教你水煮肉片嫩如豆腐的秘密！做好这一步，全家夸你是大厨

上个月我家楼下新开了家川菜馆，我嘴馋跑去后厨通道找老乡，死乞白赖求着一位干了二十四年的大厨给我指点了两句：“现在网上教的那些花里胡哨的，十个有九个都没说到点子上。什么蛋清啊、淀粉啊，那都是皮毛。想让水煮肉片嫩得像豆腐，你就给我死磕‘这一步’，做好了，谁做谁是大厨！”今天，我就把这位干了24年大厨压箱底的秘密，掰开了揉碎了讲给你们听。这篇文章有点长，但保证全是干货，看完要是还做不好，你来我家，我做给你吃！

一、选肉和切肉：基础中的基础

首先咱们得把东西备齐了。肉得选猪里脊或者梅花肉，这两个部位本身就是“嫩肉胚子”，没什么筋膜，怎么折腾都好吃。

切肉也有讲究，别顺着纹理切，要逆着纹理下刀。你想象一下，肉的纹理就像一把筷子，顺着切还是一把筷子，咬着费劲；逆着切，就把筷子都切断了，那口感能不好吗？厚度控制在两三个毫米，别太薄，一煮就找不着了；也别太厚，外面熟了里面还生着。

二、24年大厨的核心秘密：“吃水”与“上浆”

好了，重点来了！24年大厨说的“这一步”，到底是什么？

不是加蛋清，也不是裹淀粉，而是——“彻底的吃水”加上“物理封层”。大厨说，肉嫩不嫩，就看里头有多少水。瘦肉遇热，水分一跑，立刻就柴了。咱们要做的，就是想方设法让肉把水“喝”进去，再用手段把水“锁”死。

具体操作分三步：

第一步：喝足水（这是90%的人忽略的）

切好的肉片别急着腌。先放碗里，加一点点盐、少许料酒、一勺生抽，然后最关键的动作来了：分三次往肉里加葱姜水（就是葱段姜片泡的水）。每一次加一点点，然后用手朝着一个方向疯狂抓揉，直到水分完全被肉吸收，肉片变得黏黏的、胶胶的，像给肉做马杀鸡一样。这一步，就是“吃水”，让肉片内部先喝饱，这是嫩如豆腐的第一步，也是大厨反复强调的秘诀所在。

第二步：锁死水（给肉穿铠甲）

肉喝饱水了，咱们得给它穿个“锁水衣”。碗里打一个蛋清，别要蛋黄（蛋黄会让肉发硬）。放两勺红薯淀粉（土豆淀粉也行，但红薯淀粉更筋道）。把那层“锁水衣”倒进肉里，再次疯狂抓匀，直到每一片肉都裹上一层滑溜溜的浆。最后淋一点点食用油封住，防止下锅的时候互相粘连。腌制个十五二十分钟就行。

三、煮肉的火候：温柔的“起锅”

起锅烧油，葱姜蒜、豆瓣酱炒出红油，加水或者高汤烧开。这时候注意了，煮肉的手法直接决定成败。

汤烧开后，马上转成小火或者直接把火关了，让汤从沸腾回归平静。然后把肉片一片片地铺进去。全部下完后，先别急着搅动，等个二三十秒，表面的浆衣凝固了，再用铲子轻轻推散。

汤再次微微沸腾，看到肉片变色发白，立刻、马上捞出来！整个过程也就一分钟左右。千万别煮久了，余温还会让肉片继续熟成，你要是等在锅里煮透了再捞，出锅就老了。

四、点睛之笔：响亮的“滋啦”
