗一把姜一块生抽一勺

做法：1、泡椒和猪肚都切条状

2、蒜苗切段，分开蒜白与蒜叶

3、煎烤机预热，放少许油爆香泡椒和姜丝

4、再加入猪肚条翻炒入味，加入蒜白段，快速爆炒至蒜白断生

5、最后加蒜叶，放盐和生抽炒均即可

啤酒烧鸭

食材：鸭子、啤酒、食盐3克、单晶冰糖4块，老抽15毫升，啤酒600毫升，生姜、干辣椒、酱油、大蒜。

做法：

1、鸭子洗净剁成块，将整块拍碎。锅中水烧开，放鸭块煮3分钟去血水。

2、捞出过冷水后沥干待用。

3、铁锅中倒油加热至七成，下鸭块翻炒，不停在锅中炒鸭块，逼出鸭肉中的水分，看到鸭皮变紧，鸭块相对缩小，把炒鸭块转移到高压锅里，铁锅不必洗。

4、下姜块、干辣椒、倒入整瓶啤酒，然后盖上高压锅盖，转大火烧。

5、等气响后，转中小火烧20分钟，关火，等高压锅自然放气。

6、开高压锅盖，把熟鸭块再移回到铁锅，倒老抽上色，放冰糖、盐调味。开足大火盖上锅盖收汤汁。

7、最后，只剩少量粘稠汤汁就行。

番茄豆腐干

材料：白豆腐干、番茄（西红柿）、绿菜椒

做法：１、白豆腐干洗净，切成簿片，西红柿、绿菜椒切成块。

2、起锅热油，爆香姜丝，放入白豆腐干，煎至两面金黄色，再放入绿菜椒，加少许清水翻炒，最后放入西红柿，加盐、蘑菇精调味，即可出锅。

紫薯馅饼

用料：紫薯、面粉、白砂糖、油

做法：1. 将紫薯切片放在锅里蒸烂后，用勺子捣成紫薯泥。撒糖搅拌均匀。

2. 将温水分次加入面粉中，用筷子搅拌成面絮，和成面团即可。和好的面团盖上保鲜膜饧20分钟左右

3. 案板上撒适量面粉，将饧好的面团揉均匀

4. 分成大小适中的小面团，取其中一个，擀制成圆形面皮，在面皮中央放入紫薯泥馅。包裹住，封口，再用手轻压成饼。

5. 锅烧热下一点油，把饼放入小火煎2分钟再翻面煎2分钟即可，因为馅料是熟的，所以只需要把面皮煎熟就行了。

香菇烧鸡腿

材料：鸡腿一只、干香菇n朵、胡萝卜半根、干辣椒适量、香叶2片、八角3个、葱姜蒜随意啦；

做法

1.香菇泡软，水留着，在香菇顶上画十字；鸡腿洗干净剁成块儿（这是废话啦），沸水中焯一下去沫。（其实不焯也没啥）；

2.锅里放油，烧至七成热，放干辣椒、香叶、八角、葱姜蒜（记得切片哦）炒出香味后放入鸡块，炒啊炒，放少许老抽，加些料酒、盐，炒啊炒……放香菇、萝卜（形状看自己喜欢咯），炒啊炒……

3.倒入泡香菇的水，也可加些高汤（如果有的话），没过鸡块即可。大火煮开，小火焖20分钟左右到汤水快干的时候大火再炒几下，放葱段，出锅

嫩笋炒猪里筋

食材：猪里筋肉3两、嫩笋2两（切丝）、黑木耳小半碗（切丝）、青椒2个（切丝）水淀粉适量、料酒2汤匙、郫县豆瓣酱适量、糖、 醋各2汤匙、蚝油3匙、生抽3匙、油适量、葱花少许、姜末少许、蒜少许、鸡粉适量

做法

1、里筋肉切丝，加料酒、水淀粉搅拌均匀后，腌制五分钟。

2、将葱末放入碗中，调入生抽、醋、糖、蚝油搅拌均匀后备用。

3、热油锅，倒入肉丝煸炒，等变色后装碗备用。

4、重启油锅，倒入蒜末、姜末、郫县豆瓣酱煸香后，加入肉丝一起翻炒。

5、再倒入青椒、嫩笋、木耳翻炒片刻。

6、最后加入步骤（2）的调味汁翻炒。

7、等到汤汁稍微变粘稠时，加入鸡粉迅速翻炒，装盘即可

口水鸡

用 料：三黄鸡半只、香葱适量、辣花生适量、熟白芝麻适量、姜适量、蒜适量

做 法：1、将三黄鸡焯水备用。

2、将焯水后的三黄鸡放入汤锅中，倒入适量的清水。然后放入2勺料酒、几根香葱、几片姜、十几粒花椒。大火烧开后转中火煮20分钟，然后再焖5分钟。（全程最好不要揭盖。）

3、把鸡捞出来，放到提前准备好的冰块水中。（用冰水把鸡肉激一下，可以让鸡肉更有弹性，口感更好。

4、把剩下的香葱切末、蒜切末、花生碾碎备用。

5、开始准备料汁。锅中倒入适量的油，油热后将花椒放入锅中爆出香味。

6、将花椒带油一起倒入放有辣椒粉的碗中，制成辣椒油备用。（辣椒和花椒的量可随自己的口味来放。）

7、将辣椒油过滤，留下红亮的油备用。

8、往辣椒油中依次放入1勺盐、半勺鸡精、2勺生抽、2勺香醋、1勺白糖、少许蒜末搅拌匀均。

9、将鸡肉剁成块放入碗中。

10、将料汁倒到鸡肉上，然后撒上花生碎、白芝麻、香葱碎即可上桌。

秋葵炒蛋

材料：秋葵；鸡蛋；盐；

做法：

1、秋葵洗净后，切去根部。再把秋葵切成 一厘米厚的段。 漂亮的五角星断面好漂亮！准备一个鸡蛋。

2、热锅、倒油，鸡蛋打散后，下锅炒成小块。盛出。再倒入少许油，下入秋葵，翻炒2分钟。加入炒好的鸡蛋，以盐调味，翻炒均匀即可出锅。

香菇蒸鸡

材料: 鸡翅300克, 鲜香菇120克, 泡发木耳100克,火腿200克，盐1/2茶匙, 生抽2茶匙, 料酒1/2茶匙, 胡椒粉1/2茶匙, 糖1/2茶匙, 味精1/4茶匙, 橄榄油2茶匙, 香油1汤匙, 姜片2-3片, 葱花1汤匙.

做法:

1. 鸡翅洗净,擦干, 剁开为二. 香菇洗净沥干, 横片为二(如果香菇大且厚, 可以片3-4厚片). 泡发的木耳撕成小朵.(所有食材尺寸差不多一致)

2. 锅中烧开水,下入木耳和香菇, 焯煮三分钟, 捞出用凉水冲干净, 沥干.

3. 将鸡翅, 香菇和木耳放入大碗里, 加入盐, 生抽, 料酒, 胡椒粉, 糖和味精,抓匀, 最后倒入橄榄油, 抓匀, 腌制30分钟.

4. 火腿切7mm左右的厚片, 一片切四块.

5. 按''鸡翅-香菇-木耳-火腿片-鸡翅''的顺序在深碗里将所有食材排好(或随意摆放也可以).

6. 大火烧开蒸锅后, 将碗放入, 大火蒸13分钟左右.

7. 取出, 撒上葱花, 烧热香油, 浇在葱花上, 即可

珍珠丸子

食材：糯米100克 猪肉馅200克 香菇5朵 胡萝卜1根 鸡蛋1枚（只用蛋清）葱末20克 姜末20克 香油2汤匙（30ml） 料酒1汤匙（15ml）生抽2汤匙（30ml）盐1/2茶匙（3克） 鸡精1茶匙（5克）

做法：

1)将糯米提前5小时洗净后浸泡，捞出沥干水分备用。香菇用40度温水泡发后，洗净切碎末。

2)葱姜洗净后切末。胡萝卜去皮洗净后也切成碎末。将肉馅放入碗中，加入葱姜末，香油，生抽，盐和鸡精搅拌均匀腌制15分钟。然后加入蛋清，香菇末和胡萝卜末，用筷子沿同一方向花圈搅拌上劲。

3)用手将肉馅揉成小圆球，放入糯米中滚上一层米，用手轻轻按压表面，让糯米有一部分可以压入肉馅中。

4)将做好的珍珠丸子放入蒸笼中或盘中，大火蒸10分钟即可。

苦瓜炒肉片

材料:苦瓜1条；猪里脊肉100克；盐3克；料酒10克；淀粉10克；食用油15克；

做法：

1.苦瓜买来后，放清水里浸泡，然后用刷子刷洗干净表面。把苦瓜对半剖开，用勺子把瓜瓤部分刮除，尽量把里面白色部分刮干净。

2.切成薄片，撒上一勺盐，用手抓捏均匀后，静置15分钟左右。

3.把猪里脊肉切成肉片，放料酒，少许盐和干淀粉用手抓捏均匀，静置。把盐腌过的苦瓜，用清水冲洗干净，沥干。肉片下锅前，先倒点食用油，拌匀，等下入油锅就不会粘连在一起了。

4.起油锅，下肉片用筷子滑散，待肉片变白即可起锅放一边待用。用锅中余油煸炒苦瓜片，大约两分钟至苦瓜身软（喜欢脆口感的稍微炒几下即可）

5.刚才用油滑熟的肉片倒入，翻炒片刻，加盐即可出锅。

麻婆豆腐

食材：南豆腐500克、牛肉100克、食盐少许、酱油5克、姜5克、蒜5克、花椒5克、料酒5克、郫县豆瓣酱5克、辣椒粉3克、小葱5克、白糖3克、植物油适量。

做法：

1、葱姜蒜切小粒，郫县豆瓣酱剁碎备用。

2、牛肉切成小粒备用。

3、花椒干锅小火烘至棕红色取出，擀成细面备用。

4、豆腐切小块，入加了盐的开水中焯至浮起，捞出沥干。

5、起油锅，温油下牛肉粒煸炒至酥香吐油。

6、下入郫县豆瓣酱和辣椒面中小火煸炒至香味和红油出。

7、下入葱姜末继续小火煸炒。

8、添加盐、糖、酱油和料酒，加一点热水烧开。

9、添加豆腐，烧开后中火收汁。

10、勾点薄芡，推匀，撒上蒜苗(葱花)和备好的花椒面即可。

肉末茄子

食材：茄子，油，蒜末，葱

做法：1.茄子洗净后切成约6公分长的段，再对剖成4长条;

2.锅中倒入适量的油烧热，放入茄子用中火炸软后捞出;

3.锅中留油，放入绞好的肉炒散，再放入蒜末、葱片姜丝炒香

4.将炸好的茄子倒入锅中，加调料炒匀即可

鲜椒小菊花

做法：1、把小墨鱼头投入沸水锅快速汆一水，再入热油锅里滑油待用。青笋和藕切成丁，也入沸水锅汆一水待用。

2、锅里放色拉油烧热，先下少许郫县豆瓣、泡椒碎、野山椒碎、姜米和蒜米炒香出色，再下红小米椒节、青小米椒节和子姜丁炒出味，随后放入青笋丁、藕丁和小墨鱼头快速翻炒，加盐、味精、鸡精调好味，出锅装盘即成。

毛豆烧丝瓜

食材：丝瓜、毛豆、盐、大蒜、植物油、淀粉、小米椒

做法：

1、准备一下原食材，1根丝瓜，250克的毛豆事先剥皮；

2、丝瓜用小刀轻轻的刮去外皮，然后切成滚刀块；

3、大蒜3瓣切碎，再准备一点点水淀粉；

4、煮锅烧开水，下入毛豆焯水约3分钟捞出备用，因为毛豆和丝瓜熟的时间不一样，因此我们事先将毛豆焯一下水；

5、炒锅烧热，加入适量的植物油，下入大蒜和小米椒爆香，下入丝瓜煸炒一会，加入毛豆继续煸炒几下，加入少许清水，1小勺盐，大火烧开后煮几分钟；

6、看看丝瓜已经完全变软熟透，淋入少许水淀粉勾个薄芡关火，即可出锅装盘。

1、 碗中倒入玉米淀粉、糯米粉、牛奶、砂糖，搅拌均匀；

2、封上保鲜膜，上锅蒸熟；

3、倒入黄油，搅拌均匀，封上保鲜膜冷藏半小时；

4、 冷藏好的面团擀成饼；

5、面饼中挤入淡奶油、火龙果，然后包起来，撒点糯米粉、椰蓉即可。

干锅牛蛙

做法：1、牛蛙清水洗净，剪切成小块，用适量料酒和盐腌制十五分钟；

2、腌制入味后，加老抽、蚝油、胡椒粉调味，再加淀粉挂上薄薄的浆抓匀，最后加葱姜腌制；

3、准备二勺生抽，一勺香辣豆瓣酱，姜块葱段蒜瓣，花椒，香叶一片，八角一个，小米椒五个切段，十三香备用。

4、莲藕去皮切片，莴笋切条，土豆切片备用；

5、锅里放油，油温六成热，放入藕片土豆片炸，炸至金黄盛出备用；

6、油锅炸腌制好的牛蛙，锅油烧至6成热，然后一个一个的下入牛蛙，待定型后，小火浸炸5分钟，最后大火，炸至金黄酥脆，即可起锅；

7、热锅倒少许油，先把姜葱蒜，八角花椒小米椒香叶炒香，放入莴笋煸炒断生，放入炸过的藕片土豆片，加入豆瓣酱煸炒均匀，倒入牛蛙，加入生抽，加盐加糖调味；

8、最后撒上十三香即可出锅。
