然后是沙锅羊肠。这个菜最能体现“硬菜但不糊弄人”。主料黑山羊肠750克，做法从处理内油脂开始。素材写得很讲究：用刀刮去羊肠内油脂，用30克面粉和30克醋反复搓揉羊肠，洗净后放入冷水锅，加入A料，大火烧开转小火煮30分钟，取出切成大片。

别小看搓揉这一步。面粉和醋反复搓揉，作用是把表面的黏腻味道先处理掉。老人和孩子要是闻到那种腥膻油腻，通常不太好接受。搓揉做对了，后面哪怕你用郫县红油豆瓣25克、李锦记蒜蓉辣酱15克，油脂香出来也不会把脏味盖住反而会把干净的香味托起来。

炒香的流程更直接。锅中倒入茶油烧至四成热，放入郫县红油豆瓣、李锦记蒜蓉辣酱、5克姜片炒香。再倒入羊肠大火翻炒均匀，淋入60克高汤，加入5克蚝油、3克老抽调色调味。出锅装入沙锅，撒上5克青辣椒、5克红辣椒和5克蒜片，上桌后用卡式炉加热。

这里我想强调一个常被忽略的细节。羊肠已经煮过30分钟，切片后再大火翻炒的意义是把辣酱的香味和蒜香姜香锁进去，而不是把生硬的口感煮出来。最后上沙锅加热，是为了维持热度，让辣油继续在表面冒香。家里桌上如果没有沙锅也行，但你要理解“保持热度”的目的，不然上桌变凉，辣香就会塌。

辣酱选择也值得说。郫县红油豆瓣是成熟的咸香发酵味，蒜蓉辣酱提供甜香和蒜味，蚝油给鲜味托底，老抽只做颜色。你看这个配比里，辣不是靠单一辣椒面硬堆，而是靠酱香、豆香、蒜香、鲜味让辣变得有层次。你要是家里做得粗糙，往往只剩一层辣，没有酱香和蒜香，吃到后面就容易腻。

最后是醉鱼。很多人一听醉鱼就以为是复杂工艺，其实素材写得很生活。主料草鱼，辅料花椒，调料食盐、白酒、白糖。制作第一步是草鱼块洗干净，吹干表面，抹上盐和花椒。鱼和盐的比例是每十斤鱼三两盐，花椒多少随意。腌制好的效果是让盐渗进去，鱼肉后续才会在蒸煮时更成型。

第二步是把腊鱼切成小块，取小碗倒入高度白酒，半杯白酒里放一大勺白糖，搅拌均匀。腊鱼块在酒碗里打滚，均匀裹上酒，依次放入密封瓶子里码好，密封。第三步在荫凉的地方保存一个月左右，糟腊鱼就做好了。颜色琥珀色，鱼肉从干硬变成有弹力，软软的又有韧性，糟的时间越长鱼肉越软。吃的时候拿几块出来蒸熟即可。

这里的核心逻辑其实是两点。第一，白酒和白糖先把鱼表面腌渍到一个可控状态，第二，密封发酵和陈放让鱼肉结构慢慢松化。保存一个月左右这个时间很关键，不是越久越香就完了。家里做一次要按这个周期来，尤其你要给老人孩子吃，就更别为了口感一直拖。琥珀色是一个很直观的检查信号，说明糟香已经走出来。
