入秋后多给家人喝这碗粥！健脾养胃

入秋了，风一吹，早晚立马凉飕飕的。家里老人孩子胃口容易闹脾气，这时候我家厨房最常飘的就是粥香。不是白粥，是小米山药南瓜红枣粥。小米打底，山药软糯，南瓜香甜，红枣提味，慢慢熬出一层厚厚的米油。食材普通，菜市场都有，成本不到5块，一锅够全家喝。入秋后多给家人喝这碗粥，健脾养胃，成本不到5块，热乎乎端上桌，比啥补品都实在。今天我把做法和小窍门全盘托出，厨房小白也能一次成功。

为啥入秋后，我总惦记这碗粥？

说真的，夏天冷饮、凉菜、西瓜吃多了，脾胃多少有点累。一到秋天，早晚温差大，空气干，很多人开始胃口差、消化慢、手脚凉。老辈人常说“秋天养脾胃，冬天少受罪”，这话我小时候不信，自己成家做饭后才慢慢明白。

这碗粥里，小米是主角。熬出来的小米粥油，香香糯糯，喝着特别舒服。山药是脾胃的老朋友，铁棍山药口感粉糯，煮进粥里几乎化开。南瓜自带清甜，不用放糖，粥就香甜。红枣去核后丢几颗，提香又暖色。枸杞最后放，好看也顺口。这几样搭在一起，不寒不燥，温温柔柔，特别适合入秋后全家喝。

食材和成本，真的不到5块

我按三口之家、每人一碗的量算：

小米半碗，约1块钱；铁棍山药半根，约2块钱；贝贝南瓜一小块，约1块钱；红枣5颗，约5毛；枸杞一小撮，约3毛。加起来4块8，确实不到5块。要是用普通南瓜，还能更便宜。别看我写得细，去菜市场一转，都是家常货，不用特意买啥稀罕食材。

准备：小米80克、铁棍山药150克、南瓜200克、红枣6颗、枸杞10粒、清水1200毫升左右。喜欢稠一点少放水，喜欢稀一点多放水。冰糖可加可不加，南瓜和红枣本身就有甜味。

做法：三步熬出米油，香得冒泡

第一步，小米轻淘两遍，别用力搓，搓狠了香味就跑了。淘完泡10分钟，煮的时候更容易开花。山药削皮记得戴手套，不然手痒得难受，切滚刀块后泡在水里防氧化。南瓜去皮去瓤切小块，红枣去核。

第二步，砂锅加水烧开，水开后再下小米。为啥开水下米？不容易粘底，米粒也更容易散开。大火滚5分钟，转小火煮15分钟，中间搅两下。然后把山药、南瓜、红枣一起放进去，继续小火煮20分钟。这时候厨房里全是甜丝丝的粥香，我家娃闻着味就跑过来了。

第三步，关火前5分钟撒枸杞。想喝甜口，加一小块冰糖。关火后别急着揭盖，焖5到10分钟，表面会结一层米油。这层米油可是精华，滑滑的、润润的，盛的时候别搅散。

没砂锅咋办？电饭煲更省事：所有食材除枸杞外全丢进去，加水，按煮粥键，跳闸前5分钟放枸杞，焖10分钟。高压锅也行，上汽后小火10分钟，自然泄压。口感稍微没那么浓，但一样好喝。

几个小细节，决定粥好不好喝

第一，水一次加够，中途别老加冷水，不然粥味会淡。第二，滴两三滴香油，防溢还增香。第三，搅拌顺着一个方向，别乱搅。第四，山药别切太小，不然全化没了。第五，红枣一定去核，口感更好，也不容易燥。第六，枸杞最后放，煮久了发酸。

哪些人适合喝？哪些人要注意？

这碗粥适合老人、孩子、上班族，尤其是早上没胃口、晚上想吃点清淡的人。我家老公应酬多，第二天早上必喝一碗，他说胃里舒坦。孩子不爱吃山药，但煮进粥里挑不出来，连喝两碗。

不过也要说清楚：血糖高的家人要控制量，红枣和南瓜少放，别加糖。山药过敏的记得戴手套，严重就别碰。胃食管反流的人别一次喝太多稀粥，稠一点、少量喝。它是家常食疗粥，不是药，身体不舒服该看医生还得看。

换着花样喝，一周不重样

原味喝腻了，可以加几颗莲子、一小把芡实，口感更粉糯，但成本会上去一点。宝宝辅食期，煮好打成泥，细腻好吞咽。想吃咸口，最后加一点瘦肉末和青菜碎，但入秋养胃，我还是最推荐原味。晚上剩的粥，第二天加点水热开，别反复煮太久。https://caichaxiong.cn/news/lanqiu/163.html
